Founded in the 70’s by Dr. Joseph Dello Russo, New Jersey Eye Center (NJEC) became the first eye care center in New Jersey that treats al l eye condit ions by

offer ing special ty doctors, an opt ical shop, the first ASC in the Northeast, and by having cataract surgery as an in-office procedure. Our ambulatory surgical center was the first of its kind and led the way to the spread of outpatient surgery options in other specialt ies as well.

De l lo Russo LaserV is ion and The New Jersey Eye Center have been nat ional leaders in their f ie lds, helping to pioneer most of the leading technologies in use today. Our laser cor rect ion center was cent ra l ly involved in the FDA t r ia ls of the exc imer laser dur ing the 90’s that eventual ly led to the approval of this technology. Dur ing that c l in ica l t r ia l per iod (1991-1996), t he of f ice of Joseph Dello Russo, M.D. was the most prominent

of the 10 par t ic ipat ing centers, per forming more t rea tmen t s t han any o f t he o t he r s t udy cont r ibu to r s. Add i t iona l l y, in 1997 we gained specia l FDA approval to conduct unique cl inical t r ia ls to t reat higher degrees o f nea r s igh tedness, f a r s igh tedness, and as t igmat i sm w i t h la ser v i s ion cor rec t ion, leading to eventual FDA approval for these procedures.

Not on ly have the De l lo Russo doc tors played an integral role in helping to develop, test, and implement these lasers nat ionwide, but the Lasik pract ice was also involved with the adoption of the Intralase laser technology.

Our of f ice was the f irst in the United States to use this new laser, of fering blade-less Lasik in combination with Dr. Joseph Dello Russo’s p ioneer ing Down-Up Las ik™ techn ique. Addit ionally, we were the f irst practice in the New York area to use Custom Cornea Wavefront technology for primary and secondary treatment, and we have been pleased to offer this important advance in vision correction to our patients.

Who is lenny?Joseph DeCandia, was born in Bari, Italy

and came to Amer ica in 1956 at the age of 18. He took odd jobs as a dishwasher,

a baker and a butcher. In 1958 he took a job at “Lenny’s Pizza” in Brooklyn on 86th St reet where he star ted to learn the pizza business. A year later he went to work at “Lenny’s Pizza” on Nostrand Avenue which he later was able to purchase in 1960. In 1969 DeCandia decided to fur ther expand and open “Lenny’s Pizza” on Cross Bay Blvd and 160th Avenue.

DeCandia wanted to reach out for even more g row t h and in 1973, on a hand shake he purchased Ern ie’s Ba r located a t 161-03 Cross Bay B lvd.

He took t h is sma l l ba r and deve loped i t in to “Lenny ’s Clam Bar” which opened on Janua r y 11, 1974. Ta l k abou t t he Ame r i c a n d re am. Chicken lo- Mein

Just like every other par-ent, I need quick and de-licious. Under 30 minutes is optimum, especial ly if

you work outside the home or have kids in various extracurricu-lar activities.Try this easy chicken recipe the next t ime you’re in a bind to get dinner on the table quickly.

Ingredients1 tablespoon oi l-sesame or

peanut oi l1 lb boneless skinless chicken

breast, cut into thin s l ices1 clove gar l ic, minced2 tablespoons soy sauce or

ter iyak i sauce2 teaspoons f resh ly grated g inger or 1

teaspoon powder1 3-ounce package chicken f lavor ramen

noodle soup1 1-lb bag frozen mixed oriental vegetables1/4 cup waterDirectionsHeat oil in a large skil let over medium-high

heat unt i l hot. Add chicken and cook, st ir r ing f requent ly, unt i l no longer pink.

Add vegetables and lid. Cook until vegetables are cooked through, about 5 minutes.

In the meant ime, cook the noodles (without the f lavor ing packet) according to package direct ions. Drain.

Add soy sauce, garlic, ginger and seasoning packet to water. Mix well. Pour over ch icken and vegetables, add noodles and toss to mix.

Stuffed Bell peppers

This f ragrant dish is a rea l c rowd p leaser and is per fect for both family meals and enter ta in ing. I l ike to make the f i l l ing and s t u f f t he peppe r s

the night before to cut down on prep t ime dur ing those busy late af ternoon hours. You wil l probably have some of the f i l l ing mix ture lef t over, which would be wonder ful to use in savor y mini-meat pies (empanadas), or to be f rozen for another t ime.

Ingredients6 medium-sized bel l peppers, any color

you prefer2 t ab lespoons o l i ve o i l, p lus more fo r

dr izz l ing1 large yel low onion, diced3 cloves gar l ic, minced1 1/4 pound ground turkey, 1 package2 cups cooked brown r ice1 1/2 teaspoon ground cumin1 teaspoon ground cinnamon1 teaspoon kosher or sea sal t

1/2 teaspoon f resh ly ground pepper

1 14 o u n c e c a n I ta l ian stewed tomatoes, chopped

1/2 cup golden rais insDirectionsPreheat oven to 425

degrees.Hea t o l i v e o i l i n a

large skil let over medium heat. Add the gar l ic and onion and cook, st ir r ing

occasionally, unt il sof tened, 5 minutes. While the onions are cooking, wash the bel l peppers and slice of f a bit of the bot tom so they si t f lat, tak ing care not to cut into the inter ior. Cut of f the tops about one ha l f inch down f rom the stem and careful ly remove the seeds and white membrane. Set aside.

Add t he t u r key to t he pan and break apar t wi th a spatula. When ful ly cooked through, add cooked r ice, cumin, cinnamon, sal t and pepper. Stir well to combine. Add the canned tomatoes and the raisins and st ir well. Remove f rom heat.

Place the peppers in a 9 x 13 inch bak ing dish and stuf f with the meat mixture, mounding slight ly. Drizzle tops and sides of each pepper wi th ol ive oi l. Return the peppers’ tops and cover t ight ly wi th foi l.

Bake for 25-30 minutes or unt i l peppers are tender.

Ingredient Tips: Look for packages of diced onions in your supermarket’s refrigerated produce sect ion to cut down on prep t ime. Bot t led minced gar l ic is a lso a great t ime saver. Many grocers carry packages of pre-cooked brown rice that may either be on the shelf with the rice or in the freezer aisle. Quick cook (instant) brown rice is also available. To quickly chop canned items, remove the can’s lid and cut up the contents using a pair of clean scissors or kitchen shears.

Why put the cheese on top of the burger when hal f of i t just melts of f--Instead, form the burger around the cheese so you can char the meat and safeguard the more del icate f lavors. Use any mix ture of hard or semihard cheeses-Emmenta ler and Gouda or Asiago and Parmigiano-Reggiano also pair well.

Ingredients1/4 cup shredded Cheddar cheese

1/4 cup shredded Gruyere cheese1 pound 90%-lean ground beef1 tablespoon Worcestershire sauce1 1/2 teaspoons papr ika1/4 teaspoon f reshly ground pepperRecipe DirectionsPreheat gr i l l to medium-high or preheat

the broi ler.Combine Cheddar and Gruyere in a small bowl.Gent ly mix beef, Worcestershire, papr ika

and pepper in a large bowl, preferably wi th your hands, w i t hou t over work ing. Shape in to 8 th in, 4-inch-wide pat t ies. Mound 2 tablespoons of the cheese mix ture on each of 4 pat t ies, leaving a 1/2-inch border. Cover each with one of the remaining pat t ies. Cr imp and seal the edges closed.

To gr i l l: Light ly oi l the gr i l l rack (see T ip). Gr i l l t he s tu f fed pat t ies over medium-high heat, about 4 minutes per s ide for medium-wel l. (Be sure not to press the burgers as they cook or they’l l spli t open and the cheese wil l ooze out.) To broi l: Cover a broi ler pan wi th foi l and coat wi th cooking spray. Broi l the stuf fed pat t ies in the upper third of the oven, about 4 minutes per s ide for medium-well. In ei ther case, let the burgers stand for 5 minutes before ser v ing.

To oi l a gr i l l rack: Oil a folded paper towel, hold it with tongs and rub it over the rack. (Do not use cooking spray on a hot gr i l l.)

linguine with Clam Sauce

This is one of those awesome recipes where the sauce cooks while you br ing the pasta water to a boil. The linguini gets a f inal simmer r ight in the sauce, so all that br iny f lavor gets r ight ins ide the noodles. I t ’s a surpr is ingly economical meal -- and a surpr is ingly k id-f r iendly one, thanks to a l l t hat bu t ter and garlic, which is really the gateway to seafood-loving, isn’t i t? Ser ve i t wi th crust y bread for mopping up any del ic ious dregs.

Ingredients4 tablespoons ex t ra v irgin ol ive oi l3 tablespoons but ter4 cloves gar l ic, f inely chopped1 shallot, f inely chopped (or 1/3 cup f inely

chopped onion)

3 6.5-ounce cans chopped clams, drained, juice reser ved (you should have about 1 1/2 cups of juice)

1/2 cup dr y whi te wine (or chicken broth, i f the wine f lavor wil l t rouble your k ids)

2 teaspoons Worcestershire sauce1/2 cup f inely chopped parsleySal t to tasteFreshly grated parmesan1 pound of linguini, freshly cooked until just

tender (be sure to salt the cooking water well)DirectionsSet a large pot of four quar ts of water to boil

(for the l inguine). Sal t the water generously. (Add the pasta when the water comes to a boi l.)
