A young man presented himself to the local expert on gems and said he wanted to become a gemologist. The expert brushed him off because he feared that the youth would not have the patience to learn. The young man pleaded for a chance. Finally the expert consented and told the youth, “Be here tomorrow.”
The next morning the expert put a jade stone in the boy’s hand and told him to hold it. The expert then went about his work, cutting, weighing, and setting gems. The boy sat quietly and waited.
The following moring the expert again placed the jade stone in the youth’s hand and told him to hold it. On the third, fourth, and fifth day the expert repeated the exercise and the instructions.
On the sixth day the youth held the jade stone, but could no longer stand the silence. “Master,” he asked, “when am I going to learn something?”
“You’ll learn,” the expert replied and went about his
bussiness.
Several more days went by and the youth’s frustation mounted. One morning as the expert
approached and beckoned for him to hold out his hand, he was about to blurt out that he could go
on no longer. But as the master placed the stone in the youth’s
hand, the young man exclaimed with-out looking at his hand, “This is not the same jade stone!”
“You have begun to learn,” said the master.

There’s more to a healthy diet than just getting the adequate amount of fruits and vegetables everyday. It’s also important to cook your produce properly. Much of the nutrient density in the foods can be lost by over or improperly cooking vegetables.
To cook, or not to cook?Raw foodists believe
that you shouldn’t cook vegetables at all because cooking kills enzymes that supply valuable nutrients to the body. The pancreas, a gland organ which produces the pancreatic juice that secretes digestive enzymes, has to work very hard to produce enough enzymes to digest our food.
This, however, is certainly up for debate because cooking vegetables softens the fibrous exteriors and makes it easier to digest the food into your system. Some vegetables, such as tomatoes, are healthier when cooked because cooking boosts the antioxidant lycopene.
Cooking OptionsCooking invariably
does lead to nutrient loss in foods. So what is the best option? Temperature, time, and water have the greatest impact on nutrient loss. Cooking something for a long time at a high temperature with tons of water removes the most nutrients. Boiling, for example, depletes a great amount of nutrients.
Frying is also a way to deplete your food, removing between five to 50 percent of a vegetable’s nutrients (and adding tons of unhealthy fats in the mean time). Steaming over a stovetop for a short period of time is likely the best way to keep nutrients intact. And if you keep your veggies crisp, stir frying and sautéing are effective as well.
An alternative option is using a griddle which allows vegetables to retain the majority of their antioxidants. Asparagus, peppers, and portobellas are all great when made on the griddle.
Pairing vegetables with healthy fats like avocado or high quality olive, avocado, or coconut oil has also been shown to boost antioxidant value. One study at Ohio State measured blood levels of subjects who ate servings of salsa and salads. When vegetables were served with avocado or full fat salad dressings, the participants absorbed as much as four times more lycopene, seven times more lutein, and 18 times the beta carotene than those who ate their vegetables plain or with low-fat dressing.

Braised Zucchini and Sun Gold Cherry Tomatoes
An elegant vegetable side dish that is simple to make, this recipe is perfect for when you are having company, or even for the kids. If they like cherry to-matoes, they should be willing to taste, and you should be able to sneak the zucchini in when they aren’t looking!Ingredients:
• 4 zucchini, washed and sliced lengthwise• 1/2 c. sun gold cherry tomatoes, sliced in half• 3 cloves garlic, sliced• olive oil• salt & pepper• 1 small bunch basil, torn or cut into large pieces
Directions:Heat olive oil in large skillet with high sides or braising pan. When it shim-mers, add zucchini and cook quickly until browned. Remove from pan, and set aside in a bowl. Add a little more olive oil to pan and add garlic. Sauté briefly, 30 seconds to 1 minute, then add cherry tomatoes. When tomatoes begin to soften and release juices, return the zucchini back to pan, season with salt and pepper, and toss to combine. Add basil, toss again, and serve hot or at room temperature.

In 1961, following the Bay of Pigs fiasco, the embargo was put in place. But just before then, JFK decided to try and get his hands on as many Cuban cigars as he could. He didn’t quite feel like giving them up.
He reportedly asked for a thousand Petit Upmanns within 24 hours. The next day, he received 1,200. Immediately following the news that he’d received the cigars, he pulled out the trade embargo banning all Cuban products from the US and signed it.
