Welcome to the spring edition of Innsider. Unfortunately, whilst still looking forward to the better weather etc. with optimism, this year, because of the issues on our streets, we are in a very diffi cult place. Christmas and January were really bad for everyone in the trade and it will take some time to recover. But life goes on and recover we must. At least from the abyss we saw the emergence of the Backin’ Belfast campaign. It was great to see the various Industry bodies coming together and, in conjunction with both Local Government and Council, getting something up and running in a very short space of time.

I am really enthused about the campaign. Make no mistake; this is not just a nice wee marketing initiative, this is about saving jobs and bolstering up the reputation of our City. We have all seen the way the City has been portrayed over the last few months and we all know that these images are not a true refl ection of the City in which we all live and work. This initiative is about counter-balancing those images. It is an appeal to civic pride. It is appealing to the citizens of Belfast not just to sit at home and say how terrible it is that our City is being demeaned on an international stage, but to come in, use and enjoy what the City has to offer, and visibly demonstrate the pride that we all have in Belfast. It’s also about making sure that those who do come in fi nd value for money and are entertained; that they have a good time that will leave them looking forward to the next visit. That’s why so many businesses and organisations within the City are coming together to provide offers and entertainment over the next few weeks; to thank those who support the City, and make sure their visit is memorable. We at Botanic Inns will be playing our part to the full.

What attracted you to work for The Parador?

A range of things attracted me to work at The Parador. As it is a local establishment I liked the way it treats customers, going beyond what is expected of them to cater for their needs. The welcoming staff and fact that it’s part of the Botanic Inns group also attracted me as I knew I would be working with a good team of people and for an excellent company.

What are the high points of the job?

The high points of my job are definitely the team of people I work with. Each member of staff is unique and driven in their own ways to do their best to ensure great customer service in The Parador. I have also built up excellent relationships with the customers and I enjoy listening to them and ensuring that they get what they want. I have an excellent relationship with the Manager - Peter Murray. He is an excellent leader and does the utmost for all his staff and customers. He motivates the workforce and provides a range of opportunities to further careers. Overall he is a great inspiration and a driving force behind me.

What are your interests outside of work?

Outside of work I like to socialise with friends and family. Family is a big part of my life and I enjoy spending time with my mother. I also enjoy shopping and going to day spas which allows me to relax and unwind.

How did you get to where you are today?

I got to where I am today by sheer hard work and determination. I love the hospitality industry and I love my job. Working in a bar allows me to interact with others and develop new ideas to further customer satisfaction.

What can customers expect from The Parador?

Customers can expect to be greeted pleasantly by all the staff and served efficiently. They are given the best service from our bar staff and we always ensure that every enquiry or demand is met to ensure customers have the best experience possible.

The fi rst match is bound to be a big one with the reigning champions Wales taking on the Ireland team at Millennium Stadium, Cardiff. This match is defi nitely worth watching as last year Ireland lost to Wales by just 2 points on home ground! Will Ireland be able to defeat Wales this year in Cardiff? We will enjoy fi nding out.

The fi nal matches of the tournament take place on Saturday 16th March, the day before St Patrick’s Day which means everyone will have an entire weekend full of sport, entertainment and celebrations!

You can watch the 6 Nations tournament at the most popular bar for sport – The Bot! They will show all the matches on the big screens and they have the best atmosphere for sports fans anywhere in Belfast - it is only second to being at the match itself.

The Fly will also be showing all the 6 Nations matches this year following on from the success of the “Fly-Half”,

Hug a Doorman

In December 2012 door staff at our outlets gave hugs to customers as part of a campaign to raise money for the Northern Ireland Cancer Fund for Children (NICFC). The idea came from Paul McDonald who works as Apartment door staff, to give hugs in exchange for a small donation to the worthy cause. The campaign was launched with the support of TV favourite Sarah Travers, a keen supporter of the charity.

Members of the public could avail of a hug and give a donation at the collection points at each of our venues or just simply give a donation. Paul from Apartment said: “Doormen get a lot of flak in this city but underneath it all we are just big softies. Northern Ireland Cancer Fund for Children is an incredibly hard-working charity which offers practical, emotional and financial support to local kids with cancer and their families”.

The response to the initiative was fantastic and customers were extremely generous, digging deep in their pockets to raise a staggering £15,000 for the charity. Thanks to anyone who donated money and we hope you enjoyed your hugs!

Several Botanic Inns venues including Horatio Todd’s, Apartment and The King’s Head all held various events to raise money for the worldwide phenomenon that is Movember. They put teams of Mo Bros together to join in the moustache growth and raise as much money as possible for Prostate Cancer and to raise awareness of men’s health issues.

The end of Movember was celebrated with a series of Gala Partés as a thank you to all the Mo Bros and Mo Sistas for helping to raise money and also to recognise and reward a long hard month of moustache growing! Mo’ratio Todd’s was selected to host Belfast’s Official Gala Parté and prizes were awarded for some of the best achievements in upper lip growth. Congratulations to Man of Movember and Best Mo in Character winner 2012 - Stevie Gorman and there was even a “Miss Mo” - Ann-Marie Brown.

Thank you to all the Movember participants. Mo’ratio Todd’s event was a huge success collecting over £2,000 as well as raising a lot of awareness for the Prostate Cancer Charity.

Help billy Walk appeal

Molly Brown’s in Newtownards have held many events in aid of the local Help Billy Walk Appeal including Garth Brooks and Robbie Williams tribute nights and they have also collected money through collection boxes in the bar. The Help Billy Walk Appeal was started by Billy Douglas’s parents William and Savien to raise funds towards a cure for his condition, Spastic Diplegia which means he is unable to walk.

We are thrilled that customers of Molly Brown’s have been so generous to this worthy cause that they have managed to raise £5,000 towards Billy’s appeal!

A massive thank you to anyone who has helped with or attended these events and donated money to this cause and we hope this goes some way towards helping Billy and his family.

Madison’sRecipes

Crispy salt and chilli squid served with honey & mustard dressed leaves, chilli & pickled ginger dipping sauce (serves 4)

Ingredients:

2lb diced cubed steak1 medium onion, chopped1 clove of garlic, crushed1 carrot, diced1 tsp mixed herbs1 tblsp tomato puree 1 measure port½ cup cranberry sauce500ml beef stock 1 tsp corn flour mixed with 2 tblsp waterPotatoes, mashedSavoy cabbage

Ingredients:

chilli flakes½ cup white wine vinegar1 & ½ cups of golden syrup1 tblsp chopped pickled gingerpeppercorns2 tblsp sea salt4 tblsp plain flour4 tblsp corn flour400g squid, cleaned

Method:

For the sweet chilli and ginger dipping sauce - put ½ cup white wine vinegar, 1 and ½ cups of golden syrup, 1 tblsp chopped pickled ginger and 1 tblsp of chilli flakes in a pot and bring to the boil, then stir and leave to cool.

Crush together the peppercorns, chilli flakes and sea salt with a pestle and mortar then mix with the plain flour and corn flour. Slit the squid hoods down one side, open out then score the inside lightly in a criss-cross pattern. Cut into bite-size pieces.

Fill a large pan with 1/3 oil. Heat until a cube of bread browns in 30 seconds. Coat the squid in the flour mix, shake off the excess and fry for 1 to 2 minutes until brown. Plate up with honey and mustard dressed leaves and for that nice touch put the sweet chilli sauce in a ramekin.

Their menus offer a European feel with a distinct Irish influence. Here, the Head Chef, Chris Kirk showcases 3 recipes to give you a feel for the delights that Madison’s have to offer. The restaurant is open for breakfast, lunch and dinner: Sunday-Thursday 7.00am-9.00pm, Friday and Saturday 7.00am-10.00pm.

Apple & caramel cheesecake served with Chantilly cream (serves 10)

Method:

Pan fry the apples gently in a knob of butter until slightly cooked with a bit of crunch. Then place the tin of condensed milk in water (do not open) and gently simmer for 3 ½ hrs making sure it is covered the whole time. This will turn into caramel to be used at the final stages of the recipe. Leave to go cold (this should be done the day before).

Mix the crushed biscuit and melted butter together and line the bottom of a 20cm tin with greaseproof paper and spread the biscuit base over the top and pat down. Leave to set in the fridge.

Mix together the cream cheese, sugar and vanilla extract in a mixer on slow until smooth. Then add the whipping cream and mix until smooth. Gently fold in the apples and the caramel (from the boiled condensed milk earlier) in chunks and fold in gently. Gently spread this mixture over the biscuit base and leave to set in the fridge for 1 to 2 hours.

Portion and serve with sweetened whipped cream and enjoy!

3 red apples, peeled & diced 1 tin condensed milk to make the caramel200g crushed digestive biscuits100g butter600g cream cheesesugar2tsp vanilla extract300ml whipping cream

Method:

Put all ingredients in a pot apart from the corn flour and bring to a simmer. Then stir in the corn flour and leave to simmer gently for 1 to 2 hours until the beef is tender, season to taste with salt and pepper. Cook the potatoes and mash. Gently pan fry the sliced Savoy cabbage in butter and serve with the beef and mashed potatoes.
