<ul><li>1.Kick-Butt Chili<br /></li></ul> <p>2. Ingredients<br />2 pounds chuck roast , minced<br />3 Tbsp. canola oil<br />3 onions , chopped finely<br />4 cloves garlic , minced<br />5 Tbsp. chili powder<br />1 jalapeno , seeded and finely chopped<br />2 tsp. ground coriander<br />2 Tbsp. ground cumin<br />2 cups beef stock <br />1 cup dark beer<br />1 can (28 ounces) chopped tomatoes<br />cup roasted or canned corn<br />1 can (15 ounces) black beans , rinsed and drained<br />1 can (15 ounces) pinto beans , rinsed and drained<br />1 Tbsp. masa (corn flour)<br />2 tsp. kosher salt<br />1 tsp. pepper<br />3. Brown the meat in 1 tbsp. canola oil<br />4. set aside<br />5. In large pan, add 1 tbsp. canola oil, heat until hot.<br />6. Add onion<br />7. saut about 5-8 minutes<br />8. add garlic and saut for 1 minute.<br />9. Add chili powder, jalapeo, coriander, cumin <br />10. and mix well. Cook 1 minute.<br />11. Add beef stock, beer, tomatoes, corn, beans and the beef.<br />12. Cover and simmer on low heat for 1 hour<br />13. stir every 15 minutes.<br />14. 1 hour laterAdd masa and simmer 10 minutes<br />15.
