Barbecue Story In 1916, barbecue pioneer, Sid Weaver, moved his shoulder pit cooking operation to downtown Lexington on a corner at a main intersection, serving in a tent. In the 1920’s, Jesse Swicegood and Will Johnson set up shop, thereby establishing “barbecue” as a local industry and cuisine. Because they cooked in pits near the old courthouse, our downtown area smelled wonderful! The tradition has been documented in Barbecue,Lexington Style, by local author Johnny Stogner. He writes that a superior court judge would “recess for lunch” when the smoke from the cooking pork rolled his way and the windows were open. As time passed, more people learned the trade and opened barbecue restaurants. Stogner credits Warner Stamey as being one of the top entrepreneurs who shared knowledge with folks who started our own Jimmy’s, Lexington Barbecue, The Barbecue Center, Smokey Joe’s and Speedy Lohr’s. Today there are more than 15 area barbecue restaurants serving chopped and sliced pork shoulders—each serving up to 500 or more people a day! And – folks come from all over – just look at the license tags in the parking lots!
