Melting Moments Makes 12 Preparation Time - 20 mins. Cook - 12-15 mins. ________________________________________________________________ Ingredients 200g soft butter 250g self-raising flour 2 eggs 100g caster sugar 2 tsp vanilla extract 120g oats Method 1. Put the butter and sugar in a bowl and mix together with a wooden spoon or electric hand whisk until fluffy. 2. Break the egg and whisk with a fork, add half to the butter mix. Beat with a wooden spoon. 3. Add the vanilla extract and the flour and mix together until the flour is fully combined. 4. Break the dough into 12 lumps and roll each of them into a ball, all of the same size using the palms of your hands. 5. Put the oats on a plate and roll the balls in the oats and put them on a baking tray. Squash the balls slightly with your hands. 6. Put the tray into a pre-heated oven 160C fan for 12-15 mins or until cooked. 7. Leave them on a baking tray to cool.
