Froxfield to become a primaryschoolFroxfield Infants’ School is in the processof consultation to become a primaryschool. Local singing sensation, Sertari, hasreached the regional finals of the UK’sbiggest singing competition. Attractingover 8,000 acts, Open Mic UK hastravelled the country searching for thebest singing talent.

Now just one performance away fromthe grand final and a gig at the O2 Arenain London, Sertari, will compete withother regional finalists at the PortsmouthGuildhall on the 9 December.

On the 10 November Rudolf and Prancerwill be making a special visit to Petersfield.The visit comes as part of StanstedHouse’s festival due to return on the 23-25November. With many local exhibitors, aswell as companies from further afield, theevent has become a popular alternativeto the usual stressful Christmas shoppingexperience.

During the festival, the Stansted LightRailway and ‘Rudolph & Prancer’ will begiving lifts on the ‘Festive Horse DrawnCarriage’ between the house and the gardencentre.

The festival will also see the ‘belowstairs’ rooms of Stansted House full oftreats with the Old Kitchen, Servants Hall,Pantries, Housekeeper and Butler’s roomsall featuring a wide selection of Christmasfoods along with wine, beer and liqueurtasting.

The ‘upstairs’ stately rooms will thenhave creative and decorative Christmasdecorations for the house, including;

inspirational stands in the Main Hall as wellas an array of wreaths, garlands, wrappingpaper, ribbons, cards, candles, interioraccessories and tableware in the MusicRoom Blue Drawing Room and Boudoir.

The festive fun will continue with ‘TheChristmas Gift Marquee’, Daily decorativedemonstrations, festive tastings, Santa’sGrotto, juggling, story telling, face paintingand craft activities and ‘The StanstedChristmas Maze & Wish Tree’ in the WalledGarden.www.stanstedparkgardencentre.net

Enhancing eyesThis year saw GrahamCoates make his 12thtrip to Africa with UK-based charity VisionAid Overseas.

Graham, who is apartner at Morgan-Owen & CoatesOptometrists inLavant Street,Petersfield, has beenan active memberof the charity forover a decade, working to transform eyecare services in developing countries. Of theworld’s population, 670 million people (10%)are disadvantaged by poor vision and a lack ofglasses.

“It’s fantastic to use my professional skill in aplace where there is so much need,”

Graham explains. “I’ve just returned fromworking in Gulu, North East Uganda, an arearecently ravaged by war. It is always humblingto see the desperate need and the difference asimple pair of glasses can make to someone’slife. Part of my recent trip involved traininglocal health teams to screen for eye conditions.”

In order to achieve the aim of establishinglocally based eye care services in every countrywhere they operate, Vision Aid Overseas isdeveloping Vision Centres where patients canreceive a walk-in eye examination, purchasean affordable pair of glasses and be referred forfurther specialist care if necessary.

The Christmas fun starts on the 16November with the Switching on of theChristmas Lights for Children In Need. Thisnight will feature a whole host of familyentertainment, including children’s rides,entertainment on stage and a visit fromFather Christmas.

The Petersfield Town Mayor and DamienHinds MP will then light the all importantlights, all in a bid to raise funds for Childrenin Need.

The 16 November will also see the launchof the Christmas Tree Trail. Returningfor a second year the initiative gets thechildren of Petersfield to follow a trailof participating shops. In each shop thechildren will be able to collect a sticker tostick onto the map whilst joining in othercompetitions. The overall winners of theTrail will win vouchers that can be spent atthe participating shops on the trail.

The festive fun continues on Saturday1 December with the opening of ThePetersfield Winter Wonderland at the RedLion, on College Street Petersfield. Herethere will be a large skating rink, Christmasthemed stalls and a Santa’s Grotto at theweekends. Opening in style, the evening

of 1 December will also see a range offestive entertainment. The Wonderland willbe open from 9am - 9 pm everyday untilSunday 23 of December.

And for those not too tired after the 1December’s evening entertainment, the 2December will feature a Christmas FestivalMarket. Working with the HampshireFarmers Market, Petersfield Festivals will

be taking over the centre of Petersfield toput on a large, festive and varied market-perfect for the Christmas shop! Alongsidethe market there will also be lots to do forfamilies including festive activities – feelingChristmassy yet?

Method

Preheat the oven to 200C,gas mark 6. Break up theChristmas pudding intopieces and mix with thecream until smooth. Spoon

into a piping bag with astraight nozzle.

Lay out the pastry sheetsand pipe a cigar-sized line ofthe pudding mix lengthwaysalong the middle of thepasty. Fold over the pastrylengthways and roll into acigar shape.

Place on a baking tray andsprinkle with cinnamonsugar. Bake for 8-10 minutesor until crisp and serve withWaitrose Mince Pie Ice-Cream.

Christmas Pudding CigarsLiven up leftover Christmas pud

Ingredients

• 4tbs light olive oil• 2 medium onions,

chopped finely• 2 large carrots, chopped

finely• 2 sticks of celery, trimmed

and diced• 1tin of butter beans

(400 grams)• 1.5 ltr vegetable stock• 6 oz quinoa• 4 tbs chopped fresh parsley• 1 tbs chopped fresh

oregano, rosemary or thyme• 1 bay leaf• salt and pepper to taste

Method

Heat the oil in a saucepanthen add the onions, carrotsand celery and fry for 5minutes. Then add thebutter beans and garlic andfry for another 3 minutes.

Stir in the chopped tomatoesand vegetable stock andsimmer for 20 minutes.

Add the quinoa, parsley,oregano and bay leaf andcook for a further 15 minutesuntil the quinoa is cooked.Season with salt and blackpepper to taste.

Baked Gammon with a Quince andSherry Glaze

Add some glamour to your Christmas menu withthe Baked Gammon with a Quince & Sherry Glaze

Ingredients• 2.5kg Waitrose smoked

gammon joint• 1 litre pressed apple juice• 30-35 whole cloves• 100ml Waitrose Fino Sherry• 155g pot Waitrose Cano’s

Membrillo Pure SpanishQuince Paste (with the pre-packed cheeses or from thecheese service counter)

Method

Place the gammon joint ina large pan then pour overthe apple juice and enoughcold water to cover. Bring tothe boil, reduce the heat andcover with a lid. Simmer for1 hour.

Preheat the oven to 180°C, gasmark 4. Drain the gammon

thoroughly and allow to coolslightly. Cut the string, thenwith a small, sharp knife,carefully cut away the rind,leaving the layer of fat intact.Score the fat with a diamondpattern and stud the centreof each with a clove. Place ona rack in a roasting tin, coverloosely with foil and roast for45 minutes.

Meanwhile, place the sherryand quince paste in a smallpan and gently heat throughuntil the paste has melted,then simmer for 2-3 minutes.Remove the gammon fromthe oven and spoon abouthalf the glaze over the top.Pour a little water into theroasting tin to prevent thejuices burning. Roast foranother 20-25 minutes, thenremove from the oven andbrush with more glaze. Returnto the oven uncovered, untilthe gammon is golden.

If serving hot, allow to standfor 10 minutes before carvinginto thick slices. Serve withboiled new potatoes andWaitrose Colcannon.

Ingredients

• 125g butter, at room temperature• 115g caster sugar• 60ml milk• 1 tsp vanilla extract• 225g self-raising flour• 70g custard powder• Edible gold dust to decorate

Method

Preheat oven to 180°C. Line twobaking trays with non-stick bakingpaper.

Use an electric beater to beat thebutter and sugar until pale andcreamy. Beat in milk and vanillaextract. Fold in the flour andcustard powder.

Press the dough into a ball andwrap in plastic wrap. Refrigeratefor 30 minutes to rest.

Divide the dough into

manageable portions. Roll out oneportion on a sheet of non-stick bakingpaper to about 1cm thick. Use Christmascookie cutters to cut shapes and placeon the trays. Decorate with gold dust.

Bake for 10 minutes or until lightlygolden. Cool for 5 minutes on the traysbefore transferring to a wire rack tocool completely. Repeat with remainingdough

• Juice of 1 lemon• 3 tsp Belazu Rose Harissa• 12 raw Madagascan tiger prawn

tails, peeled, about 250g• 2 tbsp Waitrose organic mayonnaise• 1 Hass avocado• 15g butter

Method

Pour the lemon juice into a non-metallic bowl and stir in 1 teaspoonof the Rose Harissa. Peel the prawnsbut leave their tails on. Add theprawns to the marinade and setaside.

In a small bowl or ramekin, stir theremaining Rose Harissa into themayonnaise for the dip.

Cut the avocado in half lengthwaysdown to the stone and all the wayround. Twist the two halves inopposite directions and pull apart.Lift out the stone using the point ofa sharp knife. Peel the skin and slicethe flesh, then arrange on 2 plates.

Melt the butter in a large frying pan,add the prawns with the marinadeand cook for about 5-6 minutes,stirring occasionally, until the prawnsare opaque and pink all over. Dividebetween the plates, season with blackpepper, and serve with crusty bread,lemon wedges and the Rose Harissamayonnaise dip.

Caponata - Sicilian Vegetable Sypmphony RelishThis Sicilian dish makes a fantastic festive vegetarian option, with

rustic bread or pasta

Ingredients

• 1 large chopped onion• 3-4 celery stalks, including the leaves,

chopped finely• 5 tbls olive oil for cooking

(not extra virgin)• 1kg (2 1/2 lb) aubergines, cut into

2.5cm (1 inch) chunks• 1 tbsp salted capers, soak in water for

10 minutes, then drained• 20 green olives, (remove the stones)• 1 tbls sugar• 1 tbls white wine vinegar• 55g (1 3/4 oz) concentrated tomato

paste• salt and pepper• 2tbls extra virgin olive oil to add in at

the end

Method

Blanche the onion and celery in lightlysalted water for a few minutes, thendrain.

Heat the cooking oil in a large frying pan,add the aubergine chunks and fry untilbrown and tender. (Perhaps do this inbatches as you do not want to overcrowdthe pan or the aubergine will just ‘melt

away’).

Add the chopped onion, celery and allthe remaining ingredients. Stir well, thencover and cook for about 15 minuteson a medium heat, stirring occasionallymaking sure it doesn’t stick to thebottom of the pan. Remove the lid of thepan towards the end of cooking. Shouldthe sauce require extra moisture, add atablespoon or two of hot water duringcooking.

Season to taste with salt and pepperand add the extra virgin olive oil. Oncecooled, it can stay in a cold refrigeratorfor up to a week.

The Caipiroska(Partner to any party)

• Russian Standard Vodka (or Ketel One ifyou are spoiling yourself)

• Crushed ice• Granulated sugar• Two large tall glasses• One Lime

This is a brilliant party version of theCaipirinha. Dice a lime into sixteen piecesand place into a large tall glass. Cover withtwo heaped teaspoons of granulated sugar.Pour some vodka over the limes to wet thesugar and then gently muddle (crush) thelimes to release the juice but also the oilfrom the skin. Use a spoon to release anystuck limes at the bottom. Add half a glassof crushed ice and fill up the glass withvodka. You could just stir the drink, but toreally impress guests, take another glass(same type), invert onto top of your drinkcreating a seal with your hands, and shakethe mixture between the glasses, then servein the original glass. Make sure your handsseal the glasses well together or you andanyone nearby will get wet! Lots of festivefun and everyone will want a go. Fantasticand interactive!

The Old Fashioned (A winter warmer)

• Woodford Reserve Bourbon (to fill glass - it’s Christmas after all!)• Four cubes of ice• 2 maraschino cherries• 1 sugar cube• 10 drops of angostura bitters• 1 orange

Take a sugar cube and place it in a tumbler glass. Pour ten dropsof angostura bitters onto the sugar cube and allow to soak in. Pourenough bourbon to cover the cube and crush and dissolve thesugar. Add a cube of ice and stir well. Squeeze the cherries to releasetheir residual juice and pop the flesh in the glass. Add a little morebourbon, another ice cube and stir. Then slice off a strip of peel fromthe orange, twist into the glass to release the oils, rub onto the innerside of the glass to cover in oil, then drop a slither of the peel intothe glass. Add two more cubes of ice and top up the glass with morebourbon and serve. Seems fiddly, but seriously worth the effort. Thisshould be enjoyed by the fire - warming, toasty and delicious!

Pure PassionIn a highball glass, mix 150ml mango juicewith 200ml pineapple and passion fruitcoconut water. Add some ice and stirthrough a few mint leaves. Garnish withextra mint and a slice of pineapple for thatsunshine holiday feeling.

Today Dragon Street is one of the most popular places to shop (andeat) in Petersfield. However, did you know that back in the 18thCentury if you were to walk along this traditional street, instead ofshops and restaurants you might have seen a white elephant? Thisis because Dragon Street resident and traveler, John Shakleford issaid to have brought a white elephant to his home when returning

from a trip to the colonies! During this time the area was a bit more‘elephant friendly’ as behind his house there was largely garden andorchard…We’ll let you be the judge if you think the story is true orlegend! Last year saw crowds gather to enjoy crepes and music outsidethe Queens; hot food and mulled cider outside the Arms; arts andcrafts in the Village Hall; farmyard animals in a stable, Juggling Jakeentertaining the children and, of course, Father Christmas in theChurch.

This year there will be plenty more festive fun with stalls lining theHigh Street, filling the Village Hall and the Church. Father Christmashas promised that he will pop along again, and the Salvation Armywill be coming on the Plestor for a medley of Christmas carolsthat all are invited to join in. Mill Farm will be returning withtheir animals and Juggling Jake will be back with his balloons andcircus tricks. There will be lots of hot food and drink, as well asChristmas Market at The Queen’s featuring a variety of stallholderswith a crepe man, a BBQ serving steak and German sausages. As winter is definitely with us, it is good tobe able to calm down a little when it comesto gardening, to take stock of what’s thereand to dream about what it would be goodto achieve in the garden over the next fewseasons...but there’s still plenty to keep youoccupied so, when it’s not pouring with rainor bitterly cold, get out there and enjoy someinvigorating fresh air whilst you work!

Make a note of those plants that lookparticularly good during winter – perhapsbark colour or texture, or an interestingor dramatic outline. Then make sure that,where feasible, you plant more of them inpositions where you can really enjoy themnext winter. Plants like this also make greatChristmas gifts for friends with gardens!

As weather permits, tackle the vegetableplot, removing the remains of any plantswhich are now over and remembering to binor burn any that are infected with diseases.When the soil is not too wet, fork in well-rotted manure and garden compost inpreparation for next year’s vegetables.

When it is nearly empty, take theopportunity to scrub out your water butt,rinse it thoroughly and then let it re-fill asand when it rains.

Make sure that you have plenty ofhorticultural fleeces to hand, ready toprovide at least a few degrees of frost

protection for tender plants and anything,which has been recently planted. And don’tforget that it is not just plants that mayneed winter protection- ensure that outsidepipework and taps are well insulated toprevent freezing...or switch off at the mainsto be extra safe.

Here he explains how he overcame thecondition with the help of cognitivebehavioural therapy (CBT) and whathe’s doing to overcome the stigmaassociated with mental illness.To have obsessive-compulsive disorder(OCD) is to be locked into a place ofrepetition and frustration, where the worldoutside of your mind becomes a dream toaspire to. It nags at you constantly, fillingyou with anxiety until you finally give into the rituals; even then, peace from theintrusive thoughts is temporary.

I suffered with OCD for years, basedaround fears of horrific pain being inflictedon loved ones. My rituals were a complexconcoction of counting, checking, coughingand the mental repeating of phrases andimages.

Talking about OCD to others is noteasy. People say things like, “Oh I’ve got atouch of the OCD too, I need to use a bit

of tissue to open toilet doors”, then theychange the subject. No one says, “I’ve got atouch of the cancer”.

Then there’s the stigma of mental illness.It’s not like you’ve got a bad leg, the brain isthe essence of who we are; it goes down toour very existence.

My OCD came to a head in France. Ihad to hold my daughter at the same timeas carrying out a ritual. My wife lockedthem in the car. I tried to get in. Thetraffic stopped, people came to help, theambulance took me away; I tried to breakfree, they pinned me down and sedated me,after six days in a mental hospital they sentme home to carry on as normal.

In a matter of days, I was back inhospital. It’s a lonely environment whereall you can do is think; the perfect breedingground for OCD. Soon I was in the intensivecare unit. It was there that I began to turnmy life around.

My wife was crucial, she worked tirelesslyto get me the help I needed - cognitivebehavioural therapy (CBT). The NHS werereluctant to provide it and seemed contentto leave me in the hospital and supplymedication.

When I finally got the CBT, I threw myselfinto it. My brain had failed me, so I gaveup on it and relied completely on thetherapy. Every session involved doingthings that made me feel something badwould happen to my daughter that day; Iwould go to bed each night worrying. The

next day I would phone my wife who wouldconfirm that our daughter was fine. Witheach session, the stupidity of OCD wasreinforced and, bit by bit, its hold on mewore off.

By December 2007, I could return home intime for Christmas. Within four months ofstarting the CBT, I was free of my OCD.

How would you describe Hunter’s Ragein one sentence?An action-packed historical thriller, setduring the turbulent years of the EnglishCivil War.

What inspired you to write Hunter’sRage?Hunter’s Rage itself is the story of the CivilWar in the south-west. When researchingthe location, I realised what an amazing(true) story it was, and knew immediatelythat I wanted people to know about it. Thebook, though, is the third in a series andthe inspiration for the Civil War Chronicleswhich, as a whole, was far more local. Livingin Petersfield, one is often confronted bynames and places from the era. LangrishHouse Hotel, John Goodyer’s house in TheSpain, the bullet riddled church at Alton,or the battlefield at Cheriton to namebut a few. I just felt that the Civil War’sinfluence on this part of the country was tooimportant to ignore.

How long did the novel take to write?The books take about a year to complete. Amonth of research, perhaps eight months ofwriting, and the rest for editing.

How did you become interested inhistory?I’ve always been interested in history. It wasone of my favourite subjects at school andI’ve carried that enthusiasm with me intomy writing.

Would you ever like to write a modernday novel?Not really! Perhaps I will one day, but atthe moment I’m only interested in tellingstories from the past.

How factual are your novels?The main plot lines in my novels are, ofcourse, fictitious. Captain Stryker is afigment of my imagination so anything thathappens to him is too. I don’t, however,deliberately change any of the historicalfacts. So dates, locations, military detail andthe high-level political and religious aspectsof the books are as close to reality as I canpossibly get them.

How do you start writing one of yournovels?As I’m now writing the fourth instalmentof a series, I already have the starting point(i.e. where the last book finished) so inthat regard it’s easier for me than if I werewriting a stand-alone novel. I do, however,have to decide where the characters will goand which ‘real’ events I want to describe.So I begin by looking at the date at whichI want to set the book, then look throughthe real histories to see what was goingon at the time. Once I’ve decided on thecentral theme (for instance, the fourth bookwill be based around the real-life Siege ofGloucester), I can then look to inventingsome fictitious plot lines in order to get mycharacters in the right place at the righttime.

How important is the research foryour novels?Hugely important, as the need for gettingthe major historical details correct isparamount. Obviously, I will always makethe odd mistake but one hopes the majorityof the background themes will be asaccurate as possible.

When do you write your best material?Whenever my five year old son isn’t trying to‘help’. He’s just started school, so the mostproductive time now is between 9am and3pm!

Can readers enjoy Hunter’s Ragewithout reading the entire series?Absolutely. As I’ve said, it’s the thirdin a series following the same group ofcharacters, so the ideal scenario is to readthem all in sequence. But I write each withthe awareness that many readers will notcome to the Civil War Chronicles at Book 1(Traitor’s Blood) and have therefore madesure that each novel ‘stands up’ as a goodread in its own right.

How many books do you see in theseries?I think the series will be at least ten ortwelve books long, but there’s always scopeto extend that if people keep reading!

What advice would you give tosomeone considering writing a novel?Read a lot. The more fiction you read,the more you’ll get to understand how tostructure a novel, how to pace the scenesand write dialogue. Once you are reasonablycomfortable with those aspects, it is amatter of discipline. Sit down and write thestory. Make time each day to get at least acouple of hundred words down and keep atit. Most of all, choose a subject you enjoy!If it doesn’t interest you, your writing willreflect that.

What inspired you to become a carer?I am good with people and liked the thoughtof being out and about all day meeting lots ofdifferent people. Also the thought of helpingothers stay in their own home gave me a lot ofenthusiasm because of people I have known inthe same circumstances.

What is the best thing about being a carer?The sense of satisfaction everyday of makingeven a small difference to our clients is veryrewarding. Also being part of a company thatreally values it clients and being part of a teamwho all feel the same about what we do.

Advice to someone that needs care or family member?I would suggest anyone looking for support to talk though your needs and concernswith the Care Manager. Also talk to others you might already know receiving care.I know we often carry out free assessments which help potential clients and family’stalk through their needs and concerns. Clients and families should check with theirlocal Adult Services Department or the Care Quality Commissions (CQC) website toensure a care agency is registered and recommended.
