One of my earliest musical memories of growing up in Boston is catching the trolley to see legendary conductor Arthur Fiedler lead the Boston Pops Orchestra. Fiedler conducted the Pops for almost 50 years—an amazing legacy featured Wednesday, June 23, at 8:00 p.m. as part of America’s Orchestra: Celebrating 125 Years of the Boston Pops, one of many music programs coming to KCTS 9 in June.

From an encore broadcast of Pavarotti: A Life in Seven Arias to a profile of Bloomington, Indiana’s international harp competition, music lovers will have plenty to choose from this month. We’ll also bring you a talent-packed tribute to songwriter Diane Warren, music from the Dave Matthews Band at Colorado’s Red Rocks Amphitheatre, a new concert from the Canadian Tenors, a performance from Carole King and James Taylor, and much more.

Mango chutney gives chicken and veggies a new twist in this bite from the KCTS 9 Cooks: Light & Healthy cookbook, courtesy of Margaret Peters of Bremerton.

Curried Chicken with Mango Chutney serves 6“Veggies are part of the mix, so no side dish is needed!”

For the chutney, combine all ingredients in a saucepan and bring to a boil. Reduce heat, and simmer 15 minutes or until most of liquid evaporates and mixture is thick, stirring occasionally. Start with frozen mangoes (or even peaches) to save time. If the weather is hot, skip the cooking, leave out the water, and keep it cool! Chutney may be prepared a day ahead.

In a bowl, combine coconut milk with sugar, salt, chili paste and fish sauce, stirring with a whisk. Add V teaspoon more of the chili paste if you like things spicy. Heat oil in a large nonstick skillet over medium-high heat. Add garlic and chicken; sauté 5 minutes. Add the broccoli and cauliflower florets and sauté 1 minute.

Add coconut mixture to the chicken and bring to a simmer; cover and cook 7 minutes or until vegetables are almost tender, stirring occasionally. Serve on a bed of rice topped with chutney and garnished with green onions.

Mango chutney gives chicken and veggies a new twist in this bite from the KCTS 9 Cooks: Light & Healthy cookbook, courtesy of Margaret Peters of Bremerton.

Curried Chicken with Mango Chutney serves 6“Veggies are part of the mix, so no side dish is needed!”

For the chutney, combine all ingredients in a saucepan and bring to a boil. Reduce heat, and simmer 15 minutes or until most of liquid evaporates and mixture is thick, stirring occasionally. Start with frozen mangoes (or even peaches) to save time. If the weather is hot, skip the cooking, leave out the water, and keep it cool! Chutney may be prepared a day ahead.

In a bowl, combine coconut milk with sugar, salt, chili paste and fish sauce, stirring with a whisk. Add V teaspoon more of the chili paste if you like things spicy. Heat oil in a large nonstick skillet over medium-high heat. Add garlic and chicken; sauté 5 minutes. Add the broccoli and cauliflower florets and sauté 1 minute.

Add coconut mixture to the chicken and bring to a simmer; cover and cook 7 minutes or until vegetables are almost tender, stirring occasionally. Serve on a bed of rice topped with chutney and garnished with green onions.
