This includes basic knife and cutting skills, health and safety, using industrial kitchen equipment such as the blender, food processor, grill etc. During their practical lessons, each dish will have a main focus. Autumn/Winter They will learn to make a basic roux, where the students are able to produce a white sauce for a lasagne. They will look at making main courses such as shepherd’s pie and curry. This will allow the students to select the amount of ingredients needed and follow recipes. Knife skills will be tested by making accompaniments such as coleslaw and ratatouille. Throughout the course of this term they will be assessed on several dishes.

The recipes will be adaptable for the students, where they are able to work more independently and produce products with their influences. They will continue to investigate different raising agents and produce different types of bread (Ciabatta/Brioche) using different techniques. A variety of pastries, focussing on choux and flaky where they are able to produce choux swans/profiteroles/éclairs and apple turnovers. Throughout the course of this term they will be assessed on several dishes. Spring/Summer They will also research a variety of cooking methods used in the industry when preparing and cooking food and use these to make soufflés (Bain Marie), and dishes such as Tagine and casseroles (one‐pot/slow cooked). The students are able to work with a variety of ingredients and meats, focussing on the different cuts available, the cost, and portion control. They will produce a range of meat dishes as well as looking at vegetarian options and how to cater for customers with particular dietary needs. Trips include the Good Food Show and the Exeter Food Festival. An opportunity to enter competitions, where students could have the opportunity of working one to one with a Chef, in a hospitality business. Local Chefs/Butchers/Fish Mongers visit the school to aid the students with their skills (fish preparation‐ deboning, filleting, descaling /different cuts of meat and preparation for year 11.

Course emphasis is on sustained, high quality research and artistic practice. Throughout year 9 students learn the core skills for the course that will enable them to progress through. Still Life, Observational Study. Students produce a range of observational drawings in their sketchbooks, to include a range of mediums. Students will investigate related contextual sources to inform their individual practice. One final outcome to be produced during project, demonstrating a broad range of skills, contextual influences and addressing each of the formal elements. Educational Visit. Students will have the opportunity to put their skills into practice by drawing from observation on location. Students will collect a range of information in order to produce a final outcome with location as a theme. All students will practice painting techniques and learn about composition. The year consists of two final outcomes, one tonal and one colour. Relevant artists will be introduced at the relevant stages that are appropriate to the theme.

Printmaking Project. Students will use their acquired research skills to prepare for this unit. Their practice will be informed by varied contextual research and study. In this component, Learners will respond to a client brief and create a product in one of the following media sectors: audio/moving image, publishing or interactive. Learners will interpret the client’s needs and engage in the process of ideas generation, selecting and refining their ideas until they are satisfied that they have an idea that meets the requirements of the brief. Learners will undertake pre‐production planning to demonstrate to the client how their ideas will be implemented within a planned media product. Throughout the pre‐production process, learners will need to monitor and review the effectiveness of their planning and intended outcome to ensure that their planned media product is fit for audience and purpose. This should enable them to make the necessary amendments and improvements to your proposed product as they enter the production stage of the process and create a suitable digital media product in response to the brief.

In this topic students will learn how to rehearse and create a performance based on their interpretation of a scripted duologue. They will develop their character, performance and interpretive skills. ‘Devising’. Students will develop a range of devising techniques to explore character and theme. The aim is to identify ways to develop theatre through the medium of devised Drama. Spring Term: ‘Practitioner Exploration’. Students will develop the skills associated with a key theatrical practitioner and apply those skills in the context of an existing script linked to that practitioner. Summer Term: ‘Improvisation’. During this topic students will work individually, in groups then as a whole group to devise a performance rooted in the skills developed of improvisational theatre. Student will develop their improvisational skills based on the rules of improve then apply this approach to a method used by Mike Leigh in his film work. This will involve a performance in July.
