in the Singapore heritage and story.

Indonesian Bay-leafBay leaves is a fast-growing deciduous tree that reaches a height of up to 30m. It originates from Myanmar, Cambodia, Laos, Malaysia and the Philippines and is found in Singapore too. Both the fresh young leaves as well as dried leaves are

used as a spice in traditional Malay cooking.

A socialiser’s way to please the crowd. Bayside is a refreshing sour cocktail which salutes the aromatic

bay leaf and crisp green apple into a beautiful concoction.

According to one story, the drink was the preferred beverage of Al Capone, whose gang

dominated Chicago's South Side. �e gin run by Capone's gang had a rougher edge to it, and

required more sweeteners to make it palatable. �us, the South Side was born. �e citrus and

mint pair harmoniously together which results to a clean and fresh cocktail.

Tongkat AliTongkat Ali is a shrubby tree that grows in its native countries of Indonesia, Malaysia and Singapore. It is also known as “Malaysia Ginseng”. Its roots are believed to be an

aphrodisiac for men.

Warm and intense, Midnight Flings is a spirit forward cocktail that binds bittersweet notes from

our homemade tongkat ali bitters and Italian vermouth.

Hanky Panky $18

An original classic, �e Hanky-Panky cocktail was the brainchild of Ada Coleman (known as

"Coley") who began as a bartender at the Savoy Hotel in 1903. �e Hanky Panky is a sweet

martini, with the addition of Fernet Branca, it is concocted into a herbaceous cocktail with a

bittersweet �nish.

Co�ee ArabicaOriginally from Yemen, this species of co�ee is today widely distributed in many parts of the world and is cultivated its seeds. Ripening from the bright red to purple, the berries are harvested, and the seeds, or bean, are dried and roasted, before being processed further into the

popular beverage.

Durian & MangosteenDurian and mangosteen are native to Southeast Asia and widely cultivated in the tropics. Durian is touted as the king of fruits, while mangosteen is often referred to as the queen. Eating mangosteen is believed to have a “cooling” e�ect, to counteract the “heatiness” of

the king of fruits like Ying & Yang.

�e �rst printed reference to "�z" is in the 1887 edition of Jerry �omas's Bartender's Guide.

Known as a hometown specialty of New Orleans, the gin �zz was so popular that bars would employ teams of bartenders that would take turns shaking the drinks. Citrusy and refreshing, the Gin Fizz is

a timeless classic.

CoconutBelieved to have originated from the tropical coastlands of Malaysia, there are now many di�erent varieties of this common palm. �e fruit is made into cooking oil, margarine, soap and candles. Coconut milk is used in many traditional dishes in Southeast Asia like Nasi Lemak. Sap or juice from the immature in�orescence is made into gula melaka (brown

sugar) or the palm wine, toddy.

�e recipe was said to have been invented by a bartender at �e Pendennis Club in honour of Colonel James E. Pepper, a prominent bourbon

distiller, who later brought it to at the Waldorf-Astoria New York City. Well balanced, with an underlining of citrus and freshness from

the orange peel. �e Old Fashioned is easy-sipping with an aromatic complexity of

bourbon.

Galangal�is true relative of the common ginger is commonly cultivated in private homes and villages in Singapore and Malaysia. It is used for its aromatic properties in many Asian dishes.

Also, like the most gingers, it is often used in traditional medicine.

Moscow Mule $18

In 1941 at the Cock ‘N’ Bull in Hollywood, the bar owner found himself unable to sell either the cases of Smirno� Vodka he had purchased or the bottles of house made ginger beer. Wes Price, the bartender at the time, said he was just trying to

clear out the basement. With the combination of ginger and lime, Wes created a legendary classic.

ClovesNative to the Moluccas, this valuable spice is now cultivated as far as Sri Lanka, Madagascar and Tanzania. In Malaysia, it can be found in the state of Penang, where the sun-dried �ower buds are sold commercially as cloves. Clove are used as a spice in many local and Western cuisines, including in pickles, sweets and cakes.

Also named as Continental Sour and the Southern Whisky Sour, the name New York Sour came into common use in the early 20th century. Appealing to both whisky and wine lovers. �e New York Sour is essentially a whisky sour with

an addition of red wine.

Tumeric�e yellow powder, which is derived from the underground stems of this plant, is an indispensable ingredient in curry powder and used in many Malay and Indian dishes. Tumeric is native to India. It is also used to treat ailments such as yellow fever, diarrhoea, constipation and

high blood pressure.

commonly available in garden nurseries.

Hibiscus�is common hibiscus is a favourite for its showy red �owers, although there are many hybirds with varying �ower colours as well as variegated leaves. It is said to originate from eastern Asia but has found its way into many tropical gardens. In Singapore, it is found cultivated in many private homes or in parks and gardens. Although its �owers do not generally last long, the shrub is free �owering

and produces a generous �ow of blooms.

RoseRose is a popular ornamental plant, grown for its attractive and fragrant �owers. Most varieties of the rose plant are derived from the species Rosa chinensis, although many species easily hybridise, giving rise to many types of garden roses. �e multitude of rose hybrids make it very di�cult to identify this plant to species. Essential oil extracted from the plant has been

used to make perfume for centuries.
