— Letter to the Editor —

On Tuesday, Nov. 5, I wasa part of a funeral proces-sion traveling on SouthElbert Street enroute to theGeorgia Veterans Cemetery. As we passed by GMC, I

was deeply moved by whatI saw. Most, if not all of the

GMC students waiting forthe procession to pass sothey could cross the street, came to attention and salut-ed.That is the kind of

respect lacking in too manyof today's youth. It so happened that the

deceased was a veteran, having served as an U.S.Army Airborne Ranger andalso in the U.S. Air Force. The students had no way

to know that, but what theydid know was that a showof respect was in order, andthat's what they did.To those students, a

heartfelt thank you frommy wife and me and fromthe family of the deceased.Your show of respect wasexemplary. To the administration and

faculty of GMC, thank youfor instilling that respect inthe cadets. As the parent of a GMC

High School 2004 graduate,I can say to parents thatGMC is an excellent invest-ment in your children'sfuture. Through the foundation

acquired at GMC, ourdaughter did very well incollege and is now enjoyinga successful career. An education at GMC is

money well spent.Again, thank you to those

GMC students for a verymoving show of respect fora very dear friend.

I enjoy chicken pot pie. I feelmore comfortable eating it,so why not? I also enjoy eat-ing breakfast at the HuddleHouse every morning. I ordergrits, cholesterol free eggsand bacon.

Oh my gosh: My comfort food is not like other people's comfort food. Ryals Bakery knows when I need my four pills, which are their delicious petit fours. I also love their doughnutsand brownies. Now, Kroger also has this chocolate cake for four people to eat, but my daughter and I can eat that thing in half an hour. I eat all these things right before bed. It’s the South Depot Butt Rub sauce thatoozes the flavor of the Pulled Pork Taco atGringos in downtown Milledgeville.

Chef Jason Medders works the rub intothe Boston Butt and then slow cooks thepork in an oven for 12 to 14 hours.

The following morning he gently pullsthe pork from the bone to maintain themeat’s unique flavor.

He builds the taco with a layer of pork, drizzles a house barbecue sauce and topsthe taco with house coleslaw. A pick of limefinishes the decitent delicacy.

Gringos most popular served taco is alsoMedders’ favorite.Gringos on South Hancock Street offers a

variety of taco flair including short ribs, calamari, shrimp, chicken and fish tacosserved with black beans, Mexican ride andguacamole.

An insider’s secret: a spicy buffalo chick-en taco may soon debut on the menu.

The accomplishment chef is no newbieto the food and beverage business. He has

served up his culinary cuisines acrossGeorgia for 18 years in places like TheKing and Prince Beach Resort on St.Simons Island, Blue Water Inn, HugsItalian Restaurant in Tuscawilla, and sever-al fine dining establishments in Atlantaincluding Buckkhead’s The Ritz Carlton.Buckhead.

Medders made his way home toMilledgeville after the 9/11 attacks in NewYork and Washington, D.C.

After meeting his wife, Traci, in Atlanta,he followed her back to their hometownand transferred to The Ritz Carlton LakeOconee.

He named his popular downtown restau-rant, Aubri Lanes, after his daughter, Aubir, and son, Lanes, when it opened five yearsago less than a block away from Gringoson South Wayne Street.

Medders describes himself as a “kitchen-type person” who loves fun foods and fla-vorful spices.Medders has big plans for the family-runbusiness. He hopes to offer franchises toserve other areas across the state.

“If I can get that down,” Medders said,“who knows what could happen.”
