The Kulin Bush Races Committee is pleased to

announce that the 2013 Community Grants is now

open to applicants. Community groups, organisations

and local government authorities are invited to apply

for funding to assist with projects that benefit the

community. Applications for funding must be

submitted using the Kulin Bush Races grant

application form and follow the included funding

guidelines.

Critical dates to note are:

• Funding applications must be submitted by

Monday 15th April 2013 with supporting

documents.

• Funds must be used within 6 months, ie by

30th September 2013.

FREE SKIN CANCER SCREENING

Lions Club of Kulin (Inc.)

As a joint project with

The Lions Cancer Institute Inc

Team will conduct a FREE Skin Cancer Screening for the people of Kulin on Saturday 13th April 2013. If you are 20 years or

older and can answer YES to three of the following you may be

at risk.

· A family member who has had a malignant melanoma

· Five or more moles (not freckles) on your forearms

· Previously had moles removed that were not cancers

· Previously had skin cancer

· A mole or freckle which is changing in size, colour or

shape

· Fair skin that always burns rather than tans

· Had a blistering sunburn as a child enough to stay off

school

· Any inflamed skin sores that do not heal.

The van will be located at the side of the

Kulin Resource Centre.

2 tbs olive oil

15 (about 200g) button mushrooms, thickly sliced

1L (4 cups) salt-reduced chicken stock

1 leek, thinly sliced

1 garlic clove, crushed

175g arborio rice

100g quinoa

2 fresh thyme sprigs, leaves picked

80g (1/2 cup) frozen Woolworths Select Peas

70g (1 cup) finely grated parmesan

50g baby rocket leaves

1 lemon, juiced

Heat half the oil in a large frying pan over medium-high heat. Stir in mushroom for 5 minutes or until brown.

Transfer to a bowl. Meanwhile, place the stock in a medium saucepan over high heat. Bring to the boil. Reduce

heat to low and hold at a gentle simmer. Heat remaining oil in frying pan over medium heat. Stir in leek and garlic

for 3-4 minutes or until soft. Add mushroom, rice, quinoa and thyme. Stir to coat. Add 80ml (1/3 cup) of the stock

to the rice mixture and stir with a wooden spoon until the liquid is absorbed. Add the stock, 80ml (1/3 cup) at a

time, stirring constantly and allowing the liquid to be absorbed before adding more stock. Continue for 20 minutes,

adding the peas halfway through cooking, until the liquid is absorbed and quinoa and rice are tender. Stir in the

parmesan and season. Combine the rocket and lemon juice in a bowl. Divide the risotto among serving bowls and

top with the rocket mixture.

2 teaspoons olive oil

1 large red onion, finely chopped

2 garlic cloves, crushed

500g beef mince

1 small red capsicum, finely chopped

125g can corn kernels, drained, rinsed

2 teaspoons Mexican chilli powder

415g can diced tomatoes

1/2 cup torn fresh coriander leaves

4 salsa-flavoured tortillas

1 1/2 cups grated tasty cheese

1 large tomato, deseeded, finely chopped

Preheat oven to 180°C. Heat oil in a frying pan over medium-high heat. Reserve 2 tablespoons onion. Add garlic

and remaining onion to pan. Cook, stirring, for 3 minutes or until soft. Add mince. Cook, breaking up mince with a

wooden spoon, for 8 minutes or until browned. Add capsicum, corn and chilli powder. Cook, stirring, for 3 minutes

or until capsicum is just tender. Stir in diced tomatoes. Reduce heat to medium. Simmer, stirring, for 5 minutes or

until mixture is thick. Add half the coriander. Season with salt. Stir to combine. Set aside for 10 minutes to cool.

Place a 6cm-deep, 20cm round springform pan on a baking tray. Place 1 tortilla in base of pan. Spread one-third of

the mince mixture over tortilla. Sprinkle with 1/3 cup of cheese. Repeat layers twice with remaining tortillas, mince

mixture and cheese, finishing with 1 tortilla. Sprinkle with remaining cheese. Bake for 15 minutes or until cheese is

golden. Set aside for 5 minutes before removing from pan. Meanwhile, combine chopped tomato, reserved onion

and coriander in a bowl. Serve pie with tomato mixture.
