• 4 rotoli di pasta sfoglia rettangolare • 300 g di patate • 150 g di speck a fettine

• 6 uova • 4 fette di prosciutto cotto • olio extravergine d’oliva • sale, pepe

ingredienti x 8 persone

Lessate le patate in acqua bollente salata. Rassodate le uova. Tagliate lo speck a lista-

relle e rosolatele in una padella antiaderente, senza condimento, per renderle croccanti.

Sbucciate le patate e passatele allo schiac-ciapatate. Mescolatele in una ciotola con lo

speck e regolate di sale e pepe. Sgusciate e tritate grossolanamente le uova

insieme al prosciutto e insaporite con poco sale e pepe. Se i due composti risultano asciutti, ammorbiditeli con poco olio.

Ricavate dalla sfoglia 16 strisce di 10x20 cm. Dividetevi le due farce disponendole a

triangolo su uno dei lati corti.

Dal lato opposto praticate dei forellini o dei taglietti, a seconda del ripieno, per identifi -

carli una volta cotti.

Ripiegate le strisce su se stesse a triangolo, sigillando i bordi con poco olio. Dispone-

te i fagottini su una teglia coperta di carta da forno e cuoceteli in forno ventilato a 200° per 10 minuti.

• 400 g di farina, più quella per la lavorazione • 250 g di emmentaler• olio extravergine d’oliva, sale

• 3 carote • 1 peperone • 3 zucchine medie • 1 pizzico di bicarbonato

Impilate le piadine su un largo foglio di alluminio, farcendole con le verdure e il

formaggio e condendo ogni strato con un filo d’olio e poco sale. Richiudete l’alluminio intor-no alla torta e infornate a 200° per 20 minuti. Decoratela con fettine di zucchina e cubetti di peperone e servitela a fette calda o tiepida.

Disponete la farina a fontana sul piano di lavoro. Unitevi il bicarbonato e 1 pizzico di

sale, poi versate al centro 0,75 dl di olio e 1,25 dl di acqua tiepida. Impastate a lungo fi no a otte-nere un composto liscio.

Modellate sul piano un cilindro di pasta e tagliatelo in 5 parti uguali: avvolgete ogni

porzione in pellicola trasparente e fate riposare mentre preparate gli altri ingredienti.

Con la grattugia a fori grossi, grattugiate le verdure, pulite e lavate. Tagliate il formaggio

a lamelle con un pelapatate.

Sul piano infarinato, stendete le porzioni di pasta con il matterello in dischi sottili (circa

2 mm). Cuoceteli, uno alla volta, in una padella antiaderente, qualche minuto su entrambi i lati fi nché si formano bolle scure.
