HOW TO PREPARE GARI FORTOR WITH VEGETABLE
INGREDIENTS
Chopped Onions
Olive Oil
Chopped Tomatoes
Chopped Mushrooms
Chopped Carrots
Chopped Green Pepper
Vegetable Stock or Water
Hot Pepper (to taste)
Eggs/Fish
Gari (Grated dried cassava)
METHOD
1. Cook the chopped onions and chopped tomatoes in the olive oil, stirring until pulpy, in a non-stick saucepan.
2. Add chopped carrots and fry for a few minutes. 3. Add chopped mushrooms, green peppers, stock and hot pepper. 4. Cover and simmer for 5-10 minutes. 5. Mix the gari (grated dried cassava) into the sauce in handfuls, stirring constantly
until all the liquid is absorbed. 6. Fry egg or fish depending on your preference. 7. Garnish with vegetable and serve.

METHOD
1. Put Shrimps in water with salt (to taste) into a pot of boiling water.
2. Reduce heat and allow (1) to simmer uncovered for 1 - 3 minutes or until the
shrimp turns pink. Watch closely to avoid overcooking.
3. Fill a stockpot with water and aromatics and add enough water to a large
stockpot to fill it at least 2/3 high.
4. Heat the stockpot over high heat until a rolling boil develop.
5. Add the Octopus. Cover and cook until it becomes tender.
6. Remove the Octopus from the water.
7. Mix the Shrimps and Octopus in one bowl and vegetables.
8. Garnish with other vegetables to serve.

1. Pour oil into the deep fryer. 2. Put a little flour into the heated oil 3. Put fish into heated oil 4. Fry until its becomes golden brown 5. Drain oil from fish 6. Garnish with Vegetables 7. Serve Fried Yam and Fish hot; could be eaten with ketchup/mayonnaise.
