    As its name implies, the Oro Nero is truly black gold. It is

    an incredibly versatile, well rounded balsamic. It has the

    perfect harmony of acidity and sweetness, while offering

    more bite than the Vigna Oro.

    Vigna Bordo PGI

    Vigna Bordos bright acidity and great price point make it

    a perfect option for everyday use. Wonderful in salad

    dressings, marinades for grilled vegetables and great for

    pan reductions.

    Vigna Bianca PGI

    The Vigna Bianca is a good balsamic with medium dense

    consistency and a beautiful harmony between sweetness

    and acidity. It is versatile enough for all uses and kitchens.

    Trentasette Balsamic Vinegar Condiment

    This product has a particular harmony attributed to its

    high percentage of cooked grape must. The reduced

    grape must gives it a thick body and a lower acidity than a

    regular balsamic vinegar. It is a pure product with no ad-

    ditives. It maintains the density of a traditional balsamic

    vinegar and it is rich with the aroma of fragrant grapes.

    White Truffle Olive Oil

    Black Truffle Olive Oil

    TRUFFLE AND PORCINI OILS

    The Truth About Truffle Oil

    Did you know that there is no actual truffle in truffle oil? If pieces of

    truffle appear inside the bottle, know that it does not add anything

    aside from visual pleasure and the ability to list truffle as an ingre-

    dient on the label. There is no way to squeeze a truffle to make

    truffle oil, as you would press olives to make olive oil. Truffle oil is

    made in one of two ways: as a nature identical oil, or as a byprod-

    uct of petroleum. Petroleum-based products can bear an overpow-

    ering, unnatural aroma, and will even burn your throat upon tast-

    ing. A nature identical oil is made by obtaining flavor molecules

    from fruits/vegetables that exist naturally in nature, such as carrots,

    apple or potato, that combined make up the flavor aroma of a truf-

    fle. One way to find out the type of oil you have is The Heat Test.

    Truffle oil that is not nature identical will break down under heat.

    So, dab a little bit of truffle oil on your hand. Smell it, and take

    strong note of the aroma. Now, rub your finger on the patch of oil

    to heat it up for about 10 seconds. Smell the oil again. A nature

    identical oil will have the same aroma after creating heat. An un-

    natural, petroleum-based oil will not and the oil will have noticea-

    bly lost its aroma.

    White Truffles

    Tuber Magnatum Pico Vitt. (White Alba)

    Availability: Oct. Dec.

    The most prized among the edible truffles. The fruity body is usually

    a lobed, spherical or oval shape. These truffles vary in size. The skin

    is smooth and has an ochre or olive-yellow color, that sometimes

    could exhibit a rusty brown, cracked area or bright red spots.

    Spring White Truffles

    Tuber Borchi Vitt. (Bianchetto)

    Availability: Jan.-April

    The various Italian names attributed to this truffle are due to its col-

    or, the period in which it ripens and the habitat in which it is found.

    The skin is smooth, variable in color, ranging from ochre-yellow to

    rust-brown or orange brown, and is often spotted.

    Black Winter Truffles

    Tuber Melanosporum Vitt. (Perigord/Dolce di Norcia)

    Availability: Nov. March

    The fruity body can vary in size from that of a hazelnut to an orange.

    The skin is black, sometimes with dark red or rust colored patches.

    Summer/Fall Black Truffles

    Tuber Aestivum

    Availability: JuneSept.

    The most plentifully harvested truffle. The fruity body ranges from

    the size of a hazelnut to that of an orange. The skin is black and has

    a pleasant and delicate odor that resembles a hazelnuts.

    Tuber Aestivum Uncinatum. (Burgundy)

    Availability: Sept.Dec.

    Similar to Tuber Aestivum with a more pleasing and intense odor.

    The name of this truffle is derived from its hook shaped spores. The

    fruity body is large and ranges in size. The skin is black and its odor

    resembles that of a hazelnut .

    FRESH ITALIAN TRUFFLES

    What Are Truffles?

    Truffles are the fruit body of a subterranean mushroom. They

    grow only in symbiosis relation with the root of certain trees.

    The tree provides sugars to the truffle, which it cannot make

    itself because it does not carry chlorophyll, while the truffle

    transfers dissociated mineral salts to the tree because the tree

    is unable to assimilate them itself. Truffle availability depends

    on season and conditions. See the descriptions to the right

    for information on the different truffles and their availability.

    The flavor of White Truffles is

    intense, yet elegant with lin-

    gering garlic undertones. It is

    best savored raw and served

    simply; shave over fresh pas-

    tas, pan-seared fish, all kinds

    of risotto, omelets and even

    chocolaty desserts.

    Different from the White truffle,

    the nutty, earthy flavor of the

    Black Winter Truffle is most

    appreciated when the truffle is

    slightly heated. Very versatile,

    black winter truffles are delicious

    shaved into sauces for pasta or

    pizza, into omelets and egg

    dishes, and stirred into risottos.

    Perfect for any potato dish.

    The Black Summer Truffle has

    a pleasant and subtle aroma,

    and it is very versatile in the

    kitchen. It should be shaved

    thinly over fresh pastas and bru-

    schetta, used to garnish meats

    and fish, and stirred into cream

    sauces.

    In Romagna and Marche, where

    an ancient tradition is still alive,

    the Bianchetto truffle is used

    raw and appears on the menus

    of the best restaurants. However,

    its optimal use is in spreads, but-

    ter or in the mixture of tortellini

    or ravioli filled pasta.

    Planeta D.O.P. Val di Mazara

    The Planeta Extra Virgin Olive Oil D.O.P Val di Mazara distin-

    guishes itself from all other olive oils. The thousand year old

    trees from which the olives grow add to the beautiful and

    rustic nature of this olive oil. Through a mix of tradition and

    modern technology, Planeta carefully crafts its prized oil to

    perfection with such care that only 14 liters are produced

    from 100 kg of olives compared to normally up to 22 liters for

    other oils. Varieties used are 50% Nocellara di Belice,

    30% Biancolilla and 20% Cerasuola olives, all from the groves

    of the Planeta estate.

    Also available in Monocultivar from

    pitted Biancolilla or from pitted Nocellara del Belice. Each

    of the monocultivar with particular and amazing qualities and

    tasting notes.

    Serving Suggestions: Our Planeta Olive Oil is wonderful

    paired with hearty vegetables, meats, meatier and rich fish,

    carpaccio, salads, pastas and wherever you desire a round,

    distinctive olive oil finish to your dish.

    Tasting notes for the Planeta D.O.P. Extra Virgin Olive Oil

    A deep, bright green color with hints of pistachio. An elegant

    and harmonious bouquet on the nose with fresh mint and

    basil combined with an aromatic touch of sage, thyme, ore-

    gano and juniper, mixed with all the typical aromas of the

    area: citrus flowers, artichoke, green tomato and seaweed.

    The initial sensation on the palate is full and in the mouth it is

    generous, fresh and pleasantly bitter at the beginning with a

    long and persistently spicy finish. All together an amazing oil,

    which consensus is shown through the multiple, yearly

    awards it has won.

    D.O.P. EXTRA VIRGIN OLIVE OIL

    The Planeta grove extends for 98 hectares in the Caparrina

    district in Menfi (AG). Planetas decision to dedicate this land

    to olives was not random. It was in order to safeguard the

    landscape and its nature, to make the most of the land and

    to create employment. The harvest takes place in early Octo-

    ber. The olives are picked manually and processed within a

    few hours at the press situated in the center of the olive

    grove to ensure the best tasting results. Planetas continuous

    research into quality has allowed them to win some of the

    principal prizes in the sector, in a short time becoming one

    of the benchmarks of quality for extra virgin olive oil.

    Olive oil can enhance any dish, from beginning to end. You

    can chose to saut or marinade with it, brown, fry, or stir-fry

    with it, or you can add it as a finishing touch to any meal. To

    maximize the result of most fresh dishes, the key to elevat-

    ing the flavor is using a very distinct finishing oil with char-

    acteristics that will enhance and compliment the dish you

    are preparing. Olive Oils stay best if stored away from light

    This special selection of Extra Virgin Olive oil, with

    RICE AND FARRO GRAINS

    Arborio Rice

    Arborio is a long grain rice with a pronounced indentation and

    pearly appearance that leaves behind a large amount of starch

    during cooking. A classic element in Italian cuisine, you will find

    this versatile rice useful for all of your cooking needs.

    Carnaroli Rice

    Carnaroli rice has elongated grains and a small central pearl in

    the middle. It has a high starch release and high-absorption ca-

    pacity, making it naturally very creamy and flavorful. Perfect for

    Vialone Nano Rice

    Vialone Nano was developed from a hybridization between Vi-

    alone and Nano and was named for the reduced height of the

    plant (nano means dwarf in Italian). Vialone Nano rice has round,

    nounced indentation. Due to its high absorption capacity, it is a

    SPECIALTY WHEAT GERM PASTA Wheat germ is the heart of the wheat grain, rich in flavor and

    ITALIAN MEAT SAUCES

    1934: their grandfathers, Amerigo and Agnese, opened the

    doors of the Trattoria. They are in the Samoggia Valley, on the

    Bolognese Appennines between Bologna and Modena, a terri-

    tory source of curiosity and inspiration. While Amerigo was out

    and about selecting the raw materials for a simple yet tasty

    cuisine for more than fifty years, Agnese was cooking in the

    kitchen. She was first helped by her daughters, Marisa and

    Giuliana, then by his grandson Alberto who has since evolved

    the Trattorias philosophy and traditions and who now contin-

    ues to run it. The Trattoria, awarded by customers and gastro-

    nomic guides, has always been a reference point and a source

    of inspiration for the Dispensa. Now, as was the case all those

    years ago, farmers, wine-growers, woodsmen, animal farmers,

    mushroom pickers and truffle hunters are the people with

    whom they work. Friends who have grown with us over the

    years are their expert tasters.

    Ragu` Bolognese Meat Sauce

    This sauce is made according to the traditional recipe.

    This traditional sauce is the most famous in the world and is for

    sure the one preferred by all Bolognese families.

    Its richness is the result of a long cooking which gives to this

    sauce a distinctive and unique taste.

    Tomato Sauce with Onion & Prosciutto

    This is a sauce made with tomatoes from our region and a selec-

    tion of Emilia ham. To all this, we have added the famous golden

    onion from Medicina, which is a source of pride for Bologna area.

    The lightly spicy flavour of the onion balances the taste of the

    meat. The sweet and balanced Cervia sea salt completes the

    preparation and symbolizes the traditional Emilian cuisine.

    Tomato Sauce with Onion & Suasage

    This is a sauce prepared with the local tomato puree passata

    and characterized by a balance between acidity and sweetness.

    The presence of the golden onion from Medicina (a small village

    near Bologna) gives to the sauce flavour and personality. The reci-

    pe is completed by the Romagna extravirgin olive oil and Cervia

    sea salt: two local ingredients for a product tightly

    linked to our region.

    Tomato Sauce with Onion & Pancetta

    This is a sauce made with ingredients from our region. We have

    added to the tomato from Emilia, some pancetta (bacon) from

    Modena and the golden onion from Medicina village: a local vari-

    ety coming from Bologna area. The result obtained is a balanced,

    THE BEGINNING OF ALTHEA

    Althea was set up in 1932 by a well-known Parma family: the

    Bertozzi's. The company's recollections are that during a site-visit

    for the purchase of a existing canning factory for the new compa-

    ny, Carlo Bertozzi picked a wild flower, which an expert in botany

    would have recognised as the "Althea officinalis".

    A flower as a guarantee of authenticity and excellence: the two

    cornerstones of the new company's philosophy. Althea was set

    up when the Bertozzi brothers sensed "that the mentality of the

    consumer, though still tied to the traditional cooking methods,

    was nonetheless actually attracted towards new ones". The win-

    ning idea in Althea's success was their aim that the company

    should represent "Italian Cooking" and therefore not only be a

    producer of tomato paste, where the market was already saturat-

    Mix Italia Olives

    Fine selection of Italian green and black Leccino olives marinated

    with flavorful red and yellow pepper. Rosemary and garlic mixed,

    this is a ready to serve products ideal as a condiment

    Grilled Olives

    Selected and pitted large green olives, previously desalted, then

    slowly oven-roasted and grilled according to the Italian cuisine.

    Once grilled, the olives are marinated with peppers cubes and a

    touch of parsley which gives a perfect blend of

    harmonized flavors to the whole recipe.

    Grilled Artichoke Halves

    These fresh raw artichokes are called violetto from the sunny countryside of the south of Italy in Apulia region. The artichokes

    are selected during the harvest and immediately hand defoliated

    and briefly boiled for a firm consistency. The cooking process

    includes a first slow roast step, which allows the artichokes to lose

    the exceed moisture and reach a crunchy consistency. Secondly

    they are grilled with the typical rustic grill method which leave the

    traditional black line on their leaves.

    The final result is a rustic smoky flavor.

    Bell Pepper Bruschetta

    Fresh peppers selected during the harvest. First cut and then

    blended into a thick consistency. Rich in flavor ideal for any

    ANTIPASTO SELECTION The Castellino story began in 1963 when Vincenzo Lombardo,

    originally from Sicily, started producing liqueurs in the basement

    of the building where he used to live in Rome. In 1979, Vincenzo

    received a proposal to trade olives from the president of an agri-

    cultural cooperative, who was also one of his Sicilian childhood

    friends. As a child Vincenzo knew everything about olives and

    vegetables so he took the chance and he turned his factory into a

    traditional antipasti-processing plant, offering high quality prod-

    ucts which respected his Italian heritage. After Vincenzos retire-

    ment, his son Francesco took control of the company, and devel-

    oped their range to include new unique antipasti, improved the

    packaging and adopted new technologies. Today the Castellino

    brand includes more than 100 Italian recipes, created by their

    chef, who constantly develops new ideas together with our part-

    ners all over the world.

    months at a time, relying and surviv-

    ing only on these nutritious cakes full

    perfect as a daily dessert or as a spe-

    cial, elegant gift.

    Panforte is made from all-natural,

    healthy ingredients such as dried fruit,

    honey and nuts. Many variations of

    the original recipe have been estab-

    lished, although debates continue on

    which type is the tastiest! They are
