There is no doubt about it, the holidays are creeping up on us.

From the special coffees infused with peppermint and eggnog, to the already-full parking lots with eager shoppers ready to stock up on gifts – everyone is getting ready for the festive season.

While there may be many different traditions for those who celebrate their holiday – whether it be Hanukkah, Kwanzaa or Christmas – one thing that almost everyone can agree on is that the underlying message is quite similar.

The holidays – after the gifts have been wrapped, the menorahs have been lit and the dinner has been prepped – is about being with the ones you love and giving back where you can. Even if that means simply putting a few coins in a charity collection or offering to help out at the soup kitchen.

Some people, as our pages attest, take it a step further.

For our travel segment, we have a Surrey woman who will be travelling to climb Mount Kilimanjaro in order to raise funds for the BC SPCA – a organization she holds

close to her heart. For our feature story, we have Miss Universe Canada, Sahar Biniaz, whose story of struggle through years of bullying has inspired her to speak out against the growing problem. The

loss of her cousin in a tragic accident has also spurred her into action as an advocate for BC Transplant.

These stories are what I feel the holidays are really about. Good people doing good things.

But I would be remiss to imply that giving and receiving presents amongst loved ones is unimportant. It's all about balance for the holidays, just like the rest of life.

So, if you need some help to decide what to get the people on your shopping list, take a peek at our holiday gift guide.

As for me, I'll probably be one of those poor souls who will be at the mall until closing-time on Dec. 24. I'm OK with that. At the very least, I'll have a hot cup of peppermint-� avoured coffee to help me get through it.

As one of Canada's most proli�c culinary talents, chef Rob Feenie has always taken a non-traditional approach to the holidays.

At least in the kitchen, he might just have found the answer to peace on Earth. He shops, chops, cooks and cleans with the best of them, but Feenie's �rst gift of the holidays is leaving the menu in the hands of his wife, Michelle.

“It's more fun that way. She'll decide a week before what we are going to eat.”

Then the fun begins for a chef who never tires of discovering new dishes.

At present, in the Cactus Club test kitchen where he permanently resides as executive chef, he is crumbling a piece of blue cheese and admitting to its de�nitive presence in the holiday menu he has readied for Indulge's readers.

“We're a family of cheese lovers, especially during the holidays, and the kids love the blue, the creamier the better,” says Feenie.

While roquefort or stilton would serve similarly well with the bold �avours on the festive table, a bit of Bresse Bleu really does work wonders with the baked �gs, walnuts and honey.

As per the pages of his fourth and most recent cookbook, Rob Feenie's Casual Classics: Everyday Recipes for Family and Friends – to say nothing of his culinary pedigree – it's not that Feenie lacks for ideas. It's simply that he �nds inspiration pretty much everywhere and remains driven by culinary curiosity year-round.

From the age of 20, when he entered Dubrulle Culinary Institute in Vancouver, that curiosity has given him the opportunity to both learn from – and over time become – the best of the best. From his time at Le Crocodile

in Vancouver through his culinary stages in Europe and North America, his three-star Michelin mentors have included chefs Emile Jung and Antoine Westermann; closer to home he has worked with chef Charlie Trotter in Chicago and Jean-Georges in New York.

From the bright lights of Lumiere, to �ve seasons of food television, to Gold Medal Plate victories, to Canada's �rst Iron Chef America win, Feenie has never shied from either competition or the spotlight. Since joining Cactus Restaurants Ltd. in 2008, the impact of his in�uence has garnered the group “Best Casual Chain” four years straight from the Vancouver Magazine Restaurant Awards.

While his culinary explorations will always carry him far and wide, these days home is a lot closer for the Burnaby-born father of three.

While White Rock is still a bit of a drive, the commute carries an upside that has easily won over both the foodie and the family man in Feenie.

“Our son plays soccer and our daughter is in gymnastics. There is a real community feel,” he explains. “What I love is the quiet. We all do the drive. Once you're there though, you don't need to really go anywhere.”

With local growers such as Hazelmere Farms on his doorstep and Choices just around the bend, the Feenie family has found much to love in the valley, and looks forward to calling it home for the holidays for years to come.

Fortunately, with Cactus Club locations already in Abbotsford and South Surrey, and another slated for 2013 in Langley, Feenie's world continues to evolve nicely.

As for the absence of a turkey recipe for Indulge readers?

“We do have our family traditions, but everyone in my family knows I am not a traditionalist so we change things up,” says Feenie. “That said, there is always a roast for

Christmas Eve, poultry for Christmas dinner and always a light lunch of charcuterie and cheese on Christmas Day.”

As anyone who ever visited Lumiere, the

Lumiere Tasting Bar, Feenie's or, more recently, any Cactus Club location might attest, Feenie has always had a fondness for the cheese plate. His touch with charcuterie has only improved with age, but reaches far back to days of Christmas past.

The latter is a long-standing family tradition that continues strong. On the cheese side, cave-aged gruyere and aged goudas balance the blues, and Feenie has already found a favoured cheesemonger in his new neighbourhood.

“Keso Cheese. I love to go in and pick and try new things whenever I can.”

As for the charcuterie itself, Feenie family favourites are anchored by speck, prosciutto and Serrano ham, which he gladly travels to Oyama Sausage Co. at the Granville Island Public Market to procure.

In recent years, sopresatta, mortadella and salami from the Italian delicatessen have served equally well in bringing family and friends to the table with almost zero fuss – and maximum appreciation of the day and the shared feast ahead.

Blue-cheese stuffed �gs10 fresh Black Mission �gs (about 1 lb.)

4 oz. soft blue cheese1/2 cup walnuts, coarsely chopped1/2 cup honey1 tsp. lemon zest1 tsp. �at-leaf parsley, �nely

chopped

Preheat the oven to 350 F. Using a sharp knife, cut an X into the top (stem end) of each �g. Cut deeply into the fruit without cutting all the way through. With your �ngers, gently squeeze open each �g like a �ower.

In a small bowl, mix blue cheese and walnuts until thoroughly combined. Stuff each �g with a heaping tablespoon of the cheese mixture and arrange it in an ovenproof baking dish. Drizzle with honey and bake for 10 minutes, or until �gs are warm and the cheese has softened. Remove from the oven and arrange on a serving platter. Just before serving, sprinkle with lemon zest and parsley.

Refrigerate leftover �gs in an airtight container for up to three days.

Cornish game hen with dried fruit, honey and almonds3 tbsp. extra-virgin olive oil1/2 cup blanched whole almonds1 cup dried fruits (any one or mix

of dates, apricots, prunes)2 Cornish game hens, 1.5 lbs

each2 medium onions, diced 1/4” 2 cups water1/2 cup fresh �at-leaf parsley,

�nely chopped2 tbsp. fresh ginger, minced

1 tsp. ground cinnamon1/2 tsp. ground nutmegpinch ground cloves1/4 cup honey1/3 cup raisins

Line a large plate with paper towels. Heat 1 Tbsp of the olive oil in a large frying pan on medium. Add almonds and saute until golden, 7 to 8 minutes. Using a slotted spoon, transfer to the plate to drain. Set aside.

Prepare dried fruits by pitting dates and cutting large apricots and prunes in half. Set aside.

Cut Cornish game hens into quarters (two breasts and two legs per bird). With a paper towel, pat game hens dry and season with salt and black pepper. Heat the remaining two tbsp. of oil in a large frying pan on medium-high heat. Arrange hen pieces in the pan and saute until golden brown on all sides, about �ve minutes. Using a slotted spoon, transfer hen pieces to a plate and set aside.

Add onions to the pan and saute until translucent and softened, about 10 minutes, stirring up the brown bits from the bottom of the pan. Return the hen pieces to the pan and add water, parsley, ginger, cinnamon, nutmeg and cloves. Bring to a boil, then reduce the heat to low and simmer, covered, for about 35 minutes or until cooked. To test for doneness, insert a sharp knife in a thigh piece. If the juices run clear yellow with no tinge of red, the hen pieces are cooked. Transfer hen pieces to a large plate and cover loosely with aluminum.

Increase the heat to medium. Add dried fruits, honey and raisins to the pan and simmer until fruits are soft and the juices have reduced and thickened somewhat, about 15 minutes. Return hen pieces to the

pan and reheat quickly, basting with the juices. Transfer the game hen pieces and fruit mixture to a large serving platter, sprinkle with almonds and serve immediately.

Baklava with walnuts and brandy-soaked prunes2 cups granulated sugar3 cups water1 cup liquid honey1 lemon, in 1/8” slices1 cup brandy1 lb. dried pitted prunes2 cups walnuts, �nely chopped1 lb. frozen phyllo pastry,

thawed1/2 cup unsalted butter, melted

Make a simple syrup by combining sugar and two cups of the water in a small pot. Heat on low and stir until sugar dissolves, about �ve minutes, then increase the heat to medium and bring to a boil. Reduce the heat to low and simmer without stirring, for �ve minutes. Stir in honey and simmer for just one minute. Remove from the heat, add lemon slices and allow to cool. Transfer to an airtight container and refrigerate for one to two hours, or until chilled.

In a medium bowl, combine brandy with the remaining one cup of water. Add prunes and allow to soak at room temperature for one hour. Drain prunes, discard soaking liquid, then chop �nely (about the same size as the chopped walnuts.) In a small bowl, combine prunes and walnuts. Set aside.

Preheat the oven to 350 F. Have a damp towel to cover the unused phyllo sheets, a pastry brush and all your ingredients ready to go.

You’ll want to work quickly so the phyllo pastry does not dry out.

Baklava with walnuts and brandy-soaked prunes [cont.]

On a large 12x18 inch baking pan, place one sheet of phyllo pastry and brush with melted butter. Set a second sheet of phyllo on the �rst and brush it with butter. Repeat with two more sheets of pastry, brushing each one with melted butter. Spread half the prune-walnut mixture evenly across the pastry. Layer another two buttered sheets of phyllo on top. Spread the remaining prune-walnut mixture over the pastry. Cover the �lling with four sheets of buttered phyllo.

Using a small, sharp knife and starting at one corner of the pan, cut pastry on a diagonal in lines about 1.5 inches apart, making sure to cut through all layers, and then repeat from the opposite direction to form diamond-shaped pieces. Bake for about 30 minutes, or until golden brown. Remove from the oven.

While the baklava is still hot, remove and discard lemon slices from the syrup.

Drizzle syrup all over and allow to cool to room temperature.

Some wineries favour the arts, a tradition established more than 30 years ago by the Vancouver International Wine Festival. The festival’s surplus – around $300,000 annually in recent years – supported the Playhouse Theatre Company. After that company’s bankruptcy in March, the wine festival switched its sponsorship to the Bard on the Beach Shakespeare Festival in Vancouver.

Mission Hill Family Estate has supported Vancouver Opera productions for 11 years and recently sponsored the ticket centre in the new opera company of� ces.

It reads like a fairy tale. Ugly duckling is shunned by others. Duckling grows up and transforms into swan.

Now, add a little fame, a crown and a (so far) happily ever after, and

you've got the makings for a royal bedtime story.

Except, for Sahar Biniaz, that's not just an incredible story. That's her life.

Inviting a visitor into her parents' home in Richmond last month, the Miss Universe Canada titleholder shares a photograph of a young girl, completely swallowed up in an oversized sweatshirt, posing shyly in front of a row of lockers, hair tucked under a baseball cap.

The photo, taken in middle school, was recently unearthed by a former classmate and sent to the beauty queen, bringing with it a wave of memories.

"I'm wearing all my brother's hand-me-downs," she laughs, pointing with a perfectly manicured cherry-red nail. "I can't believe it. My sister was making fun of me when I showed her. She said, 'don't show anyone that picture, they'll never believe it was you.'"

While it may be tough to swallow that the self-proclaimed "ugly kid" is the same stunning, articulate woman who snagged the crown for Miss Universe Canada last spring – without the help of any fairy godmothers – that is not the only thing that seems like a fable.

Biniaz, who was born in India to Iranian parents and raised in their home country until age eight, moved to Canada and made her home brie�y in White Rock, where she has fond memories. However, her family soon moved to Richmond, and she was mercilessly taunted and bullied for her looks, how she spoke and what she wore.

"One of the toughest days of my life was the day when I was coming back home from school and a group of girls just gathered around me. I was standing underneath a

sweetgum tree – those trees with those spiky balls on them, and they're very sharp – and the girls are saying these mean things to me, and all of a sudden, one of those balls fell on top of my head and I remember one of the girls was like, 'even the tree doesn't like you.'

"I remember going home that day and crying so much."

The bullying escalated when two girls beat her up, sending her to hospital. Despite her transfer to a new high school, bullying persisted in her graduating year.

However, it was through that dif�culty that Biniaz, now 26, found the resolve to pursue a career of modeling, acting and, eventually, pageants.

"Now when I see that tree, it gives me courage. Because I went through that and I survived it. That's the same thing with the pageants. It became a way to prove my bullies wrong," Biniaz said.

"Whenever you're faced with a bully, be the

best you can be and that's the best payback you can possibly do. That's what I've done over the years. I've asked myself, how can I be a better person? How can I give back to society? How can I be an example for girls? And the answer is by being the best I can and setting goals and working to achieve them."

Through the platform of Miss Universe Canada, Biniaz has raised awareness on bullying and will be an ambassador for Pink Shirt Day next year. As part of the campaign, Biniaz will visit schools coast-to-coast and speak about her personal experiences and the effects that bullying can have on individuals.

While she is no longer taunted by schoolmates, Biniaz's storybook entered a dark chapter this past summer, following a misquote in a Vancouver newspaper.

"I was told that I should be raped, I should be put in a gas chamber or I should be muzzled. It was horrible."

A petition circulated, demanding that the beauty queen lose her crown. So far, it's garnered more than 6,000 signatures.

Biniaz contacted each of the people who wrote personally to her, hoping to resolve the problem and set the record straight. As the owner of four dogs – Zena, Zorro, Brewski and Barney – she stands by her actual suggestion of muzzling potentially dangerous dogs, including pit bulls, rottweilers, dobermans and German shepherds, in public and around children.

And though the comments and name-calling have faded, Biniaz admits she is disheartened.

"That was really unfortunate about that article, but I survived that. That's another sign of who I am and how I deal with things. My crown wasn't taken away nor was my title. I wasn't dethroned. I �nd that if there is a car accident on the road, everyone wants to pull over and take a look at it. But if someone is helping a senior cross the street, no one is interested. I �nd that very sad for society, when we pay more attention to negativity."

Not long after the controversy erupted, Biniaz traveled to Nicaragua for a Miss Universe goodwill tour. Seeing the perseverance of the children with whom she was working motivated Biniaz to ignore the negativity that had penetrated her life.

"They had burn marks all over their bodies or on their faces, a lot of them were hit growing up. Yet, they are all strong, happy and kind. That inspired me. People come from horrible backgrounds but are able to move on. It's inspiring to see someone who has suffered through so much and can still be happy.

"These kids don't have anything, all they have is a bed and a toy, and even that, they were willing to give to you. When you go visit kids like that, it motivates you do to more."

Biniaz heard about Port Coquitlam teen Amanda Todd who killed herself last month at age 15 after years of bullying. The story hit home for the beauty queen, spurring her into action to mark the short life of the teenager.

On Oct. 19, as many of her fellow British Columbians lit a candle in Todd's memory at vigils, Biniaz lit candles for Todd in Nicaragua – joined by her fellow international Miss Universe contestants – showing solidarity with the anti-bullying movement and its global message.

"When I �rst won my title, in my video I brought up the topic of suicide and people were like, 'suicide, shh. Don't talk about it.' But no, we need to talk about it. Because not everyone is strong enough to say those (bullies) don't count.

"This is my belief, the biggest bullies in our lives are ourselves. Going online and reading those comments, we're hurting ourselves. We're bullying ourselves. We need to focus on how to be strong enough and say, 'I am a good person, I am worth it, I am kind.'"

Biniaz's advocacy work also includes BC Transplant, an organization she has held close to her heart since the death of her 25-year-old cousin after a horri�c car crash three years ago.

"I remember coming home and my mother telling me he had died. It was so hard for me to believe because he was so young and so kind. He had recently been married and he had graduated from university with honours. Then, one day, my mom told me that he had saved someone's life. She told me that they had transplanted his heart. I didn't even know they could do that.

"Later on, I found that they gave his eyes away and someone got their eyesight, they gave his knees away so someone could walk, and that's the important thing with organ donations. One person can save so many lives."

Biniaz has been reading about live organ transplants, where a donor can give an organ – such as a kidney or a piece of their liver – to someone in need.

While she admits she has raised more than a few eyebrows speaking about the procedure, she is considering going under the knife to raise awareness on the importance of organ donation.

"I'm willing to give a kidney. I thought, who better to bring attention to this cause? I �nd people don't want to talk about it, but if you're not going to be here any longer,

why not help someone else? At the end of the day, you may not have money to give, but when you do this, you know you've done something amazing."

If she is approved as a donor, the Canadian beauty's biggest concern would be �nding time to complete the procedure.

Between her advocacy work and Miss Universe Canada obligations, Biniaz celebrated her �rst starring role in the movie Ambrosia, which premiered at the Montreal Film Festival in August.

"It was something I've always wanted to do and I did it. Now, if I want to pursue it, I can. If I want to go a different route, I can. But regardless, I can say I did it."

With next month approaching, Biniaz has the chance to add another chapter to her fairy tale, at the Miss Universe pageant in Las Vegas on Dec. 11. If she wins, she would be the �rst Miss Universe of Iranian descent.

Despite all that she's accomplished since she was the awkward, shy girl in the photograph, Biniaz admits she still holds on to the person she always was, regardless of the glitz and glamour of being Miss Universe Canada.

"I haven't changed. I'm still that girl who is a bit quirky and strange. I'll always be that girl. But now I've realized that people will either accept you or they won't. And if they don't, you've just got to move on." i

Over at West Coast Gardens, Sandy Styles and her team have created a stunning showroom of ideas for holiday decorating. Everything from birds – a hot theme for this season – to golds, pinks and even black.

There is even a rustic tree that is decked out in soft �annel and grey felt mixed in with rustic earth tones.

"For the trees, we try to focus on colour and texture. That's where it all begins," Styles said.

And while the focal point of the holidays does seem to be the tree, Styles suggests taking a look at decorating the outside of your home with

custom bunches made from a selection of greens such as magnolia, cotton, cedar and pine.

Customers can come into the store, pick out their choices and have a custom-made bunch

created to decorate outside their home. Best of all, the decor does double-duty."The smell is just gorgeous," Styles said.

For those who are starting their � rst tree this year, Art Knapp's decor experts Shawneen Esson and Chris O'Connor said the best place to start is with your colour scheme.

"Figure out the colours you want to feature and maybe choose a focal point colour – a strong colour – that you can have a few ornaments in then build the colours around the focal point," O'Connor said.

For those looking to be inspired, O'Connor notes that this season there are lots of feathers and birds to add a unique look to the tree, as well as rigid ribbon and sinamay netting – an easy to way to bring colour into the tree without a lot of individual ornaments.

A new option this year is the upside-down tree, O'Connor said.

"It's a really unique option, and it's perfect for those who have limited space as it sits on the ceiling," O'Connor said.

Most importantly, Esson points out, the tree should re� ect who you are and the things that you love.

Whether it be volunteering for a shift at the local soup kitchen or shelter, collecting food for the food bank or dropping coins

in the Salvation Army’s red kettle, the holiday season is often when we make a point of going out of our way to help others in need.

And with the recent launch of Charity Challenge Canada — a fundraising-challenge operator specializing in group adventure travel expeditions — many thrill-seeking Canadian philanthropists have taken “going out of your way” to a whole new height — literally.

Erin Little, event co-ordinator at Morgan Creek Golf Course in South Surrey is one such example. Though her name may be Little, her heart and her quest for adventure are anything but. After months of �tness training and

collecting sponsorship dollars in support of the BC SPCA, this January she will partake in Charity Challenge’s expedition to Africa where she will make good on her promise to climb Mount Kilimanjaro — the highest free-standing mountain in the world.

“I’ve always had a weakness for animals,” said Little, a self-proclaimed adventure addict who held a pub night fundraiser earlier this month that raised $2,500 for her charity. “Animals and babies — they’re just so helpless and they are completely, 100 per cent at our mercy. If we don’t treat them right, they suffer and there is no way for them to pull out of it. As adults we can somehow �nd refuge and counselling or whatever, but dogs, animals, horses — when they’re abused, there’s no way out, and I can’t accept that. I don’t have the heart or the stamina to go in and volunteer at a shelter, so

this is the best way I can give back.”Little, who had been talking with friends

about climbing Kilimanjaro for some time, said “it felt wrong” not to do it for a cause.

“To travel clear across the world and take on a challenge that is kind of unique — not of my everyday life — it warranted a bit more recognition,” said Little. “People have said ‘Wow, if you’re willing to do this, you’re worthy. You can have a donation because kudos to you.’ So I must have known in the back of my mind that people would donate to it.”

can, among other things, climb a volcano, cycle from Havana to Trinidad, explore the heartland of the Aztecs, trek the Great Wall of China or Sahara Desert — even reach the “lost city” of Machu Picchu. However, despite the fact that participants visit some of the world’s most awe-inspiring locations — including the North Pole, Iceland, Morocco, Cuba, Mexico, Ecuador, Peru, Tanzania, Nepal, India, Thailand, China and more — Simon Albert, Charity Challenge director and expedition leader, says none of the trips could be considered a “holiday.”

“For the majority of people, it’s holiday time — but it’s far removed from their normal holiday experience,” said Albert, who also notes that participants spend up to a year in advance �tness training and raising sponsorship dollars for their charity of choice.

“Most people wouldn’t choose to do a holiday where they are going to be in freezing temperatures and crying and questioning their sanity of taking on the challenge,” he said. “They’re really stepping outside their comfort zone. There’s a sel�essness in putting yourself through that for the greater good of whomever you are supporting.”

In addition to a desire to support a particular charity, Albert said participants — many of whom have never climbed a mountain, never camped, never been away from their family — are often motivated by a major life event such as a divorce, bereavement, a birthday or an anniversary, or they are trying to lose a signi�cant amount of weight and get �t.

“If somebody wants to raise money for charity, there’s a thousand ways they can do it without travelling around the world, climbing a mountain, spending sleepless nights in freezing temperatures. So, fundamentally, there has to be a personal motivation to do this,” he said.

The number one piece of advice Albert gives to those considering taking on a Charity Challenge trip is: Think carefully about it, but do it.

“We give so much support with fundraising, with �tness training, visas and vaccinations, equipment — everything,” he said. “There is so much in terms of resources to help people, but I would say read the information, really think it through, talk to your partner or family, and then plan. Give yourself enough time to get �t, enough time to lose weight and [enough time to] do the fundraising.”

He also warned that not everyone will enjoy the physically and mentally demanding experience of the challenge while they’re doing it. Yet, he said the satisfaction of getting to your �nal destination and knowing that you’ve achieved your personal goal — while raising thousands of dollars for a charity — is, for many, a life-changing event.

There’s a personal satisfaction [of] getting to the top of a mountain or end of the ride, but there’s a bigger satisfaction knowing that you’ve done something positive. It’s all about doing something positive and making a mark.”

Charity Challenge Trip Grading

Challenging“Challenging” expeditions require

participants to have a reasonable level of �tness and an open mind to deal with new situations. They are not typically at high altitudes, and usually last between six and 12 days. A typical day would involve �ve to seven hours of activity. The trails are less remote and, although basic, the facilities are slightly more comfortable than “tough” and “extreme” challenges.

Tough“Tough” itineraries are generally at

high altitude and may take place in more remote areas with limited facilities. Due to the nature of high-altitude expeditions, the itineraries are normally longer (typically between 10 and 12 days), allowing participants time to acclimatize. The terrain is generally hard going and a good level of �tness is required. A typical day would involve six to eight hours of activity in unpredictable weather conditions.

ExtremeChallenges that are graded “extreme”

normally last between 11 and 18 days, and require a very good level of �tness. All extreme challenges involve camping in a remote mountain environment where facilities are very basic and the unpredictability of mountain or Arctic weather can often provide numerous unexpected challenges. The terrain is hard going with steep climbs and descents. A typical day would involve six to eight hours of activity. A summit day could involve up to 15 hours of activity.
