MANAGING DIABETES DURING THE

HOLIDAY SEASONThe holiday season is synonymous with many things, including food. Family gath-erings and holiday office parties wouldn’t be the same without great food. Food plays such a significant role during the holiday season that many people are worried about overindulging. Some celebrants can afford to overindulge, while others must resist temptation. Diabetics fall into the latter category, as the festive mood of the season does not mean people with diabetes can throw dietary caution to the wind. With the holiday season upon us, diabetics can heed the following tips from the U.S. Centers for Disease Con-trol and Prevention to help them stay on a healthy track. • Stick to your normal routine. While the holiday season can be unpredictable, the CDC advises diabetics stick to their normal routines as closely as possible. Because holiday guests cannot control food served to them at family gatherings or parties, the CDC recommends dia-betics offer to bring a healthy, diabetic-friendly dish along to any parties. In ad-dition, don’t skip meals during the day in anticipation of a large holiday meal. Doing so makes it hard to control blood sugar levels. • Be extra careful with alcohol. Alco-hol is served or readily available at many holiday gatherings, and many people overindulge because of the festive mood of the season. Overindulging in alcohol is dangerous for anyone, but diabetics must be especially mindful of their al-cohol consumption. Alcohol can lower blood sugar and interact with diabetes medicines. Diabetics who want to enjoy a holiday libation should keep their alcohol consumption to a minimum. • Eat slowly. Eating slowly can benefit anyone during the holiday season. Eating at a leisurely pace gives diners’ brains ample time to signal that their bodies are full. By eating quickly, diners may be eating more calories than they hoped to eat, and that can lead to uncomfortable feelings of fullness after a meal. Diabet-ics who can slow down their eating are less likely to overindulge in less healthy holiday foods that can affect their blood sugar levels. • Remain active. The holiday season can be hectic, as adults often must jug-gle extraordinarily busy social schedules with the responsibilities of everyday life. Many people sacrifice time at the gym to ease the burden of hectic holiday sched-ules, but diabetics must resist that temp-tation. The National Institute of Diabetes and Digestive and Kidney Diseases notes that routine physical activity helps dia-betics keep their blood glucose levels in their target range. Physical activity also helps the hormone insulin absorb glucose into all of the body’s cells for energy. That extra energy boost can help diabet-ics fend off holiday-related fatigue.Diabetics face a lot of temptation come the holiday season. But with the right plan of action in place, men and women with diabetes can enjoy a healthy holiday season.

High pressure builds for Friday the 16th resulting in short period north-erly windswell. Waves are strongest North Florida through the northern Treasure Coast, with waves about 3-4 feet high. Winds are from the NNW/NW in the morning, bending more N in the afternoon.

Small, fun waves ESE swell over the weekend (the 17th & 18th). Should be rideable Saturday and Sunday, waves about 2-3 feet.

Monday and Tuesday you can expect a longer period ENE swell. Some wind chop will be present earlier in the week. Small easterly swell hangs on mid-week as windswell tapers out.

Turkey is a succulent staple of Thanksgiving. Though it can be enjoyed year-round, turkey is most popular on Thanksgiving, when families and friends gather for large feasts.

Cooking a turkey can be daunting, especially for those people cooking their first bird. But slow cooking a turkey can make the process a lot easier and help to guarantee that each part of the bird is evenly cooked when it comes time to remove it from the oven. Those who want to try their hand at slow-cooking this year’s Thanksgiving feast can try the following recipe for “Holiday Turkey” from Andrew Schloss’ “Cooking Slow” (Chronicle Books).

1 fresh turkey, about 15 pounds, preferably free-range1 tablespoon olive oil1 quart apple cider2 teaspoons dried poultry seasoningCoarse sea salt and freshly ground black pepper

Remove the giblets from the turkey and discard (or save for another use). Rinse the turkey inside and out and pat dry with paper towels. Rub it all over with salt and pep-per. Refrigerate, uncovered, for at least 12 hours and up to 24 hours. During that time, the surface of the turkey will become visibly dry and the skin will tighten; this encourages a nice crisp skin on the finished bird.

Remove the turkey from the refrigerator 1 hour before you plan to start roasting. Preheat the oven to 450 F.Put the turkey on a rack set in a large, flameproof roasting pan. Drizzle the oil over the top.

Roast for 1 hour. Reduce the oven temperature to 175 F. Pour the cider into the roasting pan and sprinkle the poultry seasoning in the liquid. Con-tinue roasting until an instant-read thermometer inserted into the thickest part of a thigh (but not touching bone) registers to 170 F.

Transfer the turkey to a carving board, tent loosely with aluminum foil, and let rest for about 15 minutes (see tip). Meanwhile, skim the fat from the surface of the liquid in the pan. Put the roasting pan over two burners and bring the pan drippings to a boil over high heat. Cook until the juices reduce and thicken slightly, enough to coat a spoon, about 10 minutes. Taste for seasoning. Carve the turkey and serve with cider pan juices.

Resting tip: Slow-roasted meats need far less resting time (pretty much none) than those that are traditionally roasted. The rea-son for resting meat that has been roasted at a high temperature is to allow juices that have collected in the cooler center time to migrate back into the dryer (hotter) exterior sections after it comes out of the oven. Be-cause slow-roasted meats are cooked evenly and a temperature that keeps most of the

juices in place, a resting period is largely unnecessary. A brief resting time does allow the meat to become a little firmer as it cools, making it easier to carve. Serves 15.

HOW TO TEND TO AN INDOOR HERB GARDEN

Fresh herbs and recently picked ingredients can add flavor to any meal. A home chef can even improve the flavor of store-bought or prepared foods with an herb garnish that can transform otherwise bland dishes into something you’ll want to eat again and again. Harvesting fresh herbs is easy for homeowners who have gardens right in their backyards. However, everyone does not have a backyard, and even those that do might find their gardens threatened by changing seasons or unwanted critters. When gardens are moved indoors, the bounty of fresh ingredients continues no matter the date on the calendar. Herb gardens are perhaps some of the easiest gardens to cultivate indoors because they don’t require large pots or much space. The plants themselves are relatively compact, and it only takes a pinch of herbs to give a meal some extra flavor.When growing herbs indoors, your indoor growing area must have adequate light to simulate the longer days of summer; otherwise, the plants may go dormant. It’s ideal to have a southern exposure on the herbs, with at least eight hours of sunlight per day. If you do not live in a particularly sunny locale, consider supplementing the plants with grow lights, which will provide the full spectrum of light the plants need to thrive. Indoor air can become too dry for herbs, so you will need to compensate by providing humidity. While there may be added humidity in a kitchen greenhouse window, it still may not be enough to keep the plants healthy. Think about misting the plants daily to create some extra humidity, or place herb pots on top of a water-filled tray with pebbles so the evaporating water will add moisture without making the roots soggy.

Insects are another threat to indoor gardens because there is no cold weather to inhibit the hatching of insect eggs. Soil from outdoors may be more susceptible to insects that are already living in the dirt. Instead of soil from outside, use packaged soil or a nonsoil alternative that will hold moisture without the added risk of bugs. If small insects appear, use a mist of soapy water to kill the bugs without harming the plants or making the herbs unfit for eating. Group herbs together according to their watering needs to make maintenance that much easier. New sprouts generally need more water

than established plants. Prune the herbs as needed for recipes. If the herbs experience a growth spurt, trim some of the plants and freeze the herbs for later use. Many indoor herb gardeners begin by growing

parsley, chives, oregano, and basil, but you can experiment with just about any herb.
