    Amish Chicken Corn Soup12 cups water2 pounds boneless, skinless chick-en breast, cubed1 cup chopped onion1 cup chopped celery1 cup shredded carrots3 chicken bouillon cubes2 cans cream style corn (24-ounce each)2 cups uncooked egg noodles cup butter1 teaspoon salt teaspoon pepper InaDutchoven,combinewater,chicken,onion,celery,carrotsandbouilloncubesand reduceheat toa simmer. Simmer uncovered for30minutesoruntil thechicken isno longerpinkandvegetablesaretender. Stir in the corn, noodlesandbutter and cookuntil noodlesare tender. Season with salt andpepper.

    Andys Beef Turnovers1 pound ground beef cup or jar of Heinz gravy cup bell pepper, chopped cup onion, chopped fine1 package crescent rolls Preheatovento425degrees.Stirfrymeatandveggiesuntilmeatisdone.Saltandpeppermeat.Draingrease off. Separate rolls, roll outflat and place equal amounts ofmeat in each and roll and spooneach one with equal amounts ofgravy. After this pinch each rolledges closed over and aroundmeat, like a pillow. Bake 20-25minutes.Heat other half of gravyandspoononeachonewhenreadyto serve. You maybe want extragravy for dipping. Serves 4 ormore.

    cup chopped onion cup fresh baby carrots cut into inch slices1 cup rinsed pinto beans1 cup chicken broth1 cup chunky salsa1 cup self rising flour2 Tablespoon cornmeal cup 2% milk2 Tablespoon shredded cheese In a large saucepan coated withcooking oil, saut the onions andcarrots until tender. Stir in beans,broth and salsa. Bring to a boiluntil tender. Bring to simmer forabout33minutes.Dumplings: In a small bowl,mix cornmeal, salt, flour, milkand cheese until moisten.     1/2 pound bacon1 cup chopped onion1 pound hamburger1 teaspoon salt1/2 teaspoon pepper3/4 cup brown sugar1/2 cup ketchup1 Tablespoon vinegar3 (15 ounce) cans butter beans3 (15 ounce) cans red beans (or kidney)3 (15 ounce) cans pork & beans Brownbacon;breakupintosmallpieces. Brown onion in a littleoliveoil. Inaseparateskillet inalittle olive oil, brown hamburger.Placeallingredientsinlargecrockpot and simmer on low 4 to 5hours.Willserve20.

    1 large green sweet pepper, chopped3 Tablespoon olive oil3 medium potatoes, peeled and chopped3 medium carrots, chopped4 cups beef broth1 cup water2 Tablespoon paprika1 Tablespoon sugar1 to 2 Tablespoon salt teaspoon pepper teaspoon cayenne pepper2 bay leaves1 can (6-ounce) tomato paste2 Tablespoon caraway seeds In a Dutch oven over mediumheat, cook beef, onion and greenpeppersuntilmeatisbrownonallsides.Stir innext10 items,coverand simmer 25 to 30 minutes oruntil potatoes are tender. Discardbay leaves and if desired, add adollop of sour cream on top eachbowlofsoup.

In a large bowl,whiskcornstarch,eggs,andheavycreamuntilcornstarchisdissolved.Stirinremainingingredients.Pourinto prepared casserole. Bake 40minutes or until knife inserted incenter comes out clean. Cover beans withcoldwaterandsoakovernight.NextmorningputthebeansandwaterinDutchovenandbringtoaboilandreduce heat.Cover and simmer for1hour.Stirinremainingingredientsandcoverandsimmerfor3hoursoruntil tender.Addmorehotwater ifnecessary.Serves8-12.

    cup sugar cup red cinnamon candies3 whole cloves cup orange juice2 Tablespoon lemon juiceOrange or lemon slices, quartered Washcranberries.Inlargesauce-pan combine the cranberries with3 cups of water. Bring to boil;reduce heat. Simmer uncoveredabout 5 minutes or until cranber-ry skins pop. Remove from heat;cool. Press cranberries through afood mill or sieve. Strain cran-berry juice through several layersof cheesecloth to remove smallseeds. In a 4-quartDutch ovenorkettle combinecranberry juice,theremaining5cupswater,sugar,cinnamon candies and cloves.Bring toboiling reduceheat.Boilgently for 5 minutes, stirring todissolve candies. Stir in orangeand lemon juices. Serves hot orcold.Garnish each servicingwithorangeor lemonslices.Makes10(6-ounce)servings.

    Andys Corn Salad2/3 cup dill pickle juice, vinegar cup sugar cup oil teaspoon salt teaspoon pepper1 jar chopped pimento with juice1 can yellow corn, with juice1 can white corn, with juice1 purple onion, chopped1 bell pepper, chopped1 cup celery, chopped Mix dressing (1st five ingredi-ents) in stew pot and boil for 5minutes.Setaside.Cool.Mixrestof ingredients together and chill

    until ready to serve. Drain. Takestewpotdressingandstirrealwell.Pour over vegetables and serve.Makes6ormoreservings.
