project program.

this building will become a restaurant. the area in front of the building will be dedicated to outdoor

seating. the lower level will have dining, restrooms, and a kitchen in the back. the upper level will

have dining areas and restrooms.

historical precedent.

inspiration.

because turkey is located by the water’s edge the cuisine for this restaurant

will be sea food. turkish people eat a lot of sea food. fish is easily available

because it is local and can be provided extremely fresh, fast.

a mosaic tile is used abundantly in traditional turkish design. the materials

used in this conceptual design provide a large amount of subdued textures

and patterns, inspired by the location of the country and its traditional

heritage.

turkish restaurant.

tom cruse, an aspiring restaurant owner, is opening a sea food

restaurant in turkey. he would like a modern, up-scale space.

the building is located in an old factory development outside

the city of istanbul. the space has many structural walls and is

connected to another building. the building is two stories high

with a staircase. cruse would like to create a tourist attraction

and a destination restaurant.

changes to space.

the space is small so the architectural

detailing with be on the ceiling. the

staircase will be renovated. a kitchen will

be added inside the connected building.

a dumbwaiter will be added to the

kitchen to allow food to enter the dining

space with more ease. outside dining will

also be added for more seating. the

outside seating will be covered by a rib-

like structure to provide a central

entrance and shelter from the weather. It

will also provide the modern interior's

atmosphere to the exterior.

wait staff attire.

the wait staff will wear a classic

black or gray suit. They can

wear it any way they like as

long as it looks professional.

concept.

“the fish” by

elizabeth bishop i caught a tremendous fish

and held him beside the boat

half out of water, with my hook

fast in a corner of his mouth.

he didn't fight.

he hadn't fought at all.

he hung a grunting weight,

battered and venerable

and homely. here and there

his brown skin hung in strips

like ancient wallpaper,

and its pattern of darker brown

was like wallpaper:

shapes like full-blown roses

stained and lost through age.

he was speckled and barnacles,

fine rosettes of lime,

and infested

with tiny white sea-lice,

and underneath two or three

rags of green weed hung down.

while his gills were breathing in

the terrible oxygen

--the frightening gills,

fresh and crisp with blood,

that can cut so badly--

i thought of the coarse white flesh

packed in like feathers,

the big bones and the little bones,

the dramatic reds and blacks

of his shiny entrails,

and the pink swim-bladder

like a big peony.

the little rented boat,

from the pool of bilge

where oil had spread a

rainbow

around the rusted

engine

to the bailer rusted

orange,

the sun-cracked

thwarts,

the oarlocks on their

strings,

the gunnels--until

everything

was rainbow, rainbow,

rainbow!

and i let the fish go.

the logo will reflect the concept of the space.

the restaurant is a space for people who want to

experience a night of luxurious dining. a parti

sketch completes the logo.

see: i see a building with a large arch over a patio with outside seating. the building is square and two stories tall. the façade reminds me some how of water and a blue light reflects onto it. i walk in through the double doors. i see a modern space with a

trap of seaweed circling the hostess’ desk. the space is small. i walk over to the hostess’ desk; it is a round white island. i am taken out of the waiting area and into a larger space with many tables, booths, and the seaweed is hanging on the walls. the floor is black

and the there is a unique architectural structure hanging over the ceiling. it reminds me of a wave.

touch: i walk in and feel the hard surface beneath my feet. i touch the cold desk of the hostess’ space. i sit at my table and am comfortable and at peace. my seat is cushioned and soft. i am not too cold or too hot. i feel smooth clean surfaces.

hear: i hear laughter and soft music. i hear talking and forks hitting plates. i listen to glasses toasting and shoes clacking. i hear the

food grilling and i hear the food in my mouth crunching.

smell: i smell the aroma of the sea and cooked fish. i smell rich distinct dishes. i smell perfume of the pretty women. i smell spices and chocolate; i smell warmth.

taste: my food is from the sea, cold or hot. my dish is elegant and original. its fishy and distinct flavor makes my mouth water. i

taste my red wine and my rich dessert.

human behaviors.

-the way people conceive space factor in a large amount of little details when it comes to space

planning. the restroom doors are located off a hallway, not located in the center of dining,

because people subconsciously do not want to see the restrooms. also, partitions and walls

protect the line of sight from seeing the toilets from the main eating areas and walkways.

-the back of house is also hidden from the line of sight. the service area creates a barier between

the dining rooms and the kitchen.

-two top tables are provided in the restaurant because when people are in a small group they

want to feel comfortable in the space, not like they were just places in a random four top.

the circulation in the space is not necessarily cohesive. rhe design allows people to enter into

and feel a new sense of space while they sit and experience each room.

cultural justification.

environmentally sensitive features. the momentum fabric applied to the booths has reduced environmental impact. it uses recycled

fiber content. It uses 100% tarratex post consumer recycled polyester, and has a greenguard

children and school indoor air quality certification

The knoll textiles fabric applied to the booths uses 100% post-industrial recycled content. It is also

greenguard certified and may contribute to LEED certification.

the bamboo used on the ceiling and the booths is readily available and a rapidly renewable

recourse. armstrong also offers standard and custom FSC-certified (92% mixed) composite wood

ceilings and walls with a variety of veneers to meet the growing demands of sustainable design

projects (Certificate Registration SW-COC-003601).

acoustical features.

the woolen cloud tiles on the ceiling create a felted look. this material soaks up sound that

bounces up at the ceiling. the fabrics used on the booths also soften and buffer sound waves.

turkey usually has wonderful weather and the people enjoy being outside, rather than inside.

because of this, cultural habit there is a large dining area outside. when turkish people go out to

eat they usually eat in large groups or parties. because of this, there are private dining areas. the

furniture is not fixed, to allow the ganging of tables. in turkey there are not usually long waiting

lines to sit and eat because people do not want to wait. because of this, the waiting area

outside of the front doors do not have a large amount of seating.

the sun’s light is the only form of

light underwater that isn’t given

off by sea life. the light on the

ceiling represents the light coming

through the water. the pendants

over the tables act as little bubbles.
