The Best Middle Eastern Home Cooking

Olives, Lemons & Za’atar takes you on the colourful

culinary journey that brought Rawia Bishwara from her

native Nazareth to her adopted home town of New York,

where she presides over the critically acclaimed Tanoreen

restaurant. From tangy lemony Tabbouleh and smoky,

rich Baba Ghanouj to beautifully spiced Lamb Shanks, the

– that are rarely experienced outside the Middle East. With

eight chapters from breakfast via main courses to desserts,

including the pickles, yogurt, bread, mezze and salads that

are the hallmark of the region, let Rawia inspire you to bring

Food your body is designed to eat

The PALEO diet is all about returning to a healthier way of

life – cutting out all the heavily processed, high fat, fast food

that is an invention of recent times, and getting back to the

fruits, veg, meat, seafood and nuts that our Paleolithic, hunter-

gatherer ancestors thrived on when our species evolved. The

digestive system we have now was shaped back then so it

makes perfect sense to return to a similar diet – eating organic,

omitting dairy and cooking with healthy fats and the right kind

of carbs.

The 100 recipes in this book cover breakfasts, lunches,

dinners and snacks. They are easy to follow, low in fat and

high in flavour and will inspire and encourage you to cook and

eat well so you not only lose weight but also look and feel

fantastic. The PALEO diet is so popular, it has had two print

runs before publication to meet bookshops’ demands.

Life changing tips for long-term weight loss success

At her heaviest, Lisa Fitzpatrick was a size 20, and weighed

15 stone. She was unhappy, but hid her body and discomfort

behind layers of clothes, carefully styled hair, impeccable

make-up and distracting shoes. However, after the birth of

her first child, she realised that enough was enough – years

of making unhealthy choices had taken their toll, and she was

ready to change.

This book chronicles Lisa’s experiences of weight loss with

refreshing honesty and clarity. She doesn’t promise a quick

fix or an easy solution. Instead, she asks her readers to stop

looking for excuses and start taking responsibility for their own

bodies. With advice on foods to avoid, delicious recipes that

helped with her own weight loss and an emphasis on realistic

lifestyle changes, positive thinking and listening to your body,

Lisa shows that, if she can do it, you, too, can have the body

you want.

88 COPING WITH GLUTS

Take ripe plums, clean and cut into pieces and stew with enough water to cover

them until soft. Cool and sieve to remove stones and skins. Mix with an equal

volume of concentrated apple juice or sugar syrup. Cool slightly then pour into an

ice-cream maker and churn until frozen. Alternatively, if you don’t have a machine

place into a metal tub and part freeze. Whisk the mix every 11/2 hours or so to

aerate and prevent ice crystals forming until you have a soft sorbet. Return to the

freezer until ready to eat. If not used within weeks, the sorbet will slowly turn

hard and white – this is a crystallisation and the icy mixture formed is another

frozen delight.

VarietiesThe earliest fruiters ripen in July, with such varieties as ‘EarlyLaxton’, which is multipurpose, and ‘River’s Early Prolific’, theearliest good cooker; but the more choice varieties, such as‘Cambridge Gage’ and the popular cooker ‘Csar’, come in August;the tasty dual-purpose ‘Marjorie’s Seedling’ and the ubiquitous(because it is good) ‘Victoria’ ripens in September; and then thedivine ‘Coe’s Golden Drop’ and the large dessert ‘Severn Cross’,and late cookers such as the old central ‘European Quetsche’,finish the season in October. For prunes, grow ‘Giant Prune’(‘Burbanks’), which ripens in early September and is a good all-round pollinator. Look for purple-leaved ornamental plums goingfor the asking, as these often set good crops of dark fruits whichmake excellent jam – something few people realise.

HarvestThe first plums to ripen may have plum moth maggots, so beobservant, pick them up and dispose of them; any damaged plumscan be cleaned if needed as there is little taint. Dessert plums canoften be better eating once they’re peeled, from the stalk end; it’sthe skins that have the dire effects. For bottling, a tad under-ripe isbest – and this is certainly the case for jam, where you need less-than-ripe plums to keep the flavour acid enough; otherwise addwhite- or redcurrant juice. For drying, the longer they can be lefton the tree without becoming damaged, the better. Plums do nothang long, but they do ripen unevenly, so pick carefully. Many ofthe gages become translucent when ripe. Shaking down plumsmay be safer from tall trees and where wasps are a problem.

Preserving and usePlums dry well – very well: unfortunately they all turn into prunessooner or later. Initially, though, the different plums dry differently, even retaining some colour, but they continue to darken relent-lessly, sometimes exuding a farina of sugar. Drying is simpleenough: halve and stone the plums and dry them on wire trays, slowly so they don’t darken too much. To speed up the processing, make a stone-gripper: take a typical plum stone, hammer it gentlyinto the end of a hand’s-width length of copper tube; do thisconsecutively with several stones until the mouth of the tube hasbeen moulded such that a stone fits almost halfway in. Then get abamboo cane a tad longer to fit snugly inside the tube. Now halveeach plum round the middle and twist; one half comes free andthe stone remains in the other half. Push the pipe over the stone, twist – and the stone will come out stuck in the tube; then push

the stone out of the tube from the other end using the bamboocane. As with coring batches of apples, it is quicker to cut them all, halve them all, and twist the stones out of all of them as a batch.

Plums can be reduced to a tasty leather, for which they are bestmixed with apple; their flavour overwhelms other fruits.

Plums can be frozen whole, but the stones give a taint ofcyanide’s almondy bitterness so are best removed beforehand;then freeze the plums open on trays and repack them in bags orboxes. They can be reduced to a purée and frozen or made intovery tasty sorbets and ices. For some reason, purple and red plumsare usually preferred to yellow for freezing, bottling and chutneys.

To bottle plums (again, red or purple preferably), pick them justunder-ripe and on the smaller size, pack in wide-mouthed bottles, cover with hot plum juice, surround with warm water and heat forhalf an hour till the water is simmering; then hold it there for tenminutes or so, seal and cool. Plums are hard to squeeze juice outof, and most kitchen juicers waste too much, so they may be betterheated slowly in a covered pan. Start them off with just a littlewater or juice, and once the fruits have broken down, strain off the

the kitchen to show you the best way to preserve and cook

your crop by bottling, drying, jamming, smoking as well as

how best to store it. He uses his intimate and comprehensive

knowledge of each crop to advise you on how best to treat

them – make fruit leathers, which are great for kids; freeze

your own apple juice so you can have it every day of the

year; experiment with making liqueurs and wines; preserve

nuts in chocolate and many many more ingenious ideas.‘Flowerdew is the patron saint of organic vegetable growers.’ Daily Telegraph

Simple clothes, quilts & toys to make for your baby

Sew Tiny! is what every new mum needs. Babies require a

whole heap of things – clothes, cot bumpers, changing bags,

dribble bibs… and that’s just for starters, so rather than

spending a fortune on over-priced, mass-produced stuff

why not harness your inner creativity and make it yourself.

Jazz Domino Holly, who’s been there and done that herself,

shows the way with 30 original, easy, sewing projects.

Her ideas are always inventive yet simple, practical yet

fashionable – forget boring pastels, babies love day-glo and

animal print! Everything is young, fresh, quick and cool, and

you don’t have to be any kind of expert. These are projects

to fit in between naps and feeds, which will give you a few

calm, crafting minutes to yourself and empower you through

your baby’s first months and beyond.

The 17th edition of Charming Small Hotels Britain

& Ireland is the next title in the 2013 series relaunch

of these popular guides, complete with beautifully

designed new covers, an interesting blend of the

contemporary and the traditional, which suits

the series perfectly. The series, which has been

published continuously since 1988, doesn’t just

review sleepy places to stay off-the-beaten-track, but

all types of hotels, including the chic and the stylish.

Above all this is a truly independent guide. It’s

one of only two that don’t take money for a page,

and its focus on small hotels, plus the reputation of

its editor, Fiona Duncan, hotel critic of the Sunday

Telegraph, make the rest of the accommodation

guides look like also-rans.

‘I just had to congratulate you on your wonderful publication. Thank you for the best and most reliable travel book we have ever used.’ Sylvia Tucker, reader

‘One of the coolest formats for a guidebook that [we’ve] seen. Perfect for our mobile

culture that loves things that fit in the palm of your hand – these cards cover some of the

best rides in the UK.’ www.intravelmag.com

This new format for travel guides carries on proving its worth. The first title, Walker’s Britain in a Box, has now sold over 80,000 copies. In 2014, the In a Box series continues to expand, with the publication of Britain on Backroads in a Box.

The latest addition to the ‘In a Box’ series is Britain

on Backroads. This innovative new talking guide

for motor tourists shows how to leave behind the

motorways and main roads to experience another

Britain. Audio CDs and folding cards work together

to create a unique touring guide.

Voice overs by Fiona Duncan, travel writer and

Sunday Telegraph hotel critic.

The design concept for the In a Box guides are Registered Community Designs (No: 001121404-0001, date of certificate: 14th April 2009). Copying or reproduction in any form is illegal.

The only walking guides with ‘bird’s eye view’ (isometric) mapping, which allows you to find your way not just by flat street plan, but by the appearance of the buildings around you.

Exploring cities with the On Foot Guides is like

being taken around by a friend who knows the best

restaurants, shops and attractions – the authors are

local residents who know their cities backwards. Each

book introduces the city district by district, with a

wealth of insider knowledge. The artwork is unique

and the walks are easy to follow, informative and fun.

Most take an hour, and many can be interlinked to

create longer sightseeing expeditions.

‘A delightful book... easy to follow, clear maps, just the right level of narrative.’ Customer review, Paris Walks
