Mediterranean Breakfast PitaSweet Potatoes with Bacon Vinaigrette

1. Heat oven to 400°F. Cook bacon until crisp and brown. Remove bacon and set aside. Toss sweet potatoes in ¾ cup rendered bacon fat, 1 teaspoon salt and ½ teaspoon pepper.

2. Arrange potatoes in a single layer on sheet pan; roast for about 20 minutes. Halfway through, turn potatoes.

Cook until the edges are brown and potatoes are tender.3. For vinaigrette, pour balsamic vinegar into pan with

remaining bacon fat. Add olive oil and remaining salt and pepper.

4. To serve: Drizzle potatoes with vinaigrette. Top with cooked bacon and green onion.

Makes 24 servings

18 oz. Farmland® Raw Diced Bacon*6 lb. sweet potatoes, peeled and cut into bite-size chunks2 teaspoons salt, divided1 teaspoon pepper, divided ¾ cup extra virgin olive oil¼ cup balsamic vinegar¼ cup thinly sliced green onion

2 (1.5-oz.) Ember Farms Fully Cooked Select Sausage Patties*1 tablespoon finely diced onion1½ teaspoons olive oil1 cup loosely packed fresh spinach1 tablespoon chopped sundried tomatoes1 tablespoon diced roasted red pepper1 pinch ground black pepper3 egg whites, beaten1 whole grain pita bread1 tablespoon crumbled feta cheese

1. Heat sausage patties according to package directions, set aside. 2. In a nonstick sauté pan over medium heat, cook onion

in olive oil just until tender. Add spinach, sundried tomatoes and roasted red pepper. Cook just until the spinach has wilted. Season with black pepper.

3. Add egg whites to sauté pan and cook as though making an omelet.

4. Cut pita in half and open each half to make a pocket. Cut a sausage patty in half and place inside pocket. Top with half the eggs and feta cheese. Repeat with remaining pita half.

Makes 24 servings
