HolidayCocktailsForget the rickety bar set up on a

card table in the corner of the room. When it comes to holiday entertaining, the drinks you serve have become just as important, and intriguing, as the turkey on the Thanksgiving table or the gourmet amuse bouche you’re passing around. And whether you’re looking for the proper pairing, a signature cocktail for the holiday party, or just something smooth to sip in front of the fire of a cold winter’s eve, local wine shopkeepers and liquor store owners have just the right libation.

Franey from Domaine Franey said a nice match between your wine and food can be “heaven in your mouth.” He favors pairing turkey with lighter reds from the Piedmont region of Italy, a pinot noir from California or Oregon, or a dry Riesling from Alsace.

A visit to Franey’s East Hampton shop can turn into a mini-class in wine pairings. “We spend a lot of time talking with our customers,” Franey said, the goal being to match the wine to the meal and the customer’s personal tastes. In fact, Franey tracks sales and encourages customers to offer feedback on selections and vintages they’ve enjoyed.

And, since the type of glass can add to the ability to truly savor a wine, Domaine Franey carries a selection of crystal stemware. An inexpensive wine can taste so much better in the right glass, Franey pointed out. A set of crystal glasses makes a good gift, too.

Joann Braxl from Race Lane Liquors reports stocking wines that run the price gamut from $12 to $200. She characterized white Burgundies and red Burgundies as wines that “go with everything.” McNamara’s Liquors in Bridgehampton also offers an array of wines, and holds periodic tastings.

At Braxl’s shop in East Hampton Village, the holidays signal the start of “single malt season,” she said. Customers like to buy different styles of scotch from different areas of Scotland. “Scotch is always a big gift and something people like to have after dinner or the football game,” Braxl reported.

The addition of honey to bourbon has amped up its popularity as a sipping drink. Honey adds smoothness, without over sweetening the Jack Daniels or Wild Turkey, so those who wouldn’t ordinarily choose “hard liquor” and those who would, can both enjoy the new varieties.

Braxl agrees that in the last few years, “Everybody wants a signature drink to serve at parties. You don’t just set up a bar anymore.” She’s got the ingredients for trendy combinations, no matter how unusual.

The growing trend of signature drinks has given birth to some pretty unusually flavored liquors. Peter Swenson at Eastport Liquors reported Pinnacle has an extensive line of flavored vodkas that

even includes candy tastes like gummy bears and atomic red hots. Popular this time of year is the pumpkin pie vodka that tastes just like the traditional dessert.

Crafting and serving signature drinks doesn’t require extensive mixology skills anymore. And, unlike premixes that used to be added to the booze, now the booze already boasts built-in flavor. Swenson noted Bold Black Cherry Southern Comfort which, when shaken with ice, tastes like a classic Manhattan, as an example.

For after dinner, Swenson carries a pumpkin pie crème liqueur, and Kahlua iterations flavored with cinnamon spice or gingerbread. Sip it, or pour the Kahlua over plain pound cake and vanilla ice cream – yum!

People want drinks that are quick and easy to make, Chris Holmes from Hampton Bays Wines and Spirits affirmed. The notion of adding flavors to liquor started several years ago with rum, and seemed to branch out every year, to vodkas, tequila, (A bottle of Patron café would make a lovely gift for this reporter, if you’re reading, Santa.) and even whiskeys. Holmes carries whiskey that features the additional flavors of black cherry, tea, honey, or cinnamon spice. “All that stuff is huge for the holidays,” he said. Whatever goes well with coffee and hot chocolate is a hit.

Also popular this year is the Midnight Moon brand. “You can drink it warm and sit by the fire and have a little moonshine,“ Holmes suggested. Flavored with apple cinnamon or blackberries, it’s high proof and “warms you up real fast,” he informed.

Most brands offer recipes on their labels. Here’s one of my favorite “by the fireplace” treats:

Take one packet of instant hot chocolate (Swiss Miss makes a dark chocolate version that’s awesome), empty into a mug and fill two thirds of the way with boiling water. Add a jigger (or two) of coconut rum, and top with whipped cream and a drizzle of chocolate syrup. It’s instantly delicious.

And, a final note on the topic of quick and easy – Pope Liquors located on Route 112 in Medford offers free home delivery to the Hamptons, as does Hampton Bays Wines and Spirits.

love the holiday season, because audiences give the gift that really gives – we spend a small fortune filling movie theaters.

Kids are off from school, and parents go stir crazy with them playing video games, so the theater offers a dual respite – the kids can be shipped off to the movies in the afternoon and mom and dad can procure a babysitter and get away at night.

The studios play to both audiences. There’s plenty of G-rated fare for the young ones, and several provocative Oscar worthy films released with the discerning viewer in mind.

This season there is a glaring lack of Christmas-themed movies; in the past we’ve always had a few, even some nasty ones like Bad Santa. There are no releases the caliber of Rudolph The Red-Nosed Reindeer this year, but Rise Of The Guardians, which is partially set in Santa’s North Pole workshop, has its moments. The re-release of Monsters Inc. in 3D,

scheduled for December 19, is also a good fit for the little ones.

One surefire winner for kids and adults figures to be Peter Jackson’s The Hobbit: An Unexpected Journey which features some of the recurring roles from his last masterpiece, The Lord Of The Rings Trilogy, though newcomer Martin Freeman gets the title role. The fact that Jackson is stretching the novel out into three movies is disconcerting, but the previews have been solid.

The long awaited screen adaption of Les Miserables debuts on Christmas Day. The stage version, still going strong after 27 years, has been seen by more than 60 million people in 42 countries. Obviously, Universal Pictures is hoping for box office gold and multiple Oscar nominations. For one thing, Tom Hopper, who took home the trophy for The Kings Speech, is in the director’s chair. Hugh Jackman gets the coveted role of Jean Valjean. Russell Crowe and Anne Hathaway also star.

The studio (Film Four) is pushing Bill Murray as a Best Oscar nominee for his portrayal of FDR in Hyde Park on The Hudson, due in early December. The film is about a weekend the King and Queen of England spend at FDR’s Hyde Park retreat. It’s a little oft-kilter, and never quite finds its groove. Laura Linney and Olivia Williams co-star.

Tom Cruise makes his annual pitch for a nomination in Jack Reacher. He’s got a couple of things going for him this time around – for one thing, the director, Christopher McQuarrie (The Usual Suspects), is a good one. For another, the popular series of novels could prove a rich vein for the actor, who is just good enough to play a tough guy. When we think of Christmas time, and mistletoe and eggnog and kids caroling in softly falling snow – one performer that epitomizes Christmas comes to mind: Billy Idol. Huh?

HolidaySongsAccording to about.com, Idol’s

version of “Jingle Bell Rock” released in 2006 has somehow outflanked “White Christmas,” ”Jingle Bells” and the like on the list of Most Popular Holiday Songs.

Are these guys drinking too much grog or what?

Actually, Idol is merely Number Seven on the list, but ranked higher than most of the traditional renditions of the holiday classics. According to the writer, Bill Lamb (who’s he, anyway?) the most popular holiday song of all time is “Happy Xmas (War Is Over)” by John Lennon. Really.

The rest of the list is more traditional. Nat King Cole’s 1961 “The Christmas Song” is ranked Number Two. That’s the one with “chestnuts roasting on an open fire” for those keeping score.

In third place is Judy Garland’s version of “Have Yourself A Merry Little Christmas.” For trivia buffs, the tune was written for the 1944 musical Meet Me In St. Louis. The producers felt it was too depressing and ordered a rewrite of the lyrics -- it’s still depressing if truth be told, but what the hey?

“Oh Holy Night” by Celine Dion and Bruce Springsteen warbling “Santa Claus Is Coming To Town” – aren’t we sick of hearing that on the radio – round out the top five.

Billboard, the bible of the music industry, maintains Brenda Lee’s 1958 chestnut “Rockin’ Around The Christmas Tree” is the second most popular Christmas-themed recording of all time. The first? Who can forget Mariah Carey’s “All I Want For Christmas Is You?” Who can remember it?

We have our musical super groups: The Beatles. The Stones. The Who. But the third most popular Christmas song, according to Billboard, was a medley by, yes, the beloved Trans-Siberian Orchestra. That was in 1995, before drugs and alcohol ripped the band apart. Look for a reunion tour coming soon to your town – or not.

Speaking of super groups, Wham’s “Last Christmas” holds down ninth place. Incidentally, another radio staple, Jose Felciano’s “Feliz Navida,” came in at Number Five.

ASCAP, the American Society of Composers, Authors, and Publishers, released a list of the most performed Christmas songs of all time in 2006. “The Christmas Song” – you know, the chestnuts roasting – came out on top. “Have Yourself A Merry Little Christmas,” “Winter Wonderland,” “Santa Claus Is Coming To Town,” and “White Christmas” round out the top five.

Entering the top 25 for the first time was “Do They Know It’s Christmas (Feed the World)” by Band Aid – an all-star group of British rock musicians. That was 1984, and the group was formed by Bob Geldorf to provide aid to Ethiopia. Next they’ll be reprising the song to help out victims of Hurricane Sandy.

Bing Crosby’s version of “White Christmas” remains the best selling holiday song of all time, with an estimated 50 million records sold. Irvin Berlin wrote it in 1940 while holed up in a Hollywood hotel. He reportedly told his secretary, “Grab a pen and write this down. I just wrote the best song anyone has ever written!” That was before Billy Idol was born, of course, and Berlin apparently never heard of Trans-Siberian Orchestra, either.

The music crit ic Ben Rayner has compiled a list of the 10 Most Inappropriate Christmas Songs of all time. A lot of the songs have expletives we can’t print in the titles, but some songs that made the list include “Walkin’ Around In Woman’s Underwear” and “Christmas At Luke’s Sex Shop.” You get the idea.


HolidayYour Goose Is Cooked

Yes, turkey is a traditional holiday meal, but there was a time hereabouts when geese were the go-to birds. Long Island has always been a popular stop for migrating Canadian geese, and the holiday season usually finds an abundant amount on the East End to this day.

Local hunters can still enjoy a wild bird (check the DEC for hunting guidelines), but be forewarned: unless you are used to it, the birds can be gnarly and tough.

Better the wild geese go the way of the White House turkey (no, not that one) that is pardoned every year. Most of the specialty stores carry domestic geese that are more tender and plump. Have your butcher trim the excess fat and the tips of the wings, but save the giblets for gravy if you desire.

Wild geese can be as heavy as 25 pounds, but a good roasting goose should be no more than 12 pounds. Rinse out the cavities (Yes, the one where the head

used to be, too). Let the bird sit at room temperature.

To stuff or not to stuff? Well, you have to shove something up there. Some chefs suggest a whole onion, several carrots, or half a celery stalk. Martha Stewart suggests a combination of all three, along with thyme, garlic, sage, and salt and pepper.

Traditional stuffing will tend to soak up fat. If you want to go that route make it separately in a baking dish and pour some of the goose fat over it while both are cooking. We like corn bread, sausage, chopped celery and onion with some sage and parsley. Hint: chef ’s trick -- pour a jar of turkey gravy into it and two whipped eggs. If it’s still dry, add some cooking sherry and/or white wine.

Roast the bird (on a rack) at 400 degrees. Remove fat as it gathers on the bottom. Most people baste, but I prefer the skin crispy. Meanwhile, make a stock from the discarded goose parts

and selected giblets by adding them to boiling water, onion, celery, garlic and spices. Let it boil down, then place in a pan. Add a couple tablespoons of the goose fat, white wine, vermouth, sherry, and spices. Whisk in flour under medium heat until gravy begins to thicken.

At our house we prefer a little Oriental flair – serve the bird with traditional duck sauce, plum sauce, or even apricot or raspberry sauce. Better still, make some of each.

When the bird reaches 180 degrees internal temperature, it is done. Take it out of the oven, but let it cool before you begin to carve – this will redistribute the juices.

The traditional accompaniments are the classic medley of fall veggies – cauliflower, broccoli, and Brussels sprouts. You can roast the latter with some sprinkled bacon bits (real bacon crumbled up) and make an au gratin for the cauliflower or the broccoli with

melted cheddar cheese, bread crumbs, and butter.

Carve the goose, place the meat in the center of a platter, and arrange the veggies around it. Serve the stuffing and gravy piping hot.

This is a much tastier, richer bird. Keep in mind, the kids may find the meat a little gamey, but it is a rich treat indeed, and a small bird can easily feed six.

Back in the day the men would go out early to hunt their prey while the womenfolk picked and cleaned the veggies. There would be a hot fire and warm cider, spiked for the adults. Apple and peaches were abundant, so there would be pies and cobblers and of course, plenty of pumpkin treats. And yes, there are fresh cranberries that are just coming into their own this time of year – to this day. If you know where to find them, chances are you’re a local. As with beach plums, we tend to keep their locations to ourselves.

Do you make New Year’s resolutions? According to Statisticsbrain.com almost half of us (45 percent) usually do. On the other hand, 38 percent of us “absolutely never” make New Year’s resolutions. These numbers should be taken with a grain of salt, because some people resolve NOT to make resolutions.

The more pertinent statistic is that only eight percent of us achieve what we vowed to accomplish. This could be because we make our resolutions on New Year’s Eve when we are tipsy. It also doesn’t

say much for our resolve.What a re the mos t popu la r

resolutions? The usual suspects – to quit drinking, to stop smoking, and to lose weight. These all involve enormous amounts of willpower, and that’s where a lot of us go wrong.

Then there’s the old standby -- to read the Bible more. This used to be near the top of the list -- now it’s ranked 423, just after “Translate An Archie Comic Book Into A Foreign Language.”

Then there are the so-called “Green” resolutions that are all in vogue. They

include “Leave No Carbon Footprint” (which, when you think about it is a death wish), “Exercise More,” and “Eat Healthy.”

The so-called vegan movement may be catching on, but very few people vow to give up eating meat altogether, though many people resolve to eat less. Then again, come next summer when the barbecue season gears up minds change quickly.

High on the list of resolutions made by single people is, “Fall In Love.” Married couples give equal merit to “Avoid Court Order.”

“Spend More Time With Family” made the top 10 list of resolutions, except for egotists, who preferred, “Spend More Time Alone.”

After stop drinking, stop smoking, and lose weight came a variation of “Get In Shape” be it “Work Out More,” “Ride My Bicycle Every Day,” etc.

Some people took a business approach

to resolutions: “Get A Better Job” traditionally ranks high on the list of most popular resolutions, although in this economy “Get A Job, Any Job” is gaining steam.

Here’s one lawmakers in Washington might want to emulate: “Manage Debt Better” – talk about letting the horse out of the barn and then closing the gate.

According to Tara Parker-Hope of the New York Times most people ditch their resolutions by February 1. Kristl Hedges, writing for Forbes, opined, “We set all-or-nothing New Year’s resolutions that we can’t possibly keep, and frankly don’t expect ourselves to. Most resolutions are general, vague, and unrealistic. We don’t really believe we can hit them because we’re not committed to our own locus of control.”

Dr. Martin Seligman said one reason we don’t fulfill our goals is because in this country there is a “national mood of entrenched cynicism.” Hedges agreed, stating the “Pollyanna attitude of `accentuate the positive’ was washed away and never returned.”

Lauren Torrisi of ABC news thinks we set “unrealistic goals” and that we expect something “magical” to happen. Tinkerbell is dead and there is no Never Never Land – just ask Michael Jackson.

Want to make New Year’s resolutions and follow through on them? This year try and set the bar lower. Here are a few to work on: “Wake Up Alive,” “Remember To Breath,” “Mellow Out.” Hey, it’s a start.
