My fourth resolution probably goes along with number one, but I am only going to drink one Diet Pepsi a day and I have actu- ally started this one and kept it so far. I had been drink- ing five or six (or seven) a day, and mom assured me that drinking too much soda is what causes women to look like they have an inner tube around their stomach, and even though I’m sure she wasn’t referring to me, I believe everything my mom tells me, so goodbye Diet Pepsi. I will miss you! Benefit Service There will be a Benefit Service for Bro. Joe Horn on Sat., Jan. 8th at 7 p.. at Faith Chapel Pentecostal. Everyone welcome. for dessert. (I hit pay dirt and found a lady in Stanton who made me a delicious jam cake just like Bee’s – thank you, Bonnie!) On Christmas Day, I got up early and put the bird in the oven. The night before I had soaked my shuck beans and placed them in the re- frigerator, so they went on the stove at about the same time as my bird disappeared into the oven. I included a ham hock in the beans for flavor. After the turkey had cooked for about three hours, it was time for the dressing and corn pudding to replace the turkey in the oven. Oh, how wonderful the kitchen smells at times like these! The aroma reminded me of our little house in Rockcastle County so many years ago. The only dish that was missing that really mat- tered to me was my mother’s dumplings. Bee never did write down that recipe for me, and I regret it terribly. Maybe I need to watch Eva make her dump- lings next Thanksgiving so I will be able to cook my own, because hers are al- most identical to Bee’s. It was comical to watch Kathy and I devour that Christmas dinner. She com- mented later, “I bet I have gained six pounds today!” Even though the meal was scrumptious, our “celebra- tion” was somewhat lacking since the family was not gathered around the table as they were when I was a small boy. A few days later, I de- cided to use another of Bee’s recipes and make her wonderful turkey hash. In case you like that dish, here is her recipe. 4 large potatoes finely chopped 2 cups of chopped onions 4 cups of chopped turkey Salt and pepper to taste Simmer until the mixture is mushy I always remember that but I put the Barlow in my pocket and went on about my business. And so the day wore out as I meandered along the slopes of Poosey Ridge looking for the perfect win- ter picture and aimed my camera all about to no avail. In the meantime, the black-handled Barlow was smoldering in the right front pocket of my jeans. I pulled it out when I got home and it opened smooth as silk. Both Blades—as rusted as they were—but the back springs were solid and full of life. I found a can of WD-40 and some steel wool and before you know what was going on, I had a real pocket knife for the first time in many years. I drove back to Kirksvi8lle last Sunday, in- tending to pay an extra dol- lar for the knife But the house was empty. A flyer advertising Disney World was blown up on the swing. “Ramblings” (Cont. from B2) my sons, Andy and Todd, loved my turkey hash and demanded that I make it ev- ery Christmas. I miss hav- ing them looking over my shoulder when I prepare this recipe. I am so blessed to have the heritage of holiday meals to remember and even the recipes to prepare those memorable feasts. I am grateful that Mommie Katie and Bee took the time to teach me a few tricks in order to cook my own small version of the family’s Christmas dinner.
