1 cup fresh lady peas
Lemon-Herb Dressing WithBasil, divided
2 pounds assorted heirloomtomatoes, cut into 1/4-inch-thick slices
4 fresh basil leaves, thinlysliced
1 (4-oz.) package soft goatcheese, crumbled
Salt and freshly ground pepperto taste
Preparation
1. 1. Cook peas in boiling saltedwater to cover in a largesaucepan 8 to 10 minutes or
just until tender. Drain andrinse until completely cool.Drizzle 1/4 cup Lemon-HerbDressing With Basil over peas,and toss to coat.
2. 2. Arrange tomato slices on aplatter or individual servingplates. Spoon peas overtomatoes; sprinkle with basil,goat cheese, and salt and
pepper to taste. Serve withremaining dressing.

Water melon Cooler:
8 cups (1/2-inch) watermelon cubes
1 1/2 cups ginger ale
1/3 cup water
1 (6-oz.) can frozen limeadeconcentrate
Preparation
1. 1. Place watermelon cubes in asingle layer in an extra-largezip-top plastic freezer bag, andfreeze 8 hours. Let stand atroom temperature 15 minutes.
2. 2. Process half each ofwatermelon, ginger ale, water,and limeade concentrate in a
blender until smooth; pourmixture into a pitcher. Repeatprocedure with remaining halfof ingredients; stir into pitcher,and serve immediately.
