Heat oven to 400°F. Cook bacon until crisp and brown. Remove bacon and set aside. Toss sweet potatoes in ¾ cup rendered bacon fat, 1 teaspoon salt and ½ teaspoon pepper. 2. Arrange potatoes in a single layer on sheet pan; roast for about 20 minutes. Halfway through, turn potatoes. Cook until the edges are brown and potatoes are tender. 3. For vinaigrette, pour balsamic vinegar into pan with remaining bacon fat. Add olive oil and remaining salt and pepper. 4. To serve: Drizzle potatoes with vinaigrette. Heat sausage patties according to package directions, set aside. 2. In a nonstick sauté pan over medium heat, cook onion in olive oil just until tender. Mediterranean Breakfast PitaSweet Potatoes with Bacon Vinaigrette

1. Heat oven to 400°F. Cook bacon until crisp and brown. Remove bacon and set aside. Toss sweet potatoes in ¾ cup rendered bacon fat, 1 teaspoon salt and ½ teaspoon pepper.

2. Arrange potatoes in a single layer on sheet pan; roast for about 20 minutes. Halfway through, turn potatoes.
