Cooking is so much more than just the preparation of food. Cooking signifies creativity, joie de vivre and enjoyment. Kuhn Rikon stands precisely for this variety and passion that cooking involves. Our aim is to create products to match the spirit of the age and set new standards in the kitchen. When developing our products, the choice of materials, current trends and the topic of sustainability play a decisive role. This is why we also use wood for our kitchen accessories, for example, as a natural, renewable raw material. In the new, limited edition HOTPAN® we have placed this renewable resource in an exciting contrast with the urban, construction-material concrete. This high-quality mix of materials gives the thermal cookware an even more modern design and shows that a pan can become a stylish home accessory merely by choosing the right material. In order to stand out from the competition, the external shape of a product is gaining greater significance. For a long time design has no longer been a minor matter but now influences the consumer in their decision to purchase or not. But what differentiates good design? And is the premise "Form follows function" still sufficient today? For us the key to a successful design lies in the selection of the materials, which at the same time decides the innovative power of a product. By using new materials and combining different ones, fresh creative freedom arises over and over again – not only in the visual but also in the tactile domain. But also new challenges, unusual approaches for solutions and even more functional possibilities. Our aim is to exhaust the potential inherent in every material to the limits. This is because only this way does exceptional design come into being – and a product with character, which tells its very own story.

Nearly everyone knows the advertising slogan «Who invented it? » It comes as no surprise that the answer is to be found in Switzerland. Heinrich Kuhn, the founder of Kuhn Rikon, and his son Jacques were also passionate inventors as well. Their pioneering spirit produced the DUROMATIC® amongst other items, the first pressure cooker worldwide with a spring valve, «made in Switzerland» from Rikon.

Today our family company is active worldwide and has a steadily growing number of employees. We do not only invest in the new and further development of our products and manufacturing techniques, but also in our production site at the company headquarters in Rikon.

In order to keep up with the increasing demand, to remain competitive globally and to be able to offer a broad product assortment, part of our range is manufactured in the EU and Asia. One thing however always remains unchanged independently of the origin of our products: the Kuhn Rikon quality requirement. We work together with reliable partners, who meet the strict standards of our Swiss product managers, designers and engineers.

It goes without saying that we rigorously check every product – irrespective of where it is made – in our laboratory in Rikon or with external partners (e.g. TÜV, SQTS).

It is also important to us that the origin of our products is immediately identifiable for everyone. From the presentation on our website, via the communication on the packaging through to the marketing of our products we follow a strict guideline. Our «Kuhn Rikon Switzerland» logo is to be found on all the products manufactured in Switzerland. All other articles bear our «Swiss Design» label. This clear logo usage and practice is consistently followed through not only on our packaging but also in our channels of communication. You can see the precise key to how this is done below the map on the left.

INGREDIENTS

· 1 lb whole trout gutted, scaled

· 1 organic lemon

· 1 sprig rosemary

· 1 sprig thyme

· 3 potatoes remaining firm when cooked

· 1 fennel

· ½ red pepper

· ½ zucchini

· ½ bunch parsley

· Freshly ground sea salt and black pepper for seasoning

PREPARE Rinse off trout, season inside and out. Thoroughly wash lemon, halve, cut one half into slices. Keep the other half to one side for a garnish. Fill the belly of the trout with the lemon slices and herbs. Peel potatoes and cut into slices. Cut the fennel into fine strips. Core the red pepper, remove white bits and cut into rough pieces. Cut zucchini into rough sticks. Chop parsley.

COOKINGPlace the trivet into the DUROMATIC®, add ½ cup water. Place the potatoes into the first steamer insert and season. Place the stuffed trout into the second steamer insert in a way

that ensures the filling in the belly will remain in place. Add the vegetables and season. Close lid. Heat briefly to the 2nd valve level, then cook on the 1st valve level for 10 – 12 minutes. Then release steam slowly.

BEFORE SERVINGSeason with freshly ground sea salt and black pepper. Remove the trout from the steamer insert and fillet. Serve with vegetables, potatoes and lemon, and sprinkle with parsley.

INGREDIENTS (FOR 4 PERSONS)

· 7 oz biologically-grown mountain hay*

· wild herbs and flowers to taste

· 28 oz roast beef, rump steak in one piece

· salt and pepper from the mill

PREPARATIONMake a mix from the hay, wild herbs and flowers. Heat the HOTPAN® without fat. Brown the roast beef on all sides at a moderate heat. Season with salt and pepper. Wrap the meat in the hay. De-rind the cheese and grate coarsely

Heat while stirring continuously

Cheese fondue basic recipeINGREDIENTS (FOR 6 PEOPLE)

· 32– 42 oz mixed cheese or:

· 14 oz mild Gruyère

· 14 oz strong Gruyère

· 10 oz Appenzell

· 4 oz Emmental

· 1 loaf of bread

· 6 level tsps corn flour

· 2 ½ cups dry white wine

· 3 tsps lemon juice

· 6 cloves of garlic, medium, coarsely chopped

PREPARATIONCut the bread into bite-sized cubes. Grate the Gruyère, Appenzell and Emmental cheese with the coarse side of the grater. Place the cheese in the fondue pot. Sprinkle the corn flour over it and add the white wine, lemon juice and garlic cloves. Put on stovetop and heat mixture until the wine starts to boil, and then turn down to medium heat. Stir continually with a spatula. When stirring, make sure that the spatula always remains in contact with the bottom of the fondue pot so that the cheese does not stick and burn. As soon as a creamy mass forms, increase the heat so that the fondue bubbles up. Allow to simmer for 1 – 2 minutes and season to taste with pepper, nutmeg and paprika.

Light the burner in the rechaud and place the fondue pot with the simmering fondue mixture on top of it and immediately continue to stir with the bread cubes skewered on the fondue forks.

During the meal make sure that the cheese is thoroughly stirred on a continuous basis. Now all you have to do is select your favorite accompaniment and the cozy get-together around the fondue will become a fine dining experience.

The blade is heated in an annealing oven at over 1830°F. This means the steel not only becomes harder but also flexible and corrosion-resistant. After that the blade is polished and ground on both sides. Every single knife receives its final polish from a specialised blade sharpener, an extremely skillful craftsman, who has acquired the art of grinding blades over many years. As well as a lot of practice and precision, in manual grinding processes the grinding angle is crucial above all in determining the quality

of the knife. With its acute blade angle of 14° on each side (double bevel), the COLORI®+ knives are and remain ultrasharp for a long time, they are also thereby excellently suited to all preparation tasks in the kitchen. Due to the double bevel and the nonstick coating of silicone, the knives glide e�ortlessly and precisely through the foods. The secure-grip handle and blade guard ensure even more safety. In addition, every knife is subject to a strict quality-control.
