Muriya Tourism Development has been working with Nawras since the inception of its projects and has extended support helping prevent any unforeseen issues that may arise. The support in the two ITCs is part of a US $ 1.3 million investment to expand both the mobile and fixed line coverage. To further support the upcoming projects that are underway, Nawras has allocated another US $ 600,000 to invest in 2014.

DIRECTIONSBoil water, put the fish bones inside, blanch them until all the dirty particulars like blood, protein & dirt is coming up to the surface of the water. (Approx. 2 minutes)

Strain it, put clear cold water in the pot. Add all vegetable, seasoning, lemon. do not boil; let it slowly simmer until you get a strong fish broth. Strain it. Let it cool down then place in the freezer or use the stock directly for your Seafood soup.

SEAFOOD SOUP (1 SERVING)15g Olive oil10g Onions10g Garlic1g Saffron5g Tomato paste20g Carrot, fennel, sliced in cubes200ml Fish fond20g Zucchini, tomato, each, sliced in cubes2 Prawns80g Fish cubes10g Fresh dill, choppedSalt, white pepper for seasoning

DIRECTIONSFor the seafood soup, sweat the onion &

garlic in olive oil, until they get a golden color. Add the carrot´s & fennel, sweat. Add salt, lemon juice if necessary.

OLIVE-GARLIC CROSTINI3 slices baguette bread

10g black pitted olives1 garlic clove

15g olive oilSalt for seasoning

DIRECTIONSFor olive paste, put the olives, garlic & little olive oil in a blender & blend it well until you get a smooth paste. Add seasoning if necessary. Roast the sliced French bread in the oven until its crispy & light brown colored. Spread the olive paste thinly on the french bread.
