Color Analysis
Images were obtained by computer scanning of whole and chopped samples of potato, grown by the conventional method (pictures 1, 3, 5) and biological (pictures 2, 4, 6), after different periods of exposure to air
Air exposures: samples 1-2: 2 hourssamples 3-4: 2 hourssamples 5-6: 6 hours
The samples of potato grown conventionally presented a browning that was achieved by the biological ones only about two hours later
This difference was even more pronounced in the passing of the time, and it was probably due to the gradual inactivation of the ascorbic acid, present in lower percentage in the control samples

Conclusions of the Italian Research Center
The organic horticultural products, to impose themselves on today’s market, need to introduce an innovative and truthful image of products with superior organoleptic (taste, color, smell, uniform size), physical (lower water content, essential requirement for preservation; higher dry residue), and nutritional (greater presence of minerals, vitamins, sugars, greater bioavailability of trace elements, and simultaneous absence of toxic molecules for non-use of pesticides) qualities than conventional agriculture.
The basic concept of this type of cultivation is that a good production is affected, more then from the plant, from the soil where the crop develops.
The land, therefore, is the principal component of the crop and its gradual impoverishment or imbalance inevitably leads to compromising the quality of the product.
The fertilization method described in this work provides a particular treatment to the soil before the plants, with natural products absolutely free of compounds of chemical synthesis.
The purpose is to rebalance the microbial activity in the soil and potentiate its development, often inhibited by the presence of chemical fertilizers, heavy metals, pesticides and herbicides in high concentration.
Although the data set cannot allow expressing definitive judgments, they provide promising indications towards a greater use of these products as an alternative to conventional fertilization.
