Ultimate Whiskey Lovers’ Dream Prize Ivan Ivanov – a 28-year old lifeguard from Bulgaria - was chosen from finalists from nine countries as the winner of the Make it at Bushmills challenge at a gala dinner recently, in the village of Bushmills on Ireland’s north coast. The historic area has a history of whiskey production stretching back more than 400 years. Ivan will now spend 30 days working alongside Bushmills’ Master Distiller Colum Egan with the aim of becoming the first ever person outside the distillery to create their own blend of one of the world’s best-loved Irish whiskeys. The prize also includes a month’s luxury penthouse accommodation in Ireland and £5,000 spending money. The contestants included a head sommelier from a French three-star Michelin restaurant, a former Wall Street broker and Ireland’s Kevin O’Sullivan from Waterford.Following a series of mental, physical and skills-based challenges, the performance of the individual contenders was assessed by a judging panel that included Irish rugby legend, Keith Wood, Foy Vance, one of Ireland’s most respected singer-songwriters and Joel Harrison, a regular contributor to a number of leading whiskey publications.

Sunday Roast at The ExchequerHappy to take the blame for the Sunday morning hangover, The Exchequer in Dublin is the ideal place to head for the perfect cure – Sunday Roast - delicious comfort food in a relaxed and sociable setting. The winning combination of top DJs and quirky cocktails means that The Exchequer is buzzing with party people on weekend nights, but daytime and early evening customers are drawn by the relaxed, laid back ambience and top quality food. Choose from a roast rib of beef or a roast chicken; both are delivered to your table for you to carve and served with all the trimmings. At just €40 including a bottle of house wine, it’s the best tasting, best value Sunday lunch around!

Hello NightWest Coast Cooler has experienced phenomenal sales growth recently, which is no doubt due mainly to its ‘Hello Night’ TV campaign. The campaign, which started in July, was aired on all national and satellite stations in conjunction with an outdoor campaign. The ad features three West Coast Cooler girls moving through the night sky in stunning dresses…and is proving really popular with its mainly female audience. West Coast Cooler is a refreshing alternative to beer or cider and at 4% volume its strength is similar to beer but lower than wine, making it extremely popular with the female consumer market. Since its launch in 1984 the brand has received a number of stylish makeovers. The most significant was in 2004, when a new bespoke bottle was designed for West Coast Cooler. In 2009 a new addition was added to the West Coast Cooler collection; West Coast Cooler Rosé, a refreshing wine cooler with berry & exotic fruit flavours.

The sun was shining for the guests at the West Coast Wines tasting event at Il Segreto on Merrion Row, Dublin on 17th August last. With two private terraces, and a beautifully

mild evening, it was no surprise that most guests opted to enjoy a chilled Rosé from the Diemersdal vineyard in South Africa, one of the unique wines now available in Ireland from WestCoastWines.ie

Hosts and business partners (as well as father and son) Gerry and Paul McSharry welcomed a select group of guests made up of family, friends, wine lovers, food writers and restaurateurs. The corkscrews were kept busy as each of the thirty diverse wines, ports and champagnes in the WestCoastWines.ie portfolio was put through its paces. The chefs at Il Segreto had designed a canapé selection to complement each of the pouring wines, which were greeted by the guests on arrival with much enthusiasm.

Guests included Asheesh Dewan of the Ananda and Jaipur Restaurants, Paul Smith, newly appointed Manager at Fire Restaurant on Dawson Street, and Adrian Cummins, the CEO of the Restaurant Association of Ireland. Dublin City Sheriff, Brendan Walsh attending with his wife, Ruth Kenny Walsh, who was chatting with old friend, wine writer Myles McWeeney. Overseeing the event was Il Segreto manager Sara Casari, daughter of Georgio and Noreen Casari, who were also present to toast the success of the new venture. Quentin Fottrell, just back

from a month’s vacation in the US, was eager to catch up with Eoin Higgins and Ingmar Kiang who were in menu planning mode for their charity ‘Critics in the Kitchen’ event. Benoit Bringer opted to sample wines from the French vineyards only, while Roisin NiMhordha stuck with her new world favourites.

West Coast Wines Ltd is the culmination of a life long passion for wine for father and son partners Gerry and Paul McSharry. Retailing direct to Ireland’s wine lovers from their website WestCoastWines.ie, the duo are placing their faith in the appeal of a portfolio of top quality, unique to Ireland wines, sparkling and ports initially from South Africa and California, with a smaller selection, including Champagnes, from France and Argentina. The Sligo born McSharrys each bring their own particular skills to this exciting new wine venture; Gerry is an advertising industry veteran while Paul has complemented his academic wine qualifications with several years of hands on experience in working vineyards.

“There are exceptional wines being created by inspirational growers, but often in quantities too small to attract the attention of major distributors”, said Gerry McSharry. “When Paul and I agree on a wine we love, we will find a way to make it available to discerning wine lovers in Ireland. We now have a close working relationship with

some really excellent vineyards, and look forward to having the pick of future vintages!”

There are nearly 30 wines in the West Coast Wines eclectic collection, and while it very much covers the basics, it also indulges the McSharry’s personal picks! Both enthuse about the Chateau D’Esclans Rosé which is priced at €16.52 a bottle, a perfect summer choice. In South Africa the pair work closely with the Diemersdal estate, offering a choice of six wines from their vines. A reputation for innovation is balanced by a six-generation heritage, making it a favourite for West Coast Wines, and one to watch. There is no better demonstration of the McSharry’s commitment to wine excellence than the fact that they are soon to bottle their very own wine. Working with the renowned Mark Herold in Napa CA, this year will see their second vintage Cabernet Sauvignon being laid down.

The easy to navigate website sells wines by the half case, priced from just €9.61 per bottle, with mixed cases allowed. For orders of 24 bottles or more the nationwide delivery charge of €10 is waived. There is also a subscriber newsletter, which will keep West Coast Wine customers up to date with special offers, tastings and news.

Although it is now one of the world’s most popular spirits, before the 1950’s vodka was relatively unknown outside of Europe. While

it’s generally believed that vodka originated in Russia during the 14th century, its exact origins are unclear, however, it is widely accepted that it originated in the grain-growing region covering Poland, western Russia and the Ukraine. Vodka’s neutral flavour allows it to be mixed into a wide variety of drinks, often replacing gin in more traditional drinks, such as the martini. Whether you feel like getting a little flirtatious over a Flirtini or want to indulge your sweet tooth with a Chocolate Martini, vodka and flavoured vodkas are the ideal starting point.

Vodka 101

Vodka is by far the most popular spirit stocked in any bar making it the ideal spirit base for cocktails. With just a few liqueurs and juices a surprising variety of cocktails can be assembled, each with their own distinct taste.

W hile there’s no arguing that Dundrum Town Centre has a plethora of restaurants to suit the tastes of any diner, many would agree that – until now – it has been missing a Mexican

‘flavour.’ That’s all changed now that Cortina’s has opened in the Pembroke District (between Harvey Nics and Hamleys). Priding itself on being the only Mexican restaurant in South County Dublin, Cortina’s serve “classic Mexican cuisine, blending rich flavours, textures and traditions from ancient Aztec and Mayan foods such as chillies and corn with a unique blend of Spanish influences.”Cortina’s approach to cocktails is much the same as their approach to food – all margaritas are made with freshly squeezed limes and 100% pure tequila. All of the salsas, guacamole, sauces, tortillas, tortilla chips and desserts are freshly prepared every day on the premises. Each dish is made from scratch and uses authentic ingredients. Seating is available for 116 people including a cocktail bar area which would be perfect for a girls night out.

Flavour

We recently caught up with restaurant owner Terry McVeigh who’s been working in the restaurant industry since the late 1980’s, firstly in London, followed by San Francisco, then Clare, and finally Dublin. Terry tells us that Cortina’s attracts “all types of diners, including lunch-time shoppers, local office workers, after work dinner and drinks, as well as the pre and post movie crowd.” Cortina’s aim is to create food that is a true homage to authentic Mexican cuisine, but tailored for an Irish palate! Terry says,

“by embracing both Mexican tradition and local tastes, Cortina’s offers classic food with its philosophy being fresh, local and sustainable.”

The restaurant is really making a name for itself as a highly regarded cocktail bar and Terry informed us that their Silver Tequila is probably the most popular cocktail served at the bar.

To make a Silver Tequila, mix 35.5ml tequila, 20ml triple sec and 70ml sweet and sour mix in a salted glass. Garnish with a lime slice and two short straws. Float Grand Marnier on the cocktail or alternatively, finish it separately afterwards!

The Australian wine industry is the fourth-largest exporter in the world, exporting over 400 million litres

a year to a large international export market that includes “old world” wine-producing countries such as France, Italy and Spain. There is also a significant domestic market for Australian wines, with Australians consuming over 400 million litres of wine per year. The wine industry is a significant contributor to the Australian economy through production, employment, export and tourism.

McGuigan Private Bin Available from United Wine Merchants, the McGuigan Private Bin Range comes from McGuigan Wines, which is the culmination of the McGuigan family’s involvement in the Australian wine industry for more than fifty years. Their commitment to best viticultural practice and winemaking expertise, linked to a dedicated team of professionals, has seen four generations of the McGuigan family making wine their life.

Premium fruit, modern winemaking facilities and a good understanding of customer needs enables production of premium quality product at a price that represents exceptional value for the high quality wine on offer. Private Bin

offers a full bodied Shiraz, which gives exactly what is expected from South Eastern Australia, a rounded Merlot, a fresh zingy Sauvignon Blanc, a soft ripe chardonnay and a fresh, fruity rose.

This Creek was later renamed Jacob’s Creek and in 1847 Johann Gramp purchased the land further up the stream, when a year later he planted the Barossa Valley’s first commercial vineyard. For over 150 years as a

winemaker, Jacob’s Creek has stayed true to its passion for making premium quality wines with real character. It has grown to become one of the leading wine brands in the world and has gained trust thanks to consistent quality, depth of range and innovation.

While most wine drinkers associate Australia with strong, quality brands, this continent, does, in fact, boast the world’s oldest soil type and a truly diverse climate, which produces quality wines for everyday consumption, as well as vintage wines that are only available on allocation.

ancient people were required to cross the rivermouth before they could reach the world of eternal life, and the only path by which they could travel lay across the shell of the tortoise.) True or not, the actual facts about the range are just as impressive. The vineyards used for each varietal are chosen for their suitability for each grape varietal, whether crisp, zesty whites or rounded, textured reds and with quality of flavour and stand out packaging to match, this is a must stock brand for any outlet and is sure to fly off the shelves! Tortoiseshell Bay offers excellent quality at accessible prices – the range is perfect for any meal or simply to enjoy on its own. Wyndham EstateEnglish immigrant George Wyndham began his most important page in Australia’s winemaking history in 1830, when he planted his first vineyard at Dalwood along the banks of the Hunter River. Seven years later, Dalwood Wines released its first vintage to rave reviews and was exporting by the mid 1800’s. To honour George Wyndham’s memorable achievements, Dalwood Wines was renamed Wyndham Estate in 1970, one hundred years after George Wyndham’s death. The philosophy behind Wyndham Estate is to create wines that are generous and full-flavoured – for people who want more intensity and sensation from their wine experience.

Oxford Landing Oxford Landing is a real place, a real vineyard. A place distinguished by clear blue skies, rich red soil and an abundance of golden sunshine. Established in 1958 on the banks of the majestic Murray River in South Australia, the vineyard was named Oxford Landing after a nearby site where drovers once grazed and watered sheep on the long journey to Adelaide from northern pastoral properties. Care and attention are the hallmarks of life at Oxford Landing. Many of the people who work here also live here, it’s home. They’re what we like to call ‘real people’, genuine, down-to-earth individuals who are unashamedly passionate about this special place and the grapes it produces. The winemakers and the vineyard crew work together to ensure the end result is what they envisaged. “It’s a real team effort,” says Vineyard Manager, Robert “Fred” Strachan. “Our group of dedicated vineyard staff lives on site and nearby, creating a strong community. They’re always near at hand and willing to pitch in when needed and it is their care and attention that sets the basis for the Oxford Landing quality of wine.”The consistently high quality of Oxford Landing wines stems from the time and attention dedicated to the vineyard. This begins with the special care and attention devoted to the 650 acre

vineyard. It is managed and nurtured as 130 separate 5-acre blocks where the focus is on individual block conditions. Vineyard Manager Robert “Fred” Strachan and his team use many “small vineyard” techniques that are more common in a boutique winery, such as detailed pruning, canopy management and crop thinning, for improved flavour intensity. This detailed vine husbandry enables the creation of micro-climates within the blocks suited to the needs of each of the different grape varieties. Winemaker Matt Pick explains, “It’s in the vineyard where the winemaking process begins. You need to have a feel for the place and know the blocks very well to get the best out of them.”

Peter LehmannThe Barossa is Australia’s most influential and internationally

recognised wine region, but Peter Lehmann Wines has never ridden on the coat tails of that reputation. The fact is that their story is intrinsically linked to the events that put the Barossa on the world stage. Peter Lehmann’s personal bravery, loyalty and commitment to the Barossa forged the foundations of the winery that bears his name,

built in 1979 to protect the livelihood of his colleagues, the independent Barossa grape growers, and their treasured vineyards. Lehmann’s wines have yielded some impressive results over the years, perhaps none more spectacularly than in both 2003 and 2006 when Lehmann’s accepted the awards for Best Australian Producer and International Winemaker of the Year at the IWSC in London. Peter Lehmann - named the “Baron of the

Barossa” - was awarded a Lifetime Achievement award at the 2009 IWSC. Their Chief Winemaker, Andrew Wigan, a long time multi award winner, has been with Peter from the beginning, ensuring that Peter Lehmann Wines has won international acclaim from prestigious wine magazines over the years.

Wolf BlassAs an icon of Australian winemaking, Wolf Blass continues to evolve. Starting in 1961, Wolf Blass has grown to become one of the world’s greatest wine producers. Wolf Blass has received over 4,000 awards and accolades at international wine shows since 1966, including winning the ‘Jimmy Watson’ Trophy – Australia’s most prestigious wine award – an unprecedented four times. In 2008, Wolf Blass was honoured with the acclaimed International Red Winemaker of the Year award at the International Wine Challenge (IWC) in London. Wolf Blass is a leading premium wine in the Irish market. During the past year, Wolf Blass has updated its packaging across all its ranges within the Wolf Blass family. As well as the entire porfolio moving to screwcap, the impressive packaging designs feature a modernised Wolf Blass logo and striking representation of the symbolic eagle. The new labels aim to heighten shelf appeal and premiumise the Wolf Blass portfolio. The Wolf Blass Yellow Label wines are premium single varietal wines from South Australia epitomising quality, character and consistency. The Wolf Blass Yellow Label Sauvignon Blanc is new to Ireland and provides a refreshing alternative to the ever-popular Yellow Label Chardonnay. In addition to these two white wines,

there are two complementary red wines under the Yellow Label: Yellow Label Shiraz and Yellow Label Cabernet Sauvignon – the first wine to carry the Wolf Blass name on the label when it was released from the 1966 vintage.

New York, New York, so good they named it twice. So the song goes, anyway. The truth of the matter is that New York is THE best place for eating out, meeting friends, shopping, and most definitely,

drinking. We’re big fans of Building on Bond, Brooklyn’s newest – and hottest – spot. BoB – as it’s now known – is tucked away between Pacific Street and Atlantic Avenue; walk past fast enough and chances are you’ll miss it. The bar – which is decked out in a mish-mash of comfortable, yet eclectic, styles – might look like it’s been around for ages but it’s definitely a new addition to the neighbourhood. There’s lots of wood to be found; in the

seats, the panels, the bar etc, and while everything is mismatched and scattered, the overall look comes together, and never becomes confusing. Owner Phil Morgan has his finger on the pulse when it comes to ambience and customer satisfaction; the atmosphere is laid back and projects a chill out vibe, while working customers are kept satisfied with free wifi, and the staff don’t seem overly concerned how long you work away on your laptop – which is always good to know. The food is a treat and definitely worth the price of lunch, we road tested the turkey club (proper turkey, we were

pleased to note), the veggie burger (which also got the thumbs up) and, because our portions were so large, we opted to share the chocolate banana pancakes for afters, which were to die for. All in all, we Y Building on Bond.

Ps. A special mention must go to the wait staff at Building on Bond, if Irish pubs are interested in looking to their counterparts across the pond they would do well to look here first, these guys are friendly, helpful, efficient, and went out of their way to ensure we had the best possible time. Full marks!

Fresh Fruit & Veg Suppliers For fresh fuit and vegetables, always think seasonal, and local. Get on first name terms with a local supplier and ensure you get the best price, every time. When deciding on a food supplier for your business, it is important to ensure the supplier conforms to EU approved regulations for the transportation of food, and that all sales vans are subject to strict temperature controls. In addition to this, the supplier should be registered with the Health Service Executive (HSE) as a Food Business, in accordance with Food Hygiene Regulations.

Mini Bar Stockists When purchasing mini bar units for your hotel always buy in bulk as there will be a cost saving, and aim to secure units that are environmentally friendly, energy saving and produce little or no noise. Many online companies

offer bulk buys in whiskeys, spirits and liqueurs, as well as nuts and an extensive range of chocolates.

Meat Purchases Good, quality food will guarantee customer satisfaction, so always strive to provide the best foodstuffs your budget will allow for; premium hams, topside beef, turkey on the bone and fillet steaks. Check out vacuum-packed ranges as savings can often be made in this area.

Storage Units If you’ve ever suffered down time with your catering equipment, you’re fully aware how frustrating it can be to get it working quickly – and efficiently – once again. When it comes to foodstuffs, it’s imperative that refrigeration failures are kept to a minimum. Realistically however, some component in a kitchen is bound to fail or need servicing at

some stage. Downtime can cost a company dearly, so always ensure your service contract is kept up to date.
