One of the things I look forward to when I visit my sister-in-law is seeing the progression of her latest home improve-ment projects. Her and her handy husband have replaced or refinished almost everything inside and outside of their four-level backsplit. The long list includes new flooring, countertops and backsplashes. The couple removed tired, oak railings and replaced them with glass, instantly creating a more open-concept feel.

On my last visit, I came face-to-face with the power of paint. Instead of embarking on a complete renovation of their lower-level bathroom, they decided to do a temporary,

quick fix. By adding a fresh coat of Benjamin Moore (OC14 – Natural Cream) over the existing cool medium grey, a simple, stylish light fixture and a large abstract print, the result was amazing.

This transformation became the inspiration for our “Designer Picks” on page 39. In this two-part series, Sue Kay and Cynthia Grassing – two popular local paint experts and designers – offer the perfect palette to create stunning results in your own home with colour choices for virtually every room.

Nested within lush greenery, steps from Lake Simcoe, Cole Leibel of Big East Construction Inc. and interior designer wife Kristylynn Leibel de-signed their Innisfil home with the highest level of perfection. Being experts in their fields, they de-scribe the task as a blast rather than a challenge.

Using the outdoors as their inspiration, they designed their 4,300-square-foot bungalow in a horseshoe-shaped layout stretched on a 5.5-acre lot.

The height of it takes your eyes to the rustic ceiling finished with reclaimed grey barn boards, which Cole had to carefully dissemble from an old barn they bought.

of the island adds a French country style to the kitchen. With four backless stools tucked underneath the bar area, the spacious granite surface is great for prepping food or entertain-ing. Above that hangs an antique pot rack. It’s definitely a statement piece in the area.

The spaciousness and openness to the rest of the main floor allows Kristylynn and Cole to comfortably work in the kitchen together. They both love to cook and entertain.

“It’s also perfect for the baking Christmas party that I host every year,” says Kristylynn.

That’s the time when she gathers 10 or more of her girlfriends and they bake all kinds of yummy treats for the holidays.

The beige Versaille patterned tumble marble floor in the kitchen blends easily with the light stained maple floors in the rest of the great room.

Despite the popularity of dark wood floor-ing, light to medium-tone hardwood stains will be the new, up-and-coming trend, says Kristy-lynn. Not only is it perfect when used with neu-tral shades, but it’s also a lot easier to maintain, especially for homeowners with pets, she says.

“We wanted to make the house feel like it was part of the land”, says Kristylynn.

This is why a modern rustic style with lots of natural material was most fitting. The neutral tones of crème and grey throughout the house bring a natural elegance into the space.

“I wanted it to be busy with layers of texture rather than colour,” says Kristylynn.

Aminal print throw pillows on the sofas mixed with the aged wood coffee table are used as ac-cents to add a classic touch with a clean modern style. “It creates visual interest but it won’t date with a few minor updates,” she adds.

In the powder room, stone-like wallpaper is used. It looks and feels like stone to touch.

“Elegant textures and patterns in wallpa-per are definitely making a comeback,” says Kristlynn.

But that’s not it for natural texture. To bring the outdoor atmosphere into the house, the walls facing the backyard are all stone mirrored from the outside.

“We took the same natural stone used on the outside of the house and cut it into stone veneer to bring an outside-indoor look,” Cole says.

This look, around their salvaged wood Resto-ration Hardware dinning table, gives an elegant patio feel to the space. The table comfortably seats 12, which is perfect for the couple’s love for entertaining. To light up the space, two re-wired antique chandeliers are installed right above the dining table. They’re among many well-aged pieces of décor found in this home.

Once outside, there’s another seating area around the exterior side of the great room’s fire-place. Unlike the indoor side, the exterior one is not gas. It’s a wood fireplace for a romance campfire style. It’s also perfect for roasting marshmallows when they have friends over, says Kristylynn.

“We took the same natural stone used on the outside of the house and cut it into stone veneer to bring an outside-indoor look,” Cole says.

Above the fireplace there’s a television in ad-dition to the other two in the great room and the dinning room. When we have the guys over, it’s fun for Cole to have the game playing in every room and even outside, says Kristylynn with a giggle.

Back inside through one of the 12 exterior French doors, the couple’s master retreat awaits. Tucked away on the other end of the bungalow, their master bedroom is comparable to a luxuri-ous suite in a high-end European hotel.

Across from the bed, the classic-designed fireplace is again the focal point. The drywall compound fireplace was inspired by a look they found in a magazine.

“It was a fraction of the cost of limestone, but it was finished to look just like limestone,” says Kristylynn.

Down the hall, passing a couple more French doors, there’s the ensuite bathroom. With a freestanding double-ended soaker tub and spa-cious shower with a rain showerhead, the space is comparable to a lavish spa.

In the middle of the bathroom, a rug-like graphic design is done using mosaic tiles. The same pattern is seen again in the shower. This brings enough colour and elegance into the area without the need for bath accessories. Con-necting to the ensuite bathroom is the couple’s dressing room.

Farther down the hall are two other rooms. One is a guest room decorated in white and ac-cents of earth tones. The theme creates a calm-ing atmosphere in the room. The other is Kri-stylynn’s office.

Connecting these two rooms is a Jack and Jill bathroom. In there, it’s easy to realize just how much the two considered every small detail in designing this home. They thought about little things such as using grey grout between the marble tiles to match the two grey cloverleaf framed mirrors above the double sinks.

Back in the hallway, puddled beige draperies cover some of the French doors, creating an in-teresting casual look. The subtle French coun-try touch throughout the home keeps the space casual yet creates an elegant ambiance.

To bring out more of their playful person-alities, the couple added a number of authen-tic vintage advertising posters throughout their home. Many of these were brought back from


their favourite vacationing destination, Key West, Florida. It’s another form of antiques they enjoy collecting.

They’ve picked out the right amount of an-tique pieces to mix with their modern style to help create a sophisticated, chic European look.

Downstairs along the black brass railing, which aged as a fence centuries ago, is the cou-

ple’s ultimate entertaining hub. Two rows of three theatre-like reclining black leather chairs face the large screen in their very own enclosed home theatre.

With the back row raised higher and the sidewalls adorned with framed movie posters, this space imitates a real movie theatre, yet in the convenience of their home. And with the vintage-looking popcorn machine right out-

side, this space is set for the movie to roll. But that’s not it of technology. Cole has the

entire house wired with a surround system con-trolled through their wireless devices, such as their iPhones and iPads. It’s perfect for throwing house parties.

With all the perfections in this home, it only took six months for Cole and his crew to build this gem. Working well together with Kristy-lynn was key in achieving the look they want-ed. Having done so many times before, this task was quite simple.

“We communicate very well together and that’s key between a builder and an interior designer,” Kristylynn says. Because they’re so passionate about their work, design is often the forefront of their conversations, she added.

They’ve had enough opportunities to learn about what they love and prefer in every aspect of exterior and interior home design. Their new home is a canvas of their favourite style.

attached to this place,” observes 31-year-old carl Viveiros, who runs the country

inn and dining facility with his mother helene. “they get a real kick out of the wine

cellar located within the building’s original 150-year-old bank vault.”

recently, this GoodLife reporter caught up with Viveiros and a taste of free-

dom’s red seal chef Dave onciul. here’s how the conversation unfolded.

GL: What led your mother (Helene Viveiros) to open a country inn and restau-rant?

CV: Sixteen years ago, my mother bought this Victorian century home because she saw its potential -- both as a dental office for my step-father Gary Magder and as a great location for a restaurant and inn. She’s really into interior design and restoring this charming and historic gem was an inviting challenge.

GL: The place looks great! I love the clay brick exterior, decorative white balconies, the elegant entrance, and the beautifully maintained grounds. Let’s hear about the in-terior.

CV: Paying homage to its rich historical roots, it’s full of collectibles and country heirloom pieces. There are four dining rooms, each of-fering a unique dining experience. The varying decorations feature a tasteful blend of fabrics, textures and antiques. The atmosphere is both elegant and casual. Our indoor dining capacity is 70 people. Diners also love our vintage wine barrel dining room bar. It has a wooden table-top and can seat eight people.

GL: What about the beautiful handcrafted clay ceiling in the main dining room?

CV: It dates back to1926, and it’s history is pretty colourful. The story goes that it was built by a Chicago tradesman who was working in the area. The tradesman needed a place to stay, so the owners of this house commissioned him to construct the ceiling in exchange for room and board. Apparently, it took the guy a whole year to finish it.

GL: Along with historic charm, folks also come for the food. Let’s hear more about your restaurant. How would you describe the cuisine?

CV: Traditional fine dining. We keep our menu small, and everything is fresh. We are known for surf and turf on Saturdays and prime rib on Fridays.

GL: Now over to the chef. What’s your cooking philosophy?

Dave Onciul: Whatever you do, make it the best you possibly can. Use only fresh, high quality ingredients and locally grown when available. I’m also very presentation driven. Ev-erything has to look as good as it tastes.

GL: What three-course meal would you recommend?

riander citrus sauce), followed by the braised New Zealand lamb shank with a natural pan jus. For dessert, I’d try the lemon curd with a fresh blueberry sauce.

GL: What are some of the house special-ties?

DO: I’ll answer that question by telling you what I simply can’t take off the menu. People would get into an uproar if I removed the baked brie appetizer or the lamb shank. Diners would also be very upset if we took off the Caesar salad, clam chowder grilled fish and the grilled pork ribs with beer chipotle barbecue sauce. All of those items are super popular.

GL: What about your culinary training?

DO: It’s mostly French provincial with mod-ern day contemporary cuisine mixed in. Be-fore my 10-year stint in this kitchen, I trained at George Brown College and have worked at various restaurants, including Toronto’s King Edward Hotel, Windsor Arms and the Millcroft Inn -- to name a few. I have also worked in the UK and in France. Overall, I have over 35 years of cooking experience.

GL: Tell me about your French training.

DO: Years ago, I spent some time in a small French town (near Dijon) honing my research on dishes from the Burgundy region. I was helping out in some of the local restaurants, so


I guess you could call it a prolonged chef’s va-cation. It was a great learning experience, and many of those dishes and cooking techniques show up on the (Taste of Freedom) menu. For example, I use French classical braising cooking techniques.

GL: What about the dessert menu?

DO: Everything is freshly baked in-house. I’m basically a self-trained pastry chef, who re-ceived plenty of on-the-job training courtesy of a French chef who I worked with at a Toronto restaurant. I’m constantly tweaking the dessert menu, but some of our most popular sweets include: creme brulee, chocolate truffl e cake, profi teroles, carrot cake, chocolate mousse and apple crumble.

GL: What led you to become a chef?

DO: Growing up in Alberta, my Polish grand-mother had me in the kitchen all the time. I just

loved it. She taught me how to bake and make pastries, and the experience got me thinking about a chef’s path.

GL: A Taste of Freedom hosts various special events. Anything interesting in the works?

CV: We are very excited about our special events. Over the past year, we’ve hosted every-thing from ladies’ martini nights to beer tasting events. We also do wine tastings four times a year. We pick a region (such as Italy or France) and pair a full-menu to the wines of that area. The next one we are doing is “South of the Equator” featuring food and wine from Chili, Argentina and Australia. We even have a som-melier on-site to explain the wine and food pairings.

DO: It’s great fun coming up with these menus, and our diners really enjoy these nights because they always sell-out.

GL: Any specials diners should know about?

CV: We have prime rib Friday nights ($25) and a soup and salad with a pasta dinner on Wednesday nights.

GL: Let’s hear about the wine list.

CV: Our wine list is impressive. Wendy Votto (mother of Major League Baseball player Joey Votto) is a Toronto-based sommelier and she helps us create our wine list. She also conducts our wine tastings. It’s kind of neat because she always brings signed autographs of her famous son and we give them out as prizes at our events. Wendy is really great and our diners enjoy her wine knowledge.

GL: A Taste of Freedom is also a country inn with overnight accommodations. Tell me about the bedrooms.

CV: There are four guestrooms, and my mother has decorated them according to themes -- Victorian, hat, doll and teddy bear. They’re all very tastefully decorated in a country-style set-ting.

GL: Getting back to the history of the place, any interesting tidbits you’d like to share?

CV: Well, some say this place is haunted, but I’ve never had an encounter (he smiles). Many people over the years have claimed to have spotted a ghost -- an older gentleman wearing a long, red trench coat. A few years back, some ghost chasers came in and rented the whole place to see what they could find. They even set up monitors and cameras all over the building, but I don’t think they came across anything. Or, at least -- they never told us. Anyway, I can see why they liked the place because it’s an older building and it has a ghostly feel to it.

GL: You’ve got the ear of thousands of area diners. Anything else you’d like to mention?

CV: We have a stunning backyard perfect for outdoor weddings or parties. It’s licensed for 120 people and has a stage, two patios, flag-stone paths and an open air bar. I should also mention that the gardens are truly beautiful. My stepfather is both a semi-retired dentist and a full-time gardener. The grounds are really beau-tiful thanks to his green thumb.


Spending time outside can be fun, relaxing and en-joyable, but it can be difficult and frustrating to make the most of our outdoor spaces. In rural areas, it’s the stunning trademark of the Canadian landscape – rugged, wooded grounds everywhere – that creates this love-hate relationship. We’re privileged to have the phenomenal views, but these are often difficult grounds on which to live and play. In the city, most of us are limited to small back and front yards that require quite a bit of creativity to yield maximum enjoyment.

Despite this, as a landscape designer, I’m always tell-ing clients to create usable space outside their homes to make the most of their land. At a recent speaking en-gagement, I asked the audience if they understood what I mean by ‘usable space’. Much to my surprise, one person put up his hand and suggested that the lawn was a good example of usable space. Good answer, but, like this per-son, many people tell me they use their lawns only for their kids to play.

Usable space, to me, is an area that can serve many pur-poses. I prefer spots that can hold furniture. Whether it’s a deck or patio, I want an outdoor space that allows me to accommodate friends and family, with the flexibility to change and rearrange it to meet my needs. If you’re lucky enough to live in a lush wooded area, you probably want something that lets you maintain the natural beauty of your property while allowing for space to entertain.

This spring/summer, I decided to maximize my usable space by building a deck. I wanted something versatile

that complemented the existing land-scape on my property. Here are some tips for creating an outdoor space you can enjoy:

Work With the terrainAs a seasoned landscape designer, I’ve built

a lot of decks. Building on a nice, fl at surface is no problem. Build on a hill or rugged terrain, on the other hand, and the art of deck building becomes an uphill battle – pun intended.

I’m committed to maintaining the natural beauty of any space I build on. Rather than altering the terrain – leveling off hilly areas or building concrete retaining walls – I try to work with the land. I’ve fallen down and probably even up hills at the hands of Mother Nature.

If you’re building on a hill, remember that the height of the deck at the furthest point away from your home can be very deceiving. Between digging postholes, carrying supplies, and hang-ing joists and ledgers, working on uneven sur-faces becomes a two-person job. If you’re lucky enough you’ll be able to enlist a neighbour to help in exchange for a few cold drinks and a burger.

For my own deck I focused on a few specifi c criteria:

The deck should be as low-maintenance as possible. This space is for enjoyment and relaxation, so the less work the better. Make environmentally friend-ly choices – minimize your ecologi-cal impact to keep the land beautiful.Total cost is important, so have a budget and try and stick to it. After careful research, I went with a new wood product called MicroPro Sienna for my own deck. Here’s why: MicroPro Sienna uses a treat-ment process that leaves the wood looking just like the more expensive option – cedar. The treatment process repels fungal decay, termite damage and just about anything the harsh cli-mate can throw at it.

The wood naturally fades over time into a beautiful driftwood grey colour. That means that if I don’t want to treat it or stain it, then I don’t have to. I also love the fact that it has received several environmental accreditations. It’s safe for children and won’t bleed toxins into lakes or nearby water. Most importantly, this product is one of the most economical woods available… it’s the same price as the green stuff.

buiLD for your neeDsHow do you want to use your outdoor space?

Yards provide you with more than just a place for your kids to play, and decks can serve as so much more than an outdoor dining space. Think about features that add utility. If you have a clearing, free of overhanging branches, why not build a fi re pit? On my deck, I built a wooden frame with the same materials I used for my deck. I then created a platform out of four cement blocks and poured in gravel to dif-fuse heat. Now I can cozy up with friends and family on crisp Canadian evenings and enjoy the warmth and crackling of a beautiful fi re.

Ask yourself what space on your property could be better used. Your outdoor space can become a playground for your whole family, rather than just an empty yard for your kids to play. I built a stunning deck that looks like ce-dar, is safe for both my family and the environ-ment, and I came in under budget. You too can enjoy your outdoor space no matter where you are or what you have to work with.

There’s lots of storage space within all four sides of the island, a luxury the kitchen lacked before.



the kitchen is one area where you likely spend most of your day. Whether it’s prepping food or entertaining guests, this space needs to be functional and practical.

When the homeowners decided their kitchen was due for uplift, they knew exactly what they needed to make it a more comfortable - more space.

Not sure exactly where to start or what to get done first, the project seemed huge. So they de-cided to get help from the pros. Many of their friends recommended Designers Plus, so that’s where they went. There, they met designer Elke Bradford.

With Bradford’s easy personality and upfront approach, they felt comfortable enough to hand

her this extensive project. And she definitely delivered.

“We wanted to open up the kitchen and get more natural light,” said the homeowner.

So Bradford decided to remove the main wall separating the kitchen from the eating area to allow for a more open concept feel.

To bring in even more light, the entrance to the family room was widened to allow both spaces to better flow together. This also brought in more natural light from the family room’s windows.

After doubling the size of the kitchen, there was plenty of space to add an island. For years, they did not have enough counter space to do much in the kitchen. The five-foot by nine-foot granite-topped island is now not only spacious for getting meals ready, but also the perfect space for getting work done or reading.

A cooktop range is built into the island on the side closest to the sink. The stainless steel appliances are all brand new from Miele.

“It’s great to finally have a dishwasher,” said the owners.

The white granite countertops blend very well with the grey cabinets from Designers Plus. The fancy name for this stunning colour is Oys-ter Concrete. There’s lots of storage space within all four sides of the island, a luxury the kitchen lacked before.

Adjacent to the island is the under mount kitchen sink with the high arch brushed stain-less faucet. It sits right below the window peak-ing out to their lush green backyard. An inter-esting colour combination of mosaic tiles wrap around the window. The glossiness in these tiles makes a great focal point that immediately pull the eyes straight to the outside view.

“I had no working area before but now this is perfect,” said the homeowner, who doesn’t feel like she’s in a boxed kitchen isolated from the rest of the main floor anymore.

While in the kitchen, the television across from the island provides great entertainment. It’s also convenient for watching food shows while cooking.

as the cabinets, the unit blends within the kitchen, making it seem part of the room. This helps widen the area even more. It was installed on the outside wall of the powder room, which is another area that got quite the uplift.

Similar to the kitchen, the powder room was also lacking space. To get more room without compromising the newly expanded kitchen, Bradford eliminated the front closet and took the space into the powder room.

She then added wall cabinets around the toilet. These custom cabinets are great because they make use of space that may otherwise be wasted and it ensures the couple still has the storage space they need. There’s also more space in the vanity cabinets.

Bradford used the same grey tone for the bathroom cabinets as the ones in the kitchen. This helps blend the same style throughout the main floor. Also, this shade complements the stain of the exposed beams quite well.

The area was literally renovated from floor to ceiling. The floors were all ripped out and re-placed with porcelain tile. And to add modern looking pot lights, the ceiling had to be dropped to allow for wirings.

Starting an extensive renovation project such as this usually never ends with what you originally plan. They decided to also paint more walls around the house and update the base-ment carpet. The stairs to their basement were also redone.

In the end, their entire renovation project involved a 700 square feet worth of newly im-proved space. Twenty years ago, this house was built with posts and beams from an old barn. The biggest challenge in design was working out an elegant modern style that still flowed well with the exposed rustic wood in the area. It was about mixing modern with country and keeping it chic, all at the same time.

It took three months for the whole project to be complete. During that time the couple had to cook using only their barbecue and micro-wave.

“We would do the dishes outside under a hose,” said the homeowner.

There’s no denying they’re excited to finally have a functional space that’s a better fit for them.

perfect time to explore farm markets. With that in mind, we toured four nearby

farms and asked growers to share their favourite fall recipes. along with

mouthwatering culinary submissions, the farmers interviewed offered up delicious

details on their markets including the latest news on seasonal events,

interesting crops and tips on enjoying this season’s bounty.

PreParation: Preheat oven to 375f. Grease a 2L 1.

for 35 to 40 minutes, uncovered, or until

fruit is bubbly and top is golden brown.

RASPBERRY CRISP

Farm fresh goodness is on offer at Barrie Hill Farms. “We are southern Ontario’s leading farm destination for excellent berry picking, farm fresh food, and fun family outings,” says Morris Gervais of Barrie Hill Farms.

Along with picking fi elds loaded with straw-berries, raspberries, blueberries, pumpkins and more -- Barrie Hill Farms showcases a 3,600-square-foot farm market.

You can enjoy fresh country air and peace-ful scenery while shopping for seasonal berries, fresh local produce, homemade pies (fresh or frozen), maple syrup and various fi eld crops.

“We also grow our own tomatoes, canta-loupes, melons, peppers, fl owers, squash and pumpkins, to name a few,” says the local farmer, whose family has been operating the farm for the past 40 years.

Local food lovers are in for a treat at Fernwood Farms and Market, especially during harvest season.

“We are famous for our pumpkin pyramid,” admits Krista Ward who owns and operates the Stayner-area 110 acre farm and farm market with business partner Kevin Ward.

“It’s so cool to see over 600 pumpkins light up the night sky!”

Beyond pumpkins, the red-roofed farm market proudly carries 90 per cent local, Ontario and Canadian products. Shelves are lined with harvest fresh fruits and vegetables, fresh bakery items (including gluten-free choices), meats, local milk, ice cream, preserves and a variety of gourmet and giftware items.

“We even sell honey from our hives,” says the local farmer. “Visitors also love our old style donuts that we make in the store on weekends, and our famous ‘pie baked in a bag.’”

During the growing season, the farm also offers U-pick crops of strawberries, multi-coloured raspberries, blueberries, currents, blackberries and pumpkins (call ahead for picking times and dates). The market also carries a wide variety of Georgian Bay apples from local growers.

This year’s pumpkin pyramid lighting is Oct. 26 from 7 to 8:30 p.m. Night wagon rides to the corn maze and Pumpkinland to follow the pyramid lighting. Pumpkinland features wagon rides, a corn maze, games, mini putt, pumpkin hunt, pick your-own-pumpkins, play area and animals. It’s open October weekends from 11 a.m. to 5 p.m.

PREPARATION: Preheat oven to 325f. Line a 9 x 13-inch pan 1.

make the fi lling. snap the remaining oreos in

half, put them in the food processor, and turn

on and off quickly a few times, just until the

cookies are roughly chopped (set aside).

for the fi lling: in a large bowl, using an 4.

electric mixer on medium speed, beat the

cream cheese and sugar until well blended,

about two minutes. scrape down the sides

and bottom of the bowl with a fl exible

spatula and beat again until uniform. beat in

pumpkin, vanilla, pumpkin pie spice, and salt.

scrape down the bowl and mix again. add

the eggs, one at a time, beating well after

each. after beating in the last egg, scrape

down the sides and bottom of the bowl and

beat one more time, to make sure the mixture

is fully combined. stir in chopped oreos with

the same spatula.

Pour the cream cheese mixture over the 5.

baked cookie crust, smooth the top with the

spatula and bake for 40 minutes, until the

fi lling is set around the edges but still slightly

wobbly in the center when you gently shake

the pan. remove the pan to a wire rack to

cool to room temperature, about one hour.

When cool, cover it with foil and refrigerate

until well chilled, at least three hours or

overnight.

to cut, use the foil overhang to lift the 6.

cheesecake out of the pan and place on a

large cutting board. use a sharp chef’s knife

to cut the cheesecake into bars, rinsing off

the knife with hot water and wiping it dry

between each cut. keep refrigerated until

ready to serve. serves 10 to 12 people.

3 packages (225 grams each) cream cheese, at room temperature

3/4 cup granulated sugar

1 cup pure pumpkin, room temperature

2 cups chopped onions

1 cup chopped red peppers

1 cup chopped green pepper

1/4 cup pickling salt

3 cups sugar

2 tbsps dry mustard

1/2 tsp celery seed

2 cups white vinegar

PreParation: in a large bowl, combine cucumbers, onions,

peppers and salt. Let sit overnight.

Drain the mixture and place in a large heavy

bottomed pot. add sugar, dry mustard, celery

seed, mustard seed, tumeric and vinegar;

mix together until combined. bring to a boil,

stirring until thickened and sugar is dissolved.

if mixture seems too runny, you can thicken with

cornstarch.

Gardeners and local food lovers can’t miss a visit to Garrett’s. Owned and operated for 33 years by the Garrett family, the country market sells a wide range of farm-fresh wholesome foods, including fruits and vegetables, organics, fresh baking, specialty cheese, eggs, jams and more. Owner Jeanette Garrett says she’s particularly fond of the harvest season. “I love the smell of the apples and the colours of freshly picked vegetables — the reds, the oranges and the greens.”

The local farmer is also sweet on fall weather. “There is less humidity and the mornings are fresh and cooler. It’s like an envelope of closure to the hot summer months that we’ve worked through.”

With respect to managing the bounty of the harvest, Garrett advises leaving some canning until the winter months. “If you don’t have time to make jams and jellies during the growing season, just freeze the fruit and make your jam on a cold snowy wintery day in January. It warms up the kitchen and the wonderful smell of the jam cooking will remind you of summer.”

“I can remember quite clearly at the age of three learning to draw my thoughts,” he says.

The artist has travelled the world and mas-tered the visual arts, is an architect, furniture designer, and poet.

About 18 months ago, Gavigan moved to Tottenham and in July opened the doors to the School of Fine Art (SOFA). Inside his small space on the community’s main street Gavigan

is displaying his artwork. In September he will start offering fine art courses. Initially the class-es will be offered as part time, evening classes, but he has big dreams for the school to grow into a fulltime endeavour.

Even though he has high hopes for his school, he is a realistic artist. He’s made a life out of his creativity, whether it’s a painting a portrait or designing a building. And it’s his approach that

has helped sustain him through the years.“I’m not the kind of artist that just paints for

himself,” he says. If someone wants a painting of something specific, Gavigan will do it.

“Being an artist is a skill and a trade, you have to learn your trade,” he says. An educated man, Gavigan has a score of letters behind his name that serve as a reminder to his education and accomplishments. He says those letters aren’t what make an artist though.

Undertaking a project is a thought-filled pro-cess that means connecting with the subject. “Inspiration is more than just looking at some-thing and liking it, it’s having something to say about what you’re looking at,” he says.

The depths of Gavigan’s inspirations are dis-played on the gallery walls lined with wildlife, nudes, portraits, scenery and still life paintings. Each has been brought to life with watercolours, acrylics, and sketches. “I don’t believe an art-ist should have just one medium,” he explains. When painting, he says his challenge is to stick-ing to one medium. He admits, for example, that using oil paints he’s often tempted to put in pastels.

With countless finished masterpieces in his wake, Gavigan is still exploring his creative boundaries. He passionately explains a new project he’s working on of a historic Italian hairstyle. He’s found a model to sit for him, a woman has knit a one-of-a-kind cap, and he’s indulged in historic research to satisfy his curi-osities. It’s not a commissioned piece, but is one that is satisfying his artistic desires.

Amid organizing his gallery and artwork, Gavigan is plotting curriculum for SOFA. He’s

had a well-travelled and diverse career — from 10 years in Norway, where he established an art school, to being a published poet— but says he is focused on the fine art school right now.

He secured the gallery space through Re-New New Tecumseth, a new initiative aimed at breathing new life into downtown Alliston, Beeton and Tottenham.

Downtown property owners with empty storefronts are partnered with entrepreneurs, who set up in the space on 30-day rolling con-tracts. The aim is to have the entrepreneurs cre-ate a sustainable business. For property owners, the goal is to have long-term leases signed for empty storefronts, whether it’s from a partici-pant or someone stumbling on the space while checking out the small business.

SOFA will have a bit of an unconventional itinerary. Instead of art courses that are offered in 10-week installments, Gavigan’s will run from September to June. Students will learn the technical aspects of their medium (such as how to keep colours from changing over time or the formula for fixing a misplaced brushstroke) as well as artistic theory.

Gavigan says his potential students come from all walks of life and can be 15 or 96. “If their brains are clear I’ll take them in, I don’t care what they know or what they can do, I’ll take them in,” he says.

He’s confident his approach will catch on. “If people are serious and want a serious art educa-tion, they’re on a journey of self through artistic expression,” he says.

1/ Oysters Rockefeller and New Zealand sauvignon blanc. The fresh shucked oysters are topped with a mix of bread crumbs, spinach and bacon bits, put on a bed or coarse salt and broiled until brown. A NZ sauvignon has green elements like gooseberry to fuse with the spinach, and a spicy saltiness to enhance the oys-ters. The bacon? Who knows? Best choices are Cloudy Bay S.B. or any from Kim Crawford for the best hedonistic fusion.

2/ Sauternes from France with pan seared foie gras. I gently put some grape halves into the reduction at the last moment or have a wild berry reduction on the side. Sauternes is a region in Bordeaux with very sweet whites where the grape sugar is intensi-fi ed by noble rot. Often Barsac, a tiny region within Sauternes, has less pricey versions. The LCBO never has enough Sauternes on shelves but an Ontario late harvest, such as Henry of Pelham Late Harvest Vidal, works amazingly well too.

3/ Freshwater fish with Ontario Rieslings. In summer I live in a boat and catch trophy smallmouth bass. Every few days my wife demands a fish dinner, and I go out and bring two or three back, usually 12 to 15 inches long (I release the monsters) and af-ter I fillet them, she dips the bass in egg washed breadcrumbs and pan fries them. Dozens of Niagara Rieslings are first class now. Try Tawse Sketches of Niagara Riesling which gloves with the lemon wedges and flaky fresh caught bass. Pickerel is a fab species too!

4/ Lamb with Spanish tempranillo. The Rioja region is the top producer of tempranillo and the best are amazing. Usually aged mostly in American oak, the classic aromas show lots of mint, coconut, sandalwood incense, and sumptuous black cherry elegance. So mint is the food bridge, whether you prefer mint jelly, or piquant mint sauce. Want to create something sublime? Get a crown of lamb, and use fresh mint leaves (one tiny leaf variety tastes like mint chocolate) to infuse the stuffing, which goes into the middle of the crown. The fusion of the Rioja red with the mint touches is astoundingly delicious.

5/ Pan seared scallops with Aligoté. Around 90 per cent of great white Burgundies are chardonnay cloaked by village names. The region also makes aligoté, and mostly keep it for themselves. Why undersell $140 whites? Fortunately Paul Bosc of Chateau des Charmes pioneered in bringing in aligoté cuttings and growing it in Niagara. Try this with scallops (make sure you do not overcook the scallops, they are not supposed to bounce like rubber), it cuts cleanly through the richness and cleanses the palate. Another unknown Burgundy white, Melon, is grown by Norm Hardie in Prince Edward County. It too is killer.

6/ Asian cuisine with gewürztraminer. This grape is intensely floral, reminiscent of rose petals, violets, honeysuckle, lychee nuts, and tangerine blossoms. It finds its perfect mate with Chinese and Thai dishes, including orange or lemon chicken, pad thai and many more. My favourite fusion is Thai duck curry in coconut milk that also has lychees floating in it. For great Alsatian sweet edge gewurz, look to Alsace, but Niagara also produces a few of these spicy fragrant whites too, usually in a drier, less viscous style. Fielding 2010 Gewurztraminer is a very nice local choice.

7/ Chocolate dipped strawberries with red Ontario icewi-nes. Yes, a raft of Ontario producers make icewines from cabernet sauvignon, cabernet franc and merlot grapes. If you make a semi sweet chocolate glaze and dip fresh Ontario strawberries in it, serving a half bottle of one of these red icewines is a transcendent taste explosion on your palate. Inniskillin 2012 Cabernet Franc Icewine is very elegant. A grand summer dessert pairing.

In all of my travels

I have visited six continents; Antarctica

would be my seventh and final continent.

After committing to the expedition I began re-

searching, an important step in order to know

what to expect and what to pack. The first

item on my agenda was to research the ship.

I had heard that the Antarctic Dream was an

incredible ship, but knowing what I do about

the sometimes-harrowing seas of the Drake Pas-

sage, I decided to investigate a little further, just

to be sure. No one wants to go to Antarctica

without feeling safe.

I discovered that the Antarctic Dream was

built in Holland in 1961 for the Chilean navy.

Her original name was Piloto Pardo, named af-

ter the officer who sailed with his ship Yelcho

with Shackleton on board to Elephant Island to rescue Shackleton’s men who had been there for 4.5 months. When the Yelcho was decommis-sioned, the Piloto Pardo replaced her, servicing as a logistics ship to the Chilean stations. Five years ago the present Chilean owners bought the ship and refurbished her as a passenger ship for the polar regions. She takes a maximum of 84 passengers, 5 expedition staff, 13 hotel staff and 20 nautical crew members. At 81 metres long and 12 metres wide, she has a draft of 4.6 metres.

The next step was to figure out what to pack. Even after all of my travels I still always manage to over pack, this trip was no different. A trip to Antarctica is no ordinary trip, it requires prepa-ration for the unexpected; warm clothes for those frigid days and lighter ones for in between. Through my research I discovered the Canada Goose Expedition Parka, and I am thankful I did. The Expedition Parka was first developed in none other than Antarctica and has been used»

by scientists there for over 20 years. Designed to withstand the most frigid of temperatures, the Expedition Parka is durable, well insulated and surprisingly light weight. The Expedition Parka also boasts a multitude of external pockets, ideal for day trips. The ship will supply jackets, but if you want to ensure comfort and warmth I would highly recommend Canada Goose. The next thing I needed was a good camera man. Although I do all of my own photogra-phy, this particular trip called for someone who knew their way around a video camera. I called my old friend Bill Maycock from Bermu-da. Not only would Bill be a great cameraman but he would also appreciate a trip like this. After weeks of preparation the trip was fi nally upon us. From Toronto we fl ew to Buenos Ai-res, Argentina. After three days in Argentina we caught the fl ight to Ushuaia, Tierra del Fuego, where we spent the night in a hotel, got up early the following morning and boarded the ship.

One of the fi rst things I do when I board a ship is look around to see who else is on board. I always fi nd the demographics interesting. On this specifi c trip I was surprised to fi nd so many women, I had mistakenly and perhaps being slightly “old fashioned” assumed it was a more masculine adventure.

As I have mentioned in previous articles, I have been sailing for over 40 years and have heard numerous stories about what it is like to cross the Drake Passage. On any given day

the Drake Passage can go from calm seas to huge swells. I knew once we got across we would be in another world and that it would be worth it. The Drake Passage defi nitely lived up to its reputation. The two day passage was made that much more comfortable by the fantastic staff aboard the Antarctic Dream. On our third day at sea we fi nally reached the South Shetland Islands and the beginning of our passage through the Nelson Straight. Almost immediately we found ourselves surrounded by humpback whales. The clear, almost calm con-ditions provided ideal viewing from the bow. The ship slowed to a snail’s pace and everyone, including our Captain, had an opportunity for a photo.

Our next destination was the Aitcho Islands Group and Deception Island. We boarded the zodiacs and were soon standing on solid ground. It was an amazing feeling to know that I was one of only a small number of people who had ever stood at this spot. When you set foot on Antarctica, it is an amazing feeling. My mind was thinking of what it would have been like for Shackleton. Compared to my fi rst class adventure, what was he thinking when he fi rst stepped onto solid ground, was he having simi-lar thoughts?

ful not to disturb penguins and seals. The pen-guins were breathtaking, crowding the shore in the thousands; it was hard to stop myself from picking one up for a quick cuddle. When our time was up we headed back to the zodiacs and it was off to our next destination, Deception Is-land. Many passengers braved the chill of the deck in order to watch our progress through Neptune’s Bellows and into Whalers Bay.

As we departed the ship I couldn’t help but think that the rugged and often extreme land-scape is defined by its stark contrasts. Decep-tion Island is volcanic, resulting in black beach-es offset by blindingly white glaciers. The view was absolutely breathtaking. The remains of old whaling stations and wooden boat frames just add to the history and intrigue that is Antar-tica.

For the wildlife enthusiasts, Antarctica is a prime location to view all sorts of rare and exotic species. In addition to the humpback whales, we were lucky enough to see killer whales, chin-strap penguins, gentoo penguins, fur seals, leopard seals and a variety of albatross species.

For those who enjoy dramatic scenery there is nothing to match the colour, light and sheer power of ice fields filled with the abstract forms of icebergs. For myself the combination of wild-life and scenery made an unforgettable memory. After an amazing and fulfilling adventure it was back to Argentina and then onto Toronto. My experience aboard the Antarctic Dream ful-filled a lifelong goal and was the experience of a lifetime. The expedition group and crew were amazing and sharing the experience with my good friend Bill made it that much more re-markable.

If I learnt one thing on this trip it was that no matter how prepared you are, some expe-riences are just that much better because they are unanticipated. I think this trip taught me to remember to leave a little room in my suitcase for the unexpected.
