Hello!Can you believe that it is May already?! How time flies when you are having fun and boy are we having a great time here at Hillstone St Lucia...

With a Wedding Showcase, Cooking Classes, our new Wine and Produce Series, Mother’s Day and daily events for our wonderful customers and clients, the team has been busy creating, developing, coordinating and working around the clock!

We are also thrilled to announce the launch of our brand new website in conjunction with our 25 year anniversary celebrations!

Crispy Skin Duck & Grilled Peach Salad w fetta, watercress & vincotto

Delicious, light and so easy to make

- the perfect entree or main course!

Serves 4INGREDIENTS

4 confit duck Marylands250g marinated fetta, diced

150g trimmed watercress100ml vincotto

1 red onion, finely sliced4 peaches, grilled and quartered

1L vegetable oil50ml olive oil6 cloves garlic

1 orange, rind and juice1 bunch lemon thyme, chopped

METHOD• Preheat the oven to 200oC and cook the duck for eight minutes until crispy on the

outside.• In the meantime, combine the fetta, onions, watercress, grilled peaches, olive oil

and 50ml of the vincotto in a bowl, season well and then place evenly in the middle of each plate.

• Remove duck from oven and place on the salad, then drizzle with vincotto.

THE CONFIT• With a sharp knife, remove the knuckle of the duck (from the round end of the

Maryland).• Place the duck in a tray with the orange rind and juice, the garlic and lemon thyme

and then cover with vegetable oil and season well.• Cover with alfoil and place in the oven at 130oC for 3 hours.• Once cooked, remove the duck from the oil (you can reserve the oil for a later use).
