Hello!Welcome to June and the first month of winter. As the days get cooler, we are all set at Hillstone St Lucia with our gorgeous throw rugs and pashminas available for our guests, braziers lit out on the terraces and fire places aglow throughout the venue.
In this issue of Hillstone HARVEST we take a look at the first of our Real Wedding couples, Alison and James, after their beautiful celebrations in the Rosewood Room. We have a delicious winter recipe to try as well as an amazing Saturday night event offer at Saint Lucy! As they say, you only get one chance to make a good first impression and, as a guest entering a venue and event space for the first time, the visual layout, atmosphere and overarching appeal of the area more often than not stems from commanding and visually appealing centrepieces.
The focus of a centrepiece shouldn’t be the cost however. By thinking outside the square and being innovative in your design, it is possible to make a standout feature without breaking the budget (think; jam jars, recycled tins, salvaged wine crates, green apples, colourful citrus and even vegetables, herbs or homegrown plants).

Thick and creamy, the perfect winter
warmer to enjoy cosied up by the fire.
Ingredients3kg peeled pumpkin, boiled 2 tblsp ground cumin1 brown onion, chopped 2 tblsp sumac1 bunch coriander roots, chopped 1 tblsp cayenne pepper4 tins coconut milk 50g fresh tumeric, chopped2 tblsp ground ginger Olive oil2 cloves garlic
Method1. Saute the onion, garlic, tumeric and coriander root in a little olive oil.2. Once sweated down, add the dry ingredients and cook for 2-3 minutes, stirring so they don’t stick.
3. Add pumpkin and coconut milk. 4. Bring to the boil and then process until fine. Season well.
5. Serve with a sprig of coriander for garnish and crusty warm bread.
