To make your rack of ribs even more flavorful, you’ll

have to get rid of its membrane. It’s a pretty thick

layer of tissue and keeping that on the ribs will prevent your herbs and spices from

getting infused into the meat.

It is best to season a rack of ribs that’s in room

temperature. You can put it in the fridge for only an hour

before grilling if you want the herbs and spices to sink in even more. Wrap it with plastic to seal in the flavor.

Never ditch the rub. Some people only marinade
