manufacturing base. %ndia produces both CTC and Orthodo' teas in addition to green tea. The
eightage lies ith the former due to domestic consumers> preference. Orthodo' tea production
is balanced basically ith the e'port demand. +roduction of green tea in %ndia is small. The
competitors to %ndia in tea e'port are &ri 3an(a$ ;enya$ China$ %ndonesia and ?ietnam.
Tea is an agro-based commodity and is subjected to vagaries of nature. 1espite adverse
agro climatic condition e'perienced in tea gro ing areas in many years$ %ndian Tea +lantation
%ndustry is able to maintain substantial gro th in relation to volume of %ndian tea production
during the last one decade. There has been a dramatic tilt in tea disposal in favor of domestic
mar(et since fifties. 7hile at the time of %ndependence only 9 !.;gs or about 2#= of total
production of 0DD !.;gs of tea as retained for internal consumption$ in 0::< as much as

facing competition from &ri 3an(a and %ndonesia ith regard to e'port of orthodo' teas and
from China ith regard to green tea e'port$ it is facing competition from ;enya and from other
African countries in e'porting CTC teas. "ecause of absence of large domestic base and due to
comparatively small range of e'portable items$ &ri 3an(a and ;enya have an edge over %ndia to
offload their teas in any international mar(ets. This is one of the reasons of higher volume of
e'port by &ri 3an(a and ;enya compared to %ndia. Another important point is that$ 6.; has
substantial interest in tea cultivation in ;enya.
!ost of the sterling companies$ after the implementation of F*,A Act started tea
cultivation in ;enya. &o$ it ma(es business sense for 6.;. to buy tea from ;enya and ;enya
became the largest supplier of tea to 6.;. Tea is an essential item of domestic consumption and
is the major beverage in %ndia. Tea is also considered as the cheapest beverage amongst the
beverages available in %ndia. Tea %ndustry provides gainful direct employment to more than a

7hite tea is similar to green tea$ in that itEs undergone very little processing and no fermentation.
"ut there is a noticeable difference in taste. !ost green teas have a distinctive EgrassyE taste to
them$ but hite tea does not. The flavor is described as light$ and s eet. 8ou should steep hite
tea in ater that is belo the boiling point.
There is also considerably less caffeine in hite tea than the other varieties #Dmg per serving$
compared to K:mg for blac( tea$ and 0:mg for greenB. &ome studies have also sho n that hite
tea contains more active cancer-fighting antio'idants than green tea.
As ith all teas$ there are many varieties of hite tea$ ith poetic names such as4 hite peony$
golden moon$ silver needle and hite cloud. 7hite teas are produced mostly in China and Iapan$
but the 1arjeeling region of %ndia also produces some fine hite teas.

reen tea is nothing more than the leaves of the camellia sinuses that have been processed a
certain ay. reen teas$ li(e hite teas$ are closer to tasting li(e fresh leaves or grass than the
blac( or oolong. They are also lo er in caffeine and have higher antio'idant properties.
Preparation
First$ the green leaves are seen ho much o'idation should ta(e place before drying them out.
Tea leaves have enzymes in their veins. 7hen the leaf is bro(en$ bruised$ or crushed$ the
enzymes are e'posed to o'ygen resulting in o'idation. The amount of o'idation depends upon
ho much of the enzymes are e'posed.
Processing of Green Tea
The processing of green tea is similar to that of hite tea in that it does not o'idize. After the
leaves are pluc(ed$ they are sometimesB laid out to ither for about < to 0K hours. This lets most
of the ater evaporate. Then$ in order to neutralize the enzymes thus preventing o'idation$ the
leaves are steamed or pan fried. )e't the leaves are rolled up in various ays and tightness. After

that$ a final drying ta(es place. &ince no o'idation too( place$ the tea has more of a green
appearance. From there$ it goes off to be sorted$ graded$ and pac(aged.

"lac( teas are the most consumed of the four types of teas. They are the highest in caffeine.
"lac( tea is the most popular tea in the orld. %t is the tea most idely used in ma(ing iced tea
and *nglish tea. &ince the process of ma(ing blac( tea consists of three main stages$ Lcut>$ Ltorn>
and Lcurled>$ it is also (no n as C.T.C tea. After cutting$ the leaves are first spread on shelves
called ithering rac(s.
Air is blo n over the leaves to remove e'cess moisture$ leaving them soft and fle'ible. These
ithered leaves are then crushed bet een the rollers of a machine to release their flavored juices.%n the tearing process the cells of the leaves are e'posed and the o'idation process begins. They
are then ta(en to the fermenting room here under controlled temperature and humidity$ they
change into copper color. Finally they are dried in ovens$ here they are curled by heat and
become bro nish blac(.
%t is made by steaming the leaves in large vats. The steaming prevents the leaves from changing
its green color$ hence the name. The leaves are then crushed in a machine and dried in ovens. %t is
produced by using many of the same techniques that ere practiced centuries ago.

¢ed or Flo er tea is either green or hite tea that has been infused ith certain flo ers$
hich impart a delicate and interesting taste$ and of course a onderful aroma. As ith blac( tea
and mil( or sugar$ flo ers ere added to green tea originally to disguise a less than favorable
taste in the poorer varieties. This is still the case ith many commercially produced flo er teas$
hich hide the taste of very cheap tea behind a strong flo ery presence. Flo er teas$ in
particular the delicious jasmine$ have gained such a follo ing both in Asia and the 7estern
orld$ that many people only drin( this variety. The &even Cups jasmine teas combine really fine
quality green and hite teas ith a subtle but distinct jasmine flavor$ and are a real treat$
especially for dedicated jasmine fans. They are the best jasmine teas eEve ever tasted.

is best used to solve simple tas(s. They follo a flat hierarchy system.

Functional structure- This structure groups specialize in similar s(ills in separate
units. %t is ell suited to organizations ith a single or dominant core product
because each subunit becomes e'tremely adept at performing its particular portion
of the portion. Divisional structure- %t is formed hen an organization is split up into a number
of self-contained business units$ each operating as a profit centre.

there is a vertical line of authority running from the top to the bottom of the
organization. @ere$ the command is through a straight and unbro(en line. All persons at
the same level are independent of each other. The authority and responsibility of each
position is specified. The man at the top has the highest authority and it is reduced at

specialists.

3ine and staff organization is a combination of line and functional structures. 6nder it$
line authority flo s in a vertical line in the same manner as in the line organization. %n
addition$ staff specialists are attached to line positions to advise them on important
matters. These specialists do not have po er of command over subordinates in other
departments. They are purely of advisory nature. Thus$ staff positions are created to
support the line managers. *very staff specialist$ ho ever$ has line authority over the
subordinates in his o n department.

!atri' organization is a hybrid grid structure herein pure project organization is
superimposed on a functional structure. %t is a t o-dimensional pattern developed to
meet the problems of gro ing size and comple'ity of underta(ings. &uch underta(ings
require an organization structure more fle'ible and technically oriented. !atri'
structure has been defined as Many organization that employs a multiple command
system that includes not only the multiple command structure but also related support
mechanism and an associated organizational culture and behavior patternN. Thus$ a
matri' organization is characterized by an overlapping of command$ control and behavior patterns. %n this organization$ there is a permanent functional set up. %n
