Message

It is indeed a matter of great pleasure to know that Proceedings of the highly successful International Conference on Functional Dairy Foods which was jointly organized by Dairy Technology Society of India and the National Dairy Research Institute, Karnal during November 16 to 19, 2011 at Karnal is being brought out. The conference had its focal theme as Functional Dairy Foods: Foods Beyond Nutrition and the deliberations which took place over the four days of the conference dealt with the core subject admirably well. The spectrum of topics covered many relevant issues such as dairy nutraceuticals and their interaction with the milk constituents, nanotechnology applications, probiotics & prebiotics, developments in technology and equipments, quality & safety, health aspects, functional properties of milk from other species as also very important trade and entrepreneurship opportunities. Presence of many luminaries from among the international scientific community conducting research in contemporary areas of foods science made the conference a great event. The publication of proceedings of the conference is an attempt to bring out the salient recommendations of each of the sessions so that it can reach a broader audience and serve as guidelines to the policy makers, scientists and stakeholders in the industry for devising strategies for addressing key concerns of the subject to develop the future roadmap.

PrEfaCEFollowing the success of ICTDF 2007, office bearers of Dairy Technology Society of India decided during early 2011 that International Conference on Functional Dairy Foods (ICFDF 2011) should be organized at NDRI, Karnal from November 16-19, 2011. The society selected Functional Dairy Foods as the conference title because functional foods are today the fastest growing segment in the world food market of value added products. Dairy ingredients have since long been considered valuable for enhancing physical and nutritional functionality of many processed foods. However in recent years many new dairy nutraceuticals like bioactive peptides, glycomacropeptides, galactooligisacchardies (GOS), conjugated linoleic acid (CLA), immunoglobulins, lactoferrin, lysozymes, lactoperoxidase etc have emerged as new age bioactives with significant commercial potential. The list of such bioactives derived from milk is likely to increase as novel technologies and scientific knowledge are used in future to explore the abundant value of milk. The other areas which have drawn attention of dairy/food scientists worldwide in the recent years are probiotics/synbiotics, nutraceuticals’s delivery systems, nanotechnology applications, various issues related to health aspects of functional dairy foods and their validation/safety. Therefore the technical sessions of the ICFDF 2011 were planned around these contemporary issues of concern. The conference culminated into a highly successful event having been attended by nearly 450 persons drawn from various spheres of dairy and food science activities. Noted speakers from India and abroad (Australia, Belgium, Croatia, Finland, Germany, Ireland, New Zealand, Spain, UAE, UK and USA) delivered talks and deliberated the subject over these four days. A large number of students and young researchers actively participated in the poster session and the special oral session for young researchers and won awards in various categories of their participation. The society conferred Fellowship of Dairy Technology Society of India on two of our illustrious Dairymen: Dr. B. N. Mathur and Dr. J. V. Parekh during inaugural function. The society also released first issue of its journal Dairy Foods International during the conference. The credit for grand success of this conference goes to support of an overwhelming number of people. To top the list is the ever inspiring leadership of Dr. A. K. Srivastava, Director, NDRI. President and Vice-President of DTSI, Dr. S. Singh and Dr. G. R. Patil and Secretary General, Dr. A. A. Patel provided necessary guidance and encouragement. The office bearers of DTSI, chairs and members of various committees, NDRI administration and service sections left no stone unturned to ensure everything went according to the high traditions of NDRI. The industry came forward wholeheartedly to extend financial support. Many scientific departments of government of India also provided grants to support the conference activities. The Dairy Technology Society of India proposes to broaden its base by opening regional chapters and expand its activities through many new initiatives. It invites all dairy professionals to join the society and be a partner in its attempt to espouse the cause of the profession.

Value addition would be the cutting edge for the growth of indian dairy industry in the future. Value addition however is being redefined to include incorporation of several dairy and non-dairy ingredients including phytochemicals, probiotics, prebiotics, dietary fibres, biopeptides, whey proteins, cereal/plant residues, etc. with potential health benefits to enhance functional and health attributes of dairy products. in view of the significant impact these areas of dairy research are likely to have on nutritional well being and public health, there was urgent need for deliberating and critically evaluating them so as to develop a roadmap for future endeavours in these areas. the dairy technology society of india (dtsi) therefore organized an “international conference on Functional dairy Foods” during november 16-19, 2011 at the national dairy research institute (www.ndri.res.in), Karnal. over 400 delegates from india and abroad attended the conference. more than twenty delegates from foreign countries participated in the event. the main objective of the conference was to discuss various aspects of functional dairy foods from across the globe, right from processing through engineering to quality assurance and marketing. the delegates representing dairy/Food professionals including processors, academicians, planners and entrepreneurs participated in the conference. it is hoped that this will prove to be an important milestone in the society’s endeavour to promote the interests of the dairy industry in general and dairy professionals in particular.

INaUgUraL SESSIoN

the conference inaugural session was presided over by dr. a. K. srivastava, director & Vice-chancellor, ndri. the chief guest of the function was dr. V. m. Katoch, director general, icmr and the guest of Honour was mr. christian schmid, director technical, nestle india. the Keynote speaker was dr. B. sivakumar, Former director, national institute of nutrition, Hyderabad.

dr. s. singh, President, dairy technology society of india started the conference proceedings by welcoming the guests. He highlighted that functional dairy products if fortified with new age functional bio-molecules e.g., lactoferrin, glycomacropeptide, conjugated linoleic

acid, immunoglobulin and gos may represent a vibrant, dynamic and emerging section of the indian dairy industry which is at cross-roads because of unfolding of tremendous opportunities as a result of liberalization and globalization. He brought to the focus the fact that functional dairy foods are one of the fastest growing sectors in the world food market and future developments, introduction and propagation of these can counter the bombardment of market with unhealthy junk/fast foods. it was also pointed out that if selected properly, functional foods can act as medicine.

dr. g r Patil, Vice President of the dtsi remarked that the total world market of functional foods is pegged at 167 billion Us$ and growing at the rate of 14% per annum. He further emphasized that functional dairy foods not only provide health benefits to the consumers but may provide investment opportunities to the dairy industry because they offer high profit margins. it is therefore that efforts must be made to scientifically validate the functional foods particularly those developed using the traditional wisdom of indian system of medicine “ayurveda” to instill greater consumer confidence necessary for acceptance of such novel foods.

mr christan schmid, director technical, nestle india and guest of Honour for the occasion expressed that scientific knowledge to promote functional foods with specific human needs already exists and functional foods can be used to minimize the imbalances of various nutritional situations like malnutrition, obesity, etc. He further emphasized that for growing needs of the consumers and commercial interest of the manufacturers, the commercial use of health benefits of functional foods must be supported by the industries, institutes and the regulatory bodies with transparency and claim communication based on positive science-based data. therefore, industry and institutes must work together to develop acceptable and affordable functional foods to benefit the entire population.

dr. V m Katoch, director general, icmr and chief guest for the inaugural function mentioned that functional foods may be of great help to improve the health status of the people who don’t want to consume medicines. He cautioned that development of functional foods should not be overtaken by ‘technological gloss‘ but must be based on stringent evaluation of the health claims conducted under strong regulatory framework. His talk also highlighted that the specific health claims must be supported by strong post-marketing surveillance and monitoring. He further stated that development and growth of functional foods driven by market forces should in fact be driven by human needs.

dr. a K srivastava, director & Vice-chancellor, ndri in his presidential address remarked that milk based functional foods can play a great role in combating the endemic malnutrition and micro-nutrient deficiency problem prevalent in india. He pointed out that the strength of the indian dairy industry e.g. its mega biodiversity, highest bovine population, best buffalo germ-plasm and highest milk production in the world should be exploited to ensure nutritional security for the whole world.

dr. siva Kumar, Former director, national institute of nutrition, Hyderabad delivered Key note address and observed that india is pushed into double burden with a new rapid phase of health transition in the last two decades with steep spurt in the prevalence of diet related chronic degenerative diseases. it was also pointed our that functional dairy foods can play an important role in providing balanced nutrition to the population burdened with nutritional deficiency particularly low birth weight and malnutrition as also to those suffering from chronic metabolic diseases.

dr. r. r. B. singh, organizing secretary of the international conference proposed a vote of thanks. He profusely thanked chief guest dr V. m. Katoch, guest of Honour mr christan schmid and dr siva Kumar, the Key note speaker. on behalf of the society, he thankfully acknowledged the support of ndri and icar. He profusely thanked director, ndri for granting permission to organize the conference at its Karnal campus and for providing necessary support. He also thanked other dignitaries, the invited international speakers, delegates, members of the organizing committee, staff of ndri and distinguished members of the Press and media. He also placed on record generous contributions in the form of sponsorships from many organizations and exhibitors and advertisers for their participation.

in the country and the membrane processing technology should be used to exploit this potential area.

technology must also be developed for fortification of milk and milk products with iron and magnesium since the bioavailability of iron is better with iron fortified milk and milk products as compared to iron fortified wheat or rye flour.

Use of milk ingredients in nutritional products, functional foods and nutraceuticals are likely to grow and new processing technologies should be applied to isolate these valuable nutraceuticals from milk and its byproducts. newer technologies must also be used for modification of protein structures and functionality

there is need to build brand value for functional foods and proper investments should be made in r & d to develop new products.

Technical Session 1Dairy Nutraceuticals-Novel applications

Presentations were made by four speakers, viz., dr. Paul J. moughan, new Zealand; dr. r. J. Fitzgerald, ireland; dr. anne Pihlanto, Finland and mr. c. P. m. thulasiram, Uae and the following recommendations emerged:

Bioactive peptides have great influence on gut physiology and the amount of secreted protein in gut is approximately equal to digestive protein. Hence a rich and consistent source of biopeptides in gut is essential. Biopeptides thus offer opportunities to optimise gut function for human performance and for gut health.

milk peptides also contribute to hypotensive effects. However, these exhibit different race-related responses and hence their commercial application need careful considerations.

the naturally occurring Lactotripeptides in milk viz., isoleucine-Proline- Proline (iPP) and Valine-Proline-Proline (VPP) appear to be potent antihypertensive peptides derived from milk. However, more clinical studies are needed before these are used as food ingredients for reducing the risk of disease.

camel milk has unique biological and chemical properties and offer great scope for value addition. However, there are many challenges in the processing of camel milk and these need to be overcome for exploiting its commercial potential.

Technical Session – IIIngredients & their Interactions in functional Dairy foods

Four speakers, viz. dr. david W. everett, new Zealand; dr. Paul Bouchier, ireland; dr. mark Fenelon, ireland and mr. V. m. naik, india made their presentations wherefrom the following recommendations emerged:

there exists huge scope for manufacturing low fat cheeses from recombined or reconstituted milk with enhanced flavour profile and fat globule coated with components extracted from milk fat globule membrane.

it is possible to convert poor heat stable demineralised whey to more heat stable version by manufacturing under certain pH and temperature conditions. it not only controls level of denaturation of its principal protein to enable maximum processing capability but also helps in maintaining nutritive quality of protein.

challenges for infant formulae industry are to develop more sustainable manufacturing process by maintaining product quality. it is possible to use upstream homogenization using a rotor stator homogenizer followed by a high capacity steam injection system for the heat treatment of high solid infant formulae prior to spray drying. this new process may be able to remove the evaporation step, simultaneously reducing energy intensiveness and high thermal load on the product produced by conventional technology.

Foods like ice cream are multicomponent multiphase composite system far removed from the state of thermodynamic equilibration. employing genus particle concept, it is possible to create a stabilizing interfacial area to produce reduced fat ice cream having stability and sensorial attribute akin to full fat ice cream.

in view of importance of nano formulations for delivery of nutraceuticals there is need for extensive research for making nano structures and characterization of their functionality. it is also realized that in spite of great importance there are some concerns about the fate of absorption of neutraceuticals in gi tract, possible toxic effect and rdi of the nutrient delivered. there is need to look into these issues during planned nutrient delivery through nano particle.

in summary, nanotechnology has emerged as a great potential area to fulfil the need of the market but at the same time adsorption, digestion & metabolism, excretion of nanoparticles, toxic effects etc are not clear and need to be thoroughly investigated.

Lactobacillus casei has a large level of genetic and phenotypic diversity which allow for selection of strains with unique industrially important characteristics. intrinsic and inducible resistance to oxidative stress factors (hydrogen peroxide) is strain-specific in B. longum and B. lactis and molecular mechanisms in these cells need to be exploited to develop strategies to improve cell survival in bioactive foods.

metagenome screening is helpful in discovery of new, industrially-suited enzymes and lactose hydrolysis conditions can be successfully optimized and gos production enhanced using new metagenome β-galactosidases. education/training of employees will be necessarry for better dealing with such enzyme applications.

Probiotic market in india is still in infancy but holds great potential. indigenous strains of probiotic bacteria need to be thoroughly investigated and claims validated. Furthermore, regulatory guidelines for such products should be adopted by Fssai and consumers must be educated about the potential benefits of such foods.

Technical Session – VDevelopments in Technology and Equipments

Presentations by three speakers viz. dr. Keshavan niranjan, UK; dr. J. V. Parekh, india; and dr. K. narsaiah, india resulted in the following recommendations:

steam injected milk foams offer new opportunities for creating value in dairy formulations and should be promoted for developing novel products.

microencapsulation will emerge as a novel tool to enhance usefulness of probiotic foods. there is a need to further evaluate the available systems for their effectiveness at small as well as large scale of production.

growth in the dairy industry in future will be spurred primarily by convenient design, innovativeness, better throughput, sophisticated and completely automated dairy processing equipments as per customer requirements.

Buffalo milk has unique bioactive components and is particularly suitable for the manufacturing of certain value added products. novel techniques or processes need to be developed to harness the therapeutic & functional virtues for better realization of commercial benefits to the industry and farmers.

milk of certain minor species viz., goat, sheep and camel offer unique functional characteristics and must be fully exploited to create values.

Presence of bioactive peptides in fermented dairy products and their functional role in human health offer great scope for novel product development. However future market expansion will be a great deal guided by stabilization of the bioactives in the food, evaluation of their allergenic & carcinogenic effects, establishment of mechanism-target functions and validation through clinical trials.

the annual general Body meeting (agBm) of dairy technology society of india was held in dr. d. sundaresan auditorium on november 18, 2011 at 6.30 pm. the meeting was chaired by dr. s. singh, President, dtsi. in his opening remarks, dr. singh thanked the members for attending the conference in large numbers and also briefed them about the remarkable progress the society had made over the last six years. the proceedings of the last agBm was taken up for approval and the house approved it by voice vote. He further gave brief account of all the activities that the society had carried out recently. He informed the house that the first issue of the society

journal “dairy Foods international” was released on november 16, 2011 during the inaugural session of icFdF 2011. dr. r. r. B. singh, secretary, dtsi briefed the members about the need for accelerating the pace of enrolment of new members. He also brought to the notice of members that the total number of life members of the society had increased beyond 500. dr. a. K. singh, treasurer of the society presented the financial report along with the audited statement of account for the FY 2010-11 and also proposed the budget for the FY, 2011-12 which was approved by the members. the president invited the members for taking up the responsibility of organizing the next national conference during 2012. the meeting ended with vote of thanks to all the members for sparing their valuable time.

Dr. Bhupendra Nath Mathur(citation read on the occasion)

dr. Bhupendra nath mathur obtained his graduate and post-graduate degrees in dairy technology from the national dairy research institute, Karnal in 1963 and 1965. He obtained a Post graduate diploma in Project Planning, evaluation and control before returning to ndri, Karnal to pursue doctoral studies, which he completed in 1975.

He started his career as manager (research & development) at Polson Limited, ootacamund, where he worked for three years from 1967 to 1970 before academics lured him back to his parent institute for Ph.d. dr. mathur worked as a Post doctoral research associate at the department of Food science and technology, University of nebraska, Usa from 1975 to 1977. His belief that the greatest respect that a person can pay to his alma mater is to come back to serve it, brought him back to india. He began his illustrious career at ndri, starting from the post of research officer, gradually climbing the rungs of the professional ladder as a scientist, Head of the dairy technology department, Joint director (research) and finally reaching the top as the director of the national dairy research institute. He remained at this position from 1999 to 2002 before taking on research management responsibilities as the director of national academy of agricultural research management, which he served till his superannuation in 2004. His capabilities for bringing about organizational and management reforms for modernizing research administration has been amply illustrated during his tenure as director of these national institutes.

dr. mathur’s contribution to dairy education and research has been considerable. His pioneering work on ‘probiotics’ in the early 1980s has been the forerunner of several research projects undertaken on probiotics, which has become a thrust area today in the dominion of food science. His thorough research on infant Food has been the first and a special one of its kind. He has guided several post-graduate and Ph.d. students and has to his credit, over 150 professional articles and a number of books and book chapters.

dr. mathur has been a member of the indian delegation to the meetings of the international dairy congress, held in australia (1994), denmark (1998) and France (2002). He has been an invited speaker at several international conferences across the world. dr. mathur has assisted

dr. mathur is immensely respected as a scientist and researcher of outstanding personal and professional qualities. He is the recipient of the gardener’s award (1979), rafi ahmed Kidwai memorial Prize (1982-84), Lifetime achievement award from the association of Food scientists and technologists (2007) and Fellowship of the indian dairy association (2008). He is an expert in global perspectives on agricultural development and national policies for greater global competitiveness, being able to develop applications of Biotechnology and information technology for orchestrating further growth of indian agriculture.

the dairy technology society of india takes immense pride in felicitating dr. B.n. mathur with its Fellowship in recognition of his invaluable contribution to dairy education and research.

Dr. J. V. Parekh (citation read on the occasion)

dr. Jitendra Vanmalidas Parekh did his graduation in dairy technology at the smc college of dairy science, anand in 1971. after completing his post graduation in 1974 and Ph.d. in 1976 from the national dairy research institute, Karnal he did post-doctoral research in dairy and Food science from dairy research Laboratory (csiro), australia during 1977-1980.

dr. Parekh began his career at amul dairy, anand with the processing of dairy products during 1971-72. since 1980, he has been active as a technical consultant and has provided technical and turnkey consultancy to many companies in the field of dairy and food

processing. His consultancy services range from concept to commissioning of the project right from feasibility studies, project report preparation, through technology transfer and know-how, equipment sourcing and selection, process development, quality control, iso 9000 and HaccP to process design, building and machinery layout and training of manpower. some of the projects executed by dr. Parekh include a World Bank assignment in Kosovo on aseptic processing of fruit juice and milk (2001), pre-investment feasibility study of the

He has travelled widely across the globe to attend conferences and exhibitions in dairy and food processing.dr. Parekh is a member of the panel of export inspection agency (ministry of commerce) for assessment of milk processing plants in maharashtra for export of milk and milk products. He was awarded a Fellowship of the indian dairy association in 2011.the dairy technology society of india feels privileged in honouring dr. the chief guest of the function mr. rakesh Kacker, secretary, mFPi, govt. of india said that the recommendations emerging out of the presentation and discussion in the various technical sessions of the international conference on Functional dairy Foods were very relevant and should find a place in the policy papers of the relevant departments. He also expressed that the outcome of the conference will go a long way in strengthening and reshaping the future research programs in the areas of functional dairy foods.

dr. a. K. srivastava delivered the presidential address. He congratulated the organizers for grand success of the conference and urged the scientific fraternity to come forward and help the country to not only become secured in terms of availability of foods but also nutritional security.

Major recommendations:

1. Functional dairy foods will be critical for greater value addition and sustainability of the future dairy industry in the country. it could also play a significant role in gainfully utilizing surplus whey and addressing the problem of malnutrition through fortification with micronutrients.

2. Bioactive peptides, galactoligosaccharides and conjugated linoleic acids are very promising nutraceuticals derived from milk constituents and available scientific data warrant that novel products can be formulated incorporating these bioactives for specific target consumers.

3. recognizing promising potential of nanostructures in nutraceuticals delivery and packaging, extensive research efforts need to be supported in this area. research however, must also consider aspects such as adsorption, digestion & metabolism, excretion of nanoparticles, toxic effects, etc.

4. milk and milk products can serve as an ideal vehicle to deliver functional ingredients viz. phytochemicals like phytosterols, stanols, herbal bioactives, probiotics, fibers,

micronutrients, etc and should be encouraged for manufacture in the organized dairy sector for its sustainable growth.

5. Probiotic dairy foods are still emerging and need to be promoted with research focus on indigenous strains, validation through clinical studies, regulatory support and consumer awareness.

6. novel processing technologies such as microencapsulation, steam injection for foam creation and automated dairy processing line could be judiciously used for creating novel products.

7. Laboratory generated data need to be extended to practical reality through appropriate developmental research. clinical validation of health claims should be encouraged for greater consumer confidence and acceptability in the market.

8. Harmonization of global safety standards and use of modern testing tools including the biosensors should be made essential part of quality assurance in functional dairy products.

9. Process innovations for utilizing poor quality whey, creating high quality low fat foods and reducing energy intensiveness in spray drying operations will be extremely important for the growth of the indian dairy industry.

10. Buffalo milk has great economic significance for the indian dairy sector. it is endowed with unique bioactive components and has great potential for creating values in selected dairy products. novel techniques or processes could be employed to harness these potentials for better realization of commercial benefits. milk of many minor species viz., goat and sheep, camel etc offer unique functional qualities and must be fully exploited to create values.

11. Business model of corporate social responsibility, portfolio management and Business incubation for entrepreneurship (Bie) should be looked at for exploiting emerging commercial opportunities in the functional dairy foods sector.

12. the society reiterated its earlier recommendation for setting up of national research centre for traditional dairy Products.

13. a dairy and Food council of india should be created to bring harmonization in course-curriculum and to monitor teaching and infrastructural facilities for effective educational program at the national level in the area of dairy and Food technology.
