At Rosina cocktail bar, guests who visit between 9 p.m. and midnight are offered a treat — a Debauve & Gallais chocolate that specifically pairs with their cocktail. The confections were first developed in 1800 for Marie Antoinette and since have built a cult following among aristocrats, artists, gourmands and celebrities.

It is rumored that Vincent Van Gogh once bartered paintings for pieces of Debauve & Gallais chocolates. Pairing Debauve & Gallais chocolates with cocktails is certainly not new. They had a following among the Russian court, with the tsars traditionally favoring the 99% dark chocolates as an accompaniment to their strongest vodkas (more hidden secrets on page 30).

What happens when you blend the vivacious flavors of Peru with nuanced Japanese tastes? Answer: Once, pronounced on-seh, a new destination restaurant in Grand Canal Shoppes.

Once means “eleven” in Spanish — a number with significance for acclaimed Chef Ricardo Zarate. He was the eleventh child in a line of 13 siblings. In his hometown of Lima, he learned to love both traditional Andean comfort dishes and epicurean influences from Japan. It’s an extraordinary cuisine known as Peruvian Nikkei.

Once’s exquisite menu is built around 11 à la carte dishes that rotate weekly depending on what fresh, seasonal produce is available at the farmers’ market.

Guest favorites in Zarate’s repertoire include starters like the thrilling beef tartare adorned with popped kiwicha (also known as amaranth) and tamari dressing. For a gourmet meeting of land and sea, try the ceviche with its substantial slices of top-grade Bigeye tuna sashimi enhanced with black truffles.

Moving into entrée territory, Sudado de Mariscos is a fragrant stew brimming with fresh seafood in savory, beer-infused sauce.

Blend rum, simple syrup, strawberries, lime juice, and ice. Pour into a coupe glass. Garnish with choice of an edible flower or fresh basil sprig (or both).

A historic gondola brings the past alive in The Palazzo Waterfall Atrium, and innovative video art explores the digital future in The Dorsey.

The Palazzo's Waterfall Atrium is home to one of the most unique artistic displays in all of Las Vegas: an authentic 19th century gondola that once plied the canals and lagoons of Venice, Italy. At the impressive 36-foot-long watercraft, guests can imaginatively pull back the curtains of history a bit to see how Italians once traveled about the ancient water-ringed city on the Adriatic Sea. The boat was built sometime around 1850, and preserves features of Venice's early gondola fleet that disappeared by modern times, such as a louvered cabin known as a felze complete with love seat and tables. It offered prized romantic seclusion to passengers in an age without much privacy. Along with the ornate wood carvings that decorate the craft, this evocative nook indicates to historians and nautical enthusiasts that the gondola was used for wedding celebrations.

The stories it could tell across two centuries. One might wonder how a nearly 200-year-old gondola made its way to the land-locked Mojave Desert and the glittering Las Vegas Strip. It's still a bit of a mystery, actually. But, after being transported decades ago across the Atlantic Ocean, it successively became part of the menageries of two of vintage Nevada's most colorful collectors — casino magnate Bill Harrah and former Lieutenant Governor Dr. Lonnie Hammargren. The mysterious travels this one-of-a-kind, lovely conveyance made across continents and seas are charted in the atlas of the imagination. It now awaits new wonderment and historic selfies all spring long.

You can't miss Laura Kimpton's stunning LOVE sculpture in The Palazzo Waterfall Atrium-its monumental, ruby-red metal letters are twelve feet tall. Kimpton, who is known for her mixed media installations and sculpture, rose to distinction thanks to large-scale works that she debuted at the famous Burning Man festival in the Black Rock Desert of Northern Nevada. Her artistic vision arises from her desire to question traditional views on social interactions, and through her art she invokes reactions and discussions. LOVE, a piece from Kimpton's Big Words series, was originally featured at Downtown Las Vegas' Life is Beautiful festival before it arrived at its new home, The Venetian and The Palazzo.

The alphabetical figures feature symbolism on a human level. "LOVE is about being free to love who you want, the way you want," says Kimpton. "The bird stamps that perforate the letters represent every person's quest to follow their dreams, which is the message that I hope will inspire people as visitors interact with the piece. Las Vegas is the city where people pursue their dreams, and this sculpture will act as a touchstone for this pursuit." To add to the wondrous mystery of LOVE, Kimpton was born dyslexic, making her expressions of giant, gleaming letters even richer in meaning and beauty for casual observers and dedicated art lovers alike. Enjoy Kimpton's installation during your visit, and be sure to share your shots on social media as you declare what "love" means to you. It's a perfect backdrop for photos.

MEET THE MAN HIMSELF: BAZ LUHRMANNYou can learn a lot about artists from their childhood. When it comes to Baz Luhrmann — who rose to widespread international fame through his thrilling 1996 retelling of Shakespeare’s Romeo + Juliet — it might come as a surprise to learn that he was raised in a remote Australian town far from glitzy Hollywood. However, his mother owned a dress shop and taught dance, and his father ran a movie theater, so he was surrounded by creativity from his earliest days.

After studying acting at the prestigious National Institute of Dramatic Art in Sydney, Luhrmann embarked on a successful stage career. Next turning to filmmaking, he first gained recognition with the charming, dance-filled Strictly Ballroom. A few years later, the box office spectacle that was Romeo + Juliet launched him into the stratosphere of go-to directors. Next, he assembled the cast of Moulin Rouge to create the visually lush romantic tragedy set in a dreamlike Paris of 1900. In 2013, he reinvented another great work of art: The Great Gatsby, transforming F. Scott Fitzgerald’s masterpiece novel into an exuberant fountain of fantasy that transfixed moviegoers. All four films are noted for their lavish details and their artful blending of stage musicals and the silver screen.

He and his wife, designer and producer Catherine Martin, have two children and divide their time between Paris, New York, and Sydney.

Wheelchair GuestsIf you are in a suite and aware of a fire emergency, wait for instructions over the public address system. In the event of an evacuation, proceed to the emergency exit. Again, check doors for heat and corridors for smoke. If the door is hot, or if there is heavy smoke in the hallway, stay in your suite. If there is heavy smoke in the stairwell, either return to your suite or proceed to one of the other exits on your floor. If the emergency exit is safe, proceed to the stairwell landing and remain calm. Be careful not to block exit doors. Security will then respond and assist you.

Casino FiresIf a fire should occur in our casino, restaurants, meeting rooms, banquet rooms, or any of our attractions, immediately locate the nearest emergency exit. Remember to stay calm, do not panic, and follow the cautionary procedures in the Safety Services section of this directory.

Fire Safety Tips for All Our GuestsFor your safety and the safety of others, please review the following:

• Never smoke in bed or leave lighted cigarettes or cigars unattended

• Never empty ashtrays into wastepaper baskets or trash receptacles

• Remove appliance plugs from electrical outlets when not in use

• Immediately report any electrical malfunction or hazard to the Resort Operator

• Do not cook in your suite• Do not light candles in your suite• Report any floods and/or water leaks

Feel the Corridor WallsAs you proceed to the exit, stay close to the corridor walls and low to the floor if the hallway is dark and filled with smoke. The air close to the floor is clearer, cooler, and cleaner. Remember the number of doors to the exit and look for the emergency lights placed low on the wall near the exits.Exit CautiouslyTest the exit door with the back of your hand before opening it. If the door is hot, do not open it. If the door is cool, open it slowly and check for smoke. If there is thick smoke in the stairwell, immediately close the door and either return to your suite or proceed to the exit at the other end of the hallway. If the stairwell is safe, exit the building.

Avoid ElevatorsNEVER USE THE ELEVATOR DURING A FIRE EMERGENCY.

Emergency Exit DestinationsEmergency exits are to be used for evacuation purposes only. Stay calm and proceed cautiously to the ground level emergency corridors and exit the building.

Blocked ExitsIf your exit is blocked or filled with smoke, try the emergency exit on the opposite end of the hallway, past the center lobby of the floor.

If You Cannot Leave Your SuiteIn the event that you cannot leave your suite, it is important that you stay calm and think clearly. Fill your bathtub with water and wet towels, blankets, and sheets to place at the bottom of your guest suite entry door. This will help prevent smoke from entering your suite. Fill wastebaskets with water to re–moisten the wet cloths.
