Monica GalettiSpaghetti Bolognese

Method:

1 Colour the beef in a little olive oil, add the chopped vegetables and garlic and colour lightly.

2 Add tomato paste and chopped tomatoes.

3 Cook until most of the liquid is gone.

4 Add the Worcester and the soy sauce.

5 Add half the stock and bring to the boil. Turn to simmer and add more stock as needed.

6 Finish with the chopped herbs stirred in. Serve with spaghetti.

500g lean beef mince

1 onion chopped

1 large carrot, peeled and chopped

2 sticks celery chopped

3 garlic cloves finely minced or grated

2 tbsp tomato paste

8 tomatoes roughly chopped

100ml Worcester sauce

100ml dark soy sauce

500ml beef stock

2 tbsp chopped flat parsley

1 stem tarragon chopped
