TECHNICAL DETAILS

Referring to below diagram:

Knife blocks stored in racks (1) are transported to thestation by an electrical forklift (2). Racks are hoisted(3) into the cleaning tank (4). After draining the knifeblocks are dismantled individually on the knife unbol-ting/bolting machine (5) and worn knives are removed.Worn knives are moved to the straightening and grin-ding machine (6) where their geometry is restored.

Finally the knives are re-sharpened on the routing and/or fine sharpening machine (7): routing and fine shar-pening can be done in sequence on one machine orseparately on two machines for extra flexibility and opti-mization of machine working time. After re-assembling(5) knife blocks are inserted into the racks and trans-ferred back to the slicing area with the forklift.
