Wash and dice the aubergine and green pepper. Chop the onion and garlic.

Once the beef is ready, pour in the pan with the eggplant. Mix everything well together and check the seasoning. Add salt and pepper if required. Sprinkle with freshly chopped parsley and moz-zarella before serving.
4 SERVE
3 FRYOn a separate pan, fry the minced meat, onion and green pepper together using a small spoon of oil. Fry until the meat has browned and the vegetables have slightly softened. Season well with pep-per, salt and a pinch of chili powder.
Serve with a side of pasta.
TIPS FOR FUSSY EATERS
The longer you have the time to simmer your aubergine the softer and more
‘pulled’ they will become. This makes the dish even juicier and rewarding.

2 SIMMERHeat a pan to medium high heat with a spoon of oil. Toss the aubergine on the pan together with the chopped to-matoes, garlic and basil. Simmer for 10 minutes or until the aubergine is soft.
