8 oz buckwheat soba noodles

1 tbsp. BetterBody Foods Coconut Oil

1 cup red cabbage, chopped

½ red pepper, julienned

½ yellow pepper, julienned

½ cucumber, julienned

2 tbsp. cilantro, chopped

¼ cup crushed roasted peanuts

½ cup light coconut milk

1/3 cup PB Fit

1 tbsp. BetterBody Foods Agave

2 tbsp. fresh lime juice

3 tbsp. soy sauce

2 tsp. fresh grated ginger

½ tsp. red pepper flakes (optional)

Instructions:

Begin making the sauce by combining ingredients in a

medium-sized bowl. Whisk for 30 seconds. Pour about

half of the dressing over the soba noodles. Top the

noodles evenly with all of the fresh vegetables. Drizzle

the rest of the sauce over vegetables. Top with roasted

peanuts, chia seeds, and cilantro. Serve it as is or set it

aside for up to a couple hours.
