Colombian coffee is regarded as some of the highest quality coffee in the world and is known for its

balance and traces of tropical fruit and floral tones. Our coffee is sourced from a single family farm and is

always 100% Colombian, never mixed.

Panela is not known around the world, yet. it is our favorite sweetener and is showcased in all of our cubes. it has a rich, full bodied taste that is similar to molasses, except that it is a bit milder. Panela undergoes a gentle heating

process, maintaining all of the nutrients present in sugarcane and is never treated with

any chemicals or artificial ingredients.

Our flavored coffee cubes are produced using usDa Organic extracts that are Gluten free,

Kosher and Non-GMO.

When most people think of chocolate they are referring to “bulk beans” which come from the

Forastero variety of cacao and make up 90% of the World’s chocolate market. Forastero beans have a

less complex flavor, but is robust in the tones that are present. “Flavor beans” are derived from Criollo and Trinitario (a mix of Criollo and Forastero) varieties. These beans carry a wide range of complex flavors, but milder tones so they are used in fine chocolate bars that can be found in boutique confectioneries

or gourmet shops. We use Criollo beans for our hot chocolate cubes.

Other cane sugar goes through much more of a refining process which continues by taking what

we know as panela and continues to boil it until it reaches crystal form. This crystallization process

separates the sucrose from the remaining liquid and all the nutrients, refining the cane juice until it is

completely separated into refined white sugar, and black molasses. During this crystallization process a slew of chemicals are used to clean and refine sugar.

Traditional manufactured sugar includes chemicals like sulfur dioxide, phosphoric acid, bleaching agents and viscosity reducers. Panela’s production process uses

none of these.

Our coffee is sourced from the Ocamonte region of santander, Colombia, which is known high quality coffee beans. The higher altitude in Ocamonte (4,500+ feet above sea level) contributes to the smooth, balanced acidity and bold flavor because at higher elevations better runoff reduces the amount of water in the fruit. The reduction of water results in a further concentration of flavors. Mineral rich volcanic soil from the andes Mountains, higher elevation and the associated cooler weather cause the beans to take longer to ripen. The longer ripening period allows floral and fruity tones to fully develop.

We wanted the smoothest and most consistent cup of coffee so we sought out farmers that use the “bosque” method, a rustic or traditional poly-culture, which utilizes an ecosystem of shade trees to block the coffee from the sun direct exposure and fruit trees for flavor, providing diversification for the farmer and a rich habitat for wildlife (like the little frog that visited us while picking coffee.)it turns out that the further along we get through our little Jiva journey the more we have realized that the coffee we love so much is a very delicate, detailed and tedious process.Cultivation of coffee, truly is a labor of love.

Our sugar: Panela 04//

Panela is recognized by a rich, full bodied taste, somewhat similar to molasses, but a bit milder. The sugar crystals in panela melt on your

tongue, a lot like maple sugar candy. You can melt panela with a bit of water to make a syrup, or grate it and use it like brown sugar. it has

always been a delicious sweetener for coffee and tea. Cafe Campesino (literally translates to Peasant’s/Farmer’s Coffee) begins as an aguapanela

(“Panela water”- water with chunks of panela dissolved in) that is later mixed with roasted, ground coffee that is sifted and served. it is very

similar to the panela and coffee mixture of our cubes and is one of the inspiration behind them.

Panela’s structure as a more complex form of carbohydrate than plain sugar. The simpler the carbohydrate, the more quickly the energy

released. Panela is digested and absorbed slows and releases energy gradually. This means that the body receives energy for a longer period

without the “sugar rush” and blood sugar spikes that are the associated of refined sugars.

Panela is gently heated, processed without the use of any chemicals and contains no additives .
