Recipe #1: Simple rice and pea

Ingredients

1 medium sized can red kidney beans1 can coconut milk2 cups of rice1 small onion, chopped1 clove garlic, chopped1/4 teaspoon dried thyme1 table spoon oil1 scotch bonnet pepper (whole, do not chop up)water

How to Cook:

Separate the liquid in the can of bean and add water and coconut milk into the liquid. Pour in enough to make it fill 4 cups of measuring cups. Mix the liquid and pour it in a pot of beans, onions, garlic, thyme and oil. Add rice and keep stirring for one minute. Lower heat and add in 1 scotch bonnet pepper. Close it with a lid and wait for 30 minutes till the rice is cooked.


Recipe #2: Carrot sweet potato casserole

Ingredients

¾ cup grated carrots1 and 1/4 cups mashed, baked sweet potatoes (best done with American sweet potatoes)¼ cup flour with dash of baking powder and salt¼ cup vegetable oil and ¼ stick margarine1 cup milk¼ cup brown sugar½ grated nutmegsmall piece of fresh ginger grated

How to Cook:

Mash the baking powder, salt and four with the baked sweet potatoes. Add the rest of the ingredients inside the mixture. Mix until it blends equally. In the end bake it in greased casserole dish for 45-60 minutes in a 350 degrees heated oven.
