Our StoryLively Run Goat Dairy, a pioneer of goat cheese in the United States, has been producing fine artisanal cheeses since 1982. Steve and Susanne Messmer acquired the operation in 1995 after moving their family from Germany to the United States. Susanne, a native German, became a connoisseur of the exemplary cheeses that Europe has to offer, especially while visiting her family’s summer home in France. Steve, born and raised in Interlaken, New York, served in the military in Europe as an engineer. Through this experience, he met Susanne.

The couple’s original goal in owning a dairy farm was to bring impoverished people from other countries to their farm. The Messmers aimed to teach these people useful skills that they could utilize upon returning to their own homeland. Unfortunately, these aspirations did not come to fruition, as farm life became too busy. They thusly settled on sharing their knowledge with anyone willing to learn, including many French interns that the farm hosted throughout the years.

The Messmers decided against raising cows in favor of goats, enjoying the sweat nature of the animal and the benefit of low economic maintenance. Susanne also felt that cows would be too large to handle for Pete and Dave, her two young sons. The entire Messmer family fell in love with the goats and their farm. In time, Pete came to be the main cheese maker and Dave came to help with the business elements of the farm. The 104 goats at Lively Run have now become family, and Susanne has affectionately expressed that “they’re very much like people – they’re intelligent and willful, so you always have this little struggle with them. But, they get very attached to you, and they’re really quite lovable.”

Lively Run Goat Dairy, a contributing member of the Finger Lakes Cheese Trail, helps to pioneer goat cheese in the American market place. The farm is consistently growing and produces 40,000 pounds of goat cheese annually. Today, the milk is supplied by 300 goats making up five herds in the Finger Lakes region. The goat dairy’s authentic artisanal cheeses remain inspired by the French method and are all small batch made, by hand, on the 22 acre farm. These delicious cheeses are all-natural, containing no artificial additives or preservatives. With a process rooted in tradition and affection for the goats being raised, Lively Run Goat Dairy truly makes sensational and superior cheeses which have become a staple of the Finger Lakes region and beyond.

Why Goat Cheese?• Goat cheese in the United States has been the fastest growing gourmet cheese in the past decade

and demand is continuing to increase. • Goat dairy is considered to be healthier than cow dairy, especially for people who have dairy-

related allergies or trouble digesting cow milk. Goat milk proteins and fats are much more similar to human milk and the body utilizes about 70% of the nutritional value of goat milk vs. only about 30% of the value of cow milk..

• Goats are more economical than cows for the farmer to keep. They are cheaper, easier to handle, and cleaner. Goats provide an ideal opportunity for more sustainable value added community and environmentally friendly agriculture as compared to large scale industrial/commodity dairy.

Recipe

Directions:1. Toast the nuts in a pan on the stove top on medium heat for 5 minutes, being careful to not

burn them. Keep stirring them with a wooden spoon. When they are warm, they have that delicious milder toasted flavor.

2. Place them in a 16 oz glass or plastic container, pour the honey over the nuts and store at room temperature for 12h.

3. Place Chevre log on a glass or china dish, pour honey nut mix over log and serve with crackers, crisp bread or brioche.

4. The Lemon Thyme and Rose Peppercorns add an aromatic flavor that makes the whole “pop”!

That is because our chevre is truly fresh, artisinal, handmade cheese, unlike many of the mass produced foreign import goat cheeses, which are industrial, factory processed products. We use old fashioned slow time, low temperature vat pasteurization which preserves milk quality and natural proteins and nutrients. Our cheese is creamy, rich, and wholesome.

Directions:1. Half and Slice Onions and break into strips2. Slice tomatoes into thin discs3. Crumble the Lively Run Feta4. Layer half the onion strips on the bottom of a casserole dish5. Cover the onion layer with a layer of tomato slices, and sprinkle with spices, salt and pepper6. Cover the tomato layer with half the crumbled feta7. Repeat steps (2) to (4) with the other half of the remaining onion, tomato, and feta8. Recipe

Directions:1. Wash and clean mushrooms and remove stem and scoop out central portion of gills.2. Chop the onion, garlic, bacon and mushroom stems into small pieces and sauté in a skillet with

the butter until the onion is browned.3. Remove from skillet and place in a mixing bowl with the crumbled Cayuga Blue cheese and mix

thoroughly by hand.4. Place a teaspoon full of this filling into each mushroom cap.5. Place the mushrooms on a cookie sheet and bake in the oven at 400 degrees for 20 to 30

minutes, being careful not to burn or overly dry out the dish. Serve while still hot.

Recipe

Directions:1. First, preheat your oven to 350 degrees.2. Then, spread out the chopped walnuts on a baking sheet and place them in the oven to toast

for 15 minutes, or until brown and toasty.3. While the walnuts are toasting, put the cheese and the softened butter into the bowl of a food

processor and spin until well blended.4. Slowly begin adding in the wine until the desired texture is reached. More wine will result in

a softer, more spreadable texture; less will result in a firmer texture.5. Remove the cheese mixture from the food processor and slowly stir in the toasted walnuts. 6. Serve on crackers or on pieces of toasted baguette. Feel free to experiment with this recipe

by adding spices or substitution different nuts.

Seneca Blue MoonLively Run Goat Dairy Seneca Blue Moon is a mold-ripened soft cheese. Seneca Blue Moon begins life as a traditional Chèvre. The cheese is then aged with classic blue mold for six weeks, resulting in a beautiful blue rind on the outside of the log. While the rind has a fairly mild portobello mushroom flavor, the paste of the cheese develops a slightly sharp blue flavor while retaining the creamy texture of traditional Chèvre.
