Message from the Director

I want to welcome the 8 new members to Corbin and invite them

to stop by and say hi the next time you are in. Corbin is a community

of great people. Our community runs on volunteers and this year we

are doing something a little extra for our volunteers. Every time you

volunteer at Corbin you will get a ticket to enter into a drawing. At

our volunteer appreciation lunch next year we will draw a name to take

home $200 cash. But that is not all Corbin has received more recliners

and I need to give them away so why not give them to the people that

give to Corbin. If you want to volunteer come see me for more

information.

I want to thank Gail, Diane, and Jessica for their amazing job at making sure the Valentines

event went off without a hitch. I was on vacation and it is wonderful to hear nothing but praise about

the wonderful job everyone did while I was gone. Thank you!

Our next event is St. Patrick's day lunch with an entertaining performance by the Tap

Grandmas. Lunch will be everyone's favorite Corned beef, cabbage, roasted potatoes and veggies.

Dessert will be pineapple upside down cake. Come and celebrate with your friends, and don’t forget to

wear green.

I am excited to say that Kaiser Permanente has agreed to be our headline sponsor for our 16th

annual Movin’ and Groovin’ Health Fair. Greater Spokane Meals on Wheels is also our soup sponsor

and will be providing soup free to all guest in attendance. If you have a friend that is thinking of

joining Corbin April 4th at our Health Fair is the time to do it as we will have 1/2 membership for new

members. Corbin's health fair is an event you will not want to miss. We have over 70 vendors offering

services about senior health, living, finance, and more. It will be held at Corbin April 4th from 9am to

2pm. Attendees will also have a chance to win $250.

Greater Spokane County Meals on Wheels Silver Cafe is designed for our mobile sen-iors to come and enjoy a home cooked meal in a restaurant setting with their peers and friends. Eligibility: Anyone 60 years of age or older. The spouse or caregiver of a diner is also eligi-ble. Cost: A suggested contribution for eligible diners is $5.00, but no one is denied a meal be-cause of inability to give.

INTEREST LIST REVIEW: Please be sure to tell the reception staff that you want to be added to the interest list if they say a tour is sold out. (Your name and phone num-ber). Many times we have cancellations. This is important with the popular tours like Happy Hour and Dinner Club. We also use the interest list to determine if that tour needs to have another date scheduled.

This is an all-you-can-eat affair from 10 to 5. The menu includes home made sausage, sauerkraut, mashed potatoes, green beans, roll, applesauce, pie and beverages. There is also a beer garden. To eat in the dining room, the first to come are served first. If you can’t wait, you may get take out dinners immediately following your ticket pur-chase. This event is put on by community members as a fundraiser for maintain-ing the Uniontown Community Building. Uniontown puts on the best sausage feed, one you will thoroughly enjoy. (If you really like the sausage, you can buy some to bring home.) After we eat our fill, we'll visit St. Boniface Catholic Church, see the photogenic Wagon Wheel Fence, and see (and maybe buy) artwork by the Artisans Dahmen Barn. Undoubtedly we'll see other sights along the way.

Sandhill Crane Festival Saturday, March 21, 2020 6:00 am-6:00 pm Tour Leader: Ron Krueger We’ll spend the morning spotting cranes, so bring your binoculars. After lunch at Ron’s favorite Mexican restaurant in Othello, we’ll go to the festival. At the festi-val you’ll get to see the raptors brought in by Washington State University’s very active Raptor Rehabilitation Program. Then plan to take in at least one presenta-tion by one of the many speakers at the festival. After we leave Othello, we’ll come home via Palouse Falls (198-foot drop), which are really showy this time of year.

What is an enhanced driver’s license in Washington?

Many drivers do not know what the EDL is. In short, the license is a sort of cross between a driver’s license and a passport card. The enhanced driver license bene-fits allow holders to travel to the United States without a passport, drive your mo-tor vehicle within the states and use it for official identification purposes. Howev-er, the enhanced driver’s license states list is limited, and if you would like to travel to other international countries, you will be required to obtain a conven-tional passport. WII BOWLING TOURNAMENT

Eight WII bowlers from Corbin competed in the February 14, 2020 All

City Wii Bowling Tournament that was held at the Spokane Valley Bap-

tist Church close to the Holman Retirement Community. There were approximately

100 Wii bowlers from across the city, with 10 teams participating. Well, after a valiant

effort by all eight members, we had a nice lunch and visit and came home with a tro-

phy as a result of our efforts.

Carril Cramer bowled an impressive 255 which was Corbin’s best game today. Paul

Ruch bowled a nice 216, Barbara Ann Bonner bowled 211, Mary Kay Bryan bowled 203

Theresa Topp bowled 188. With these five bowlers Corbin earned the fifth-place team

trophy with an average of 214.6. We only had to count our best five bowlers today.

The other Corbin bowlers playing today were Phoebe Daniels, Betty Rash, Gerri Phillips,

None of us won a door prize either.

Just wanted to note that I was giving Paul a bad time for bowling only 216. Then I

couldn’t get any higher than 203. My apologies, Paul.

The next All City Tournament will be held on Friday, March 13,

2020. I will be taking names for the roster as soon as you all can

tell me.

Corbin celebrated 5 birthdays on February 7th this year! Our birthday friends are Joann Kendall, Richard Krauel, Trudy Lockhart, Roger Walters, and Joyce Knight. take advantage of the activities. Pric-

Brown sausage in a large pot or Dutch oven. Remove sausage with a slotted spoon and set aside. Cut bacon into small piec-es. Add bacon to pot and cook until crispy. Stir in chopped on-ion. Cook for 5 to 6 minutes or until onion is translucent. Stir in minced garlic and cook for 1 mi-nute, stirring frequently. Add chicken broth and water to the pot. Add crushed red pepper flakes, salt, and pepper if desired. Add thinly sliced potatoes (I use a mandoline) and the cooked sau-sage to the pot and bring to a simmer over medium heat. Con-tinue cooking until potatoes are tender, about 10 minutes. Add the kale to the soup, and simmer for an additional 5 to 10 minutes, stirring occasionally. Stir in the heavy cream and let heat through. Ladle soup into bowls and serve with Parmesan cheese.

chicken broth 3 cups water 5 medium russet pota-

toes thinly sliced 1 tsp crushed red pep-

per flakes optional Salt and pepper optional

4 cups chopped kale 1 cup heavy whipping

cream Parmesan cheese SERVING: 8 PREP TIME: 5 MIN COOK TIME: 40 MIN

Heat olive oil in a large stockpot over medium heat. When oil is hot add onions, celery, carrots, and garlic. Add a pinch of salt to help the vegetables sweat. Cook for 3 to 5 minutes or until the vegetables turn color and soften. Add canned tomatoes, vegetable broth, tomato paste, Italian seasoning, and bay leaf to the pot. Bring to a boil and turn down to simmer. Add white beans, kidney beans, green beans, zucchini, and pas-ta. Simmer for 10 to 15 minutes or until the pasta and vegeta-bles are tender. Season with salt and pepper. If desired, gar-nish with parsley
