Liver cake - fast microwave method

I have relentlessly tested many recipes and have found that the microwave version is the simplest and quickest. This means that the kitchen doesn’t smell too bad and the oven remains untouched.

Microwave recipe for home-made liver cake:

1 lb / 500g liver½ lb / 250g granary flour (or gluten-free flour)1 eggA teaspoon of olive oilA splosh of milk

Liquidise the liver with the eggs, milk and a little oil in blender. Add the flour and mix. Put into a microwave dish/cake tin (a flat one will make cutting easier) and cook on full power for about 6-9 minutes, depending on your microwave.

The mixture won’t rise much. When cooked it should be firm (rubbery almost!) and will shrink away from the edges of the container.

Cut the cake into slices and keep refrigerated. Use within three days, or freeze immediately and then take out of freezer and defrost when required.

Tuna cake - fast microwave method

This recipe is good for dogs that have meat intolerances. You can alternatively use salmon or sardines instead of tuna.

1 (160g) tin Tuna in Oil (do not use tuna in brine as this increases the salt content in the recipe)2-3 dessertspoons self-raising flour (or gluten-free flour)1 eggA little more oil if necessary.

Mash the fish and oil together in a bowl with a fork so that it’s as smooth as possible. Beat the eggs and then combine with the fish and oil.

Add the flour gradually, mixing thoroughly to form a smooth paste.

Place in a flat microwave dish and cook on full power in bursts for between 5-7 mins, depending on your microwave power.

Watch the mixture carefully so that it doesn’t over-cook. When done, the mixture will be firm and will shrink away from the edges of the container.

Once cool, cut the cake into slices and use within three days (keep refrigerated) or freeze until it’s needed.
