a variation for something a little more special.

¼ teaspoon baking powder

4 eggs

50g butter, melted

1 cup (320g) strawberry jam (jelly)

1 cup (250m1) single (pouring) cream, whipped

icing (confectioner’s) sugar, to serve

Step 1

Step 2

Place the eggs and sugar in the bowl of an electric mixer and beat for 8-10 minutes or

until the mixture is thick, pale and tripled in volume.

Recipe notes

Beat - To add more air to your sponge, make sure to beat the

eggs and sugar until the mixture has tripled in volume.

Fold - Using a large metal spoon to fold the butter through

Feel - Never use a skewer to check your sponge is

cooked, as it will release the precious air. If the

sponge is springy to touch and comes away

from the sides of the tin, it’s ready.
