The ma- terial ill this third edition of tile elassic work has been critically se- lected and thoroughly updated. Four major areas have undergone extensive change since publication of the second edition, so they have been largely rewritten. They arc: 1) the structure and composition of fats and oils, with special emphasis on the latest data on characteristics of individual fats and oils; 2) sur- face-active agents; 3) extraction of fats and oils; and 4) hydrogena- tion. The book is now divided into two major sections. The first is on the chemistry and chemical uses of fats and oils, and the second on unit processes in oil and fat tech- nology. The reader is given a funda- mental background in the special chemistry, how fats are used, and finally, how processing techniques are used to provide fats and oils in an appropriate condition for the uses described. Methods of evalua- tion are given, especially those re- lating to industrial uses.
