Kawartha Lakes Local Food Forum June 1, 2015
There is increasing demand for local food within public sectors serviced
by large foodservice companies
• In many regions across Ontario, sourcing of products has been maximized through traditional distributions channels
• Local sourcing typically comes from large farm operations with limited selection
Food Hub Pilot ProjectThere is a significant need for an amalgamator
This must be managed through a stakeholder who can connect and manage the relationships with small to medium-sized farmers and producers. Large foodservice providers are not resourced to
do this.
Food Hub Pilot ProjectBased in Toronto, 100KM Foods are able to pick up product directly from smaller farms and amalgamate it into their
inventory
Where they face challenges is when they move into the distribution system
Food Hub Pilot Project
With some facilitation provided by the Greenbelt, 100KM Foods was able to partner with Sysco Toronto
Food Hub Pilot Project
This pilot was focused on:
Better Distribution-Sysco’s huge fleet of delivery vehicles allows Aramark to access “just in time delivery” and work within established ordering systems
Local Food Tracking-“Local is local” – no substitutions-facilitates the ordering of and access to more local products
