ENERGIZING SPINACH SMOOTHIE Fresh spinach 1/ 2 large papaya 1 handful of parsley 1 or 1 ½ bananas Freshly squeezed juice of 4 oranges

To make this smoothie, fill your blender about halfway with fresh spin-ach. Add one half of a large papaya, and a handful of parsley. Add at least one banana (we prefer one and a half). Pour in fresh-squeezed orange juice about three fingers high on the blender. This is

about the juice of four oranges, although admit-tedly, we sometimes cheat and use the “fresh frozen” type. Then blend until smooth. BACON EGG TOAST

CUPS

4 slices of bacon 2 slices of bread 4 eggs Salt and pepper to taste Using the top of a round glass that has an opening slightly bigger than a muffin mould, about 3.5 inches, cut circles from bread. You should be able to cut two circles per slice of bread. Grease four muffin moulds. Place the bread on the bottom of each muffin mould. Preheat the oven to 400 F. Cook bacon slices in a pan about 3 minutes or until halfway cooked. Place bacon slices around the edges of the muffin tin. To help them stay, you might want to tuck the ends un-derneath the slices of bread. Crack an egg and put in the middle of each muffin mould. You may want to leave out some of the egg white so that the yolk doesn’t overcook while waiting for the egg white to cook. You can even sprinkle some grated cheese over.
