NBTC hires Executive Chef Danh Kom

Chef Danh has 31 years of experience, mostly spent in the Hotel and Resort industry and NBTC is thrilled to announce his hiring!

Chef Danh started his career with a three year culinary appren-ticeship program at the Westin Hotels at the Bonaventure Hotel in downtown Los Angeles in 1984. There, Danh learned the fun-damental aspects of the culinary trades: including management, sales and catering. After completion of the culinary program, he moved onto the Westin Kauai Resort Hotel in Hawaii and hel-ped open the first full French restaurant in the island as a professional cook.

Returning back to California, Chef Dahn worked at the Ana-heim Hilton and Towers briefly in the fine dining before being promoted to banquet saucier. Chef Dahn was then promoted to a fine dining sous chef at the Bonaventure Hotel where he had first started as a student. Here is where Chef Dahn earned his status as a true chef. "It was a dream come true with all of the hard work to have earned the title of a chef," says chef Dahn.

Throughout the years, he has worked as Chef de Cuisine at the Sheraton Hotels, Queen Mary Hotel Long Beach, Hyatt Regency at Gainey Ranch Scottsdale, Universal Hilton Hotel (banquet chef), Hilton Orange County Costa Mesa, and was promoted to executive chef at Doubletree by Hilton Mission Valley San Diego, before transferring to Doubletree by Hilton Carson.Some notables and dignitaries he has cooked for: President Senior Bush (Bonaventure Hotel) and Prime Minister of Japan (Queen Mary Hotel) as well as Michael Jackson at Universal Hilton (just to name a few.)

Said Kom, "Being a chef is a great honor and to have the ability to influence people's taste and opinions is what I live for. I can't wait for the opportunity to work alongside the incredible team of Hector, Camerino and the entire kitchen staff to create truly memorable food and events for the members. My goal at NBTC is for an unparalleled restaurant and dining experience through innovative cuisine and consistent quality."

Stay tuned over the next several months for all kinds of exci-ting changes from the Chef including (but not limited to) new & innovative specials, restaurant events like Wine Dinners and Chef Table Events, themed dinners, a re-invigorated daily menu, anda commitment to quality by using only the finest ingredients with the knowledge of over 30 years of culinary experience.

As we roll into November, the cooler weather has been a pleasure on the courts! The season halfway point is near, so if your team has room to add players, now is the time to start thinking about it.It seems as though league play keeps getting tougher every seas-on. The second half may hold more promise.

The C2 Ballbusters are holding firm in 3rd place at this timeand the D1 Slice Girlz continue their rampage to remain in 1st!!! The D2’s are holding their own in the middle of the pack along with the B3’s. The USTA Betties continue to strive and remain in

1st, while the 3.5 Orange Crush holds a strong 2nd. Our newest addition to the ladies league’s, our Hill & Dale “Hot-ties”, has a very cohesive team with great teamwork. Marie Toney is doing an awesome job as captain.

Playing for the championship is our very own division 9.0 NBTC Top Stringers. This team consists of Paul Kincaid, Michael Fisher, Billy McCoy, Tom Sawyer, Lauren Saket and Lin-da Winston. Playing for the third place match, team High Strung is in competition, cap-tained by NBTC member and veteran Sunday League player, Captain Ron Schoenbaum.

Team Forty Love, captained by NBTC’s Eddie Promm, will play against the defendingchampionship team!

Now, as the weather begins to cool, be sure to peek into your tennis bag for the much needed singles essentials. 1.) Long slee-ve lightweight pullover: you want to be warm, not cold when you play and a dry fit pullover is the perfect outerwear to Fall tennis, keeping sweat at a minimum. 2.) Protein bars and performance drinks – remember, no matter what the weather, having a surplus of electrolytes and protein to get you through a grinding match is a must. Always DRINK before you are thirsty, and EAT before you are hungry as this is the key to top singles performance.

Let’s all begin to think about our tennis singles goals for 2017. During Nov-Dec, start to make a mental plan of what those goals should be for the upcoming new year. Try to keep these goals simple and realistic and if possible, employ the assistance of the world class professionals we have here at NBTC. Whatever your plan, try your best to stick to it, practice it, and commit to it. The ball machine gets lonely sometimes, so keep it company!

My goal for the balance of 2016 is to see some newcomers on Monday Nights at 7pm. Many of you singles players have been injured, or have been traveling. But enough of the excuses! So get your butt out here and play singles and don’t make me move you down to the bottom of your divisions!
