Oorsrpong: An Aged Gouda from the Groene Farmstead

Located in Uitgeest, Netherlands, the Groene family farmstead has been passed from generation to generation for more than 360 years. Since the early 1990’s they have focused on biodynamic farming processes and their farm includes horses, sheep, bulls, and beef cattle, as well as a herd of 160 dairy cows. Biodynamic farming practices and the natural bounty of the region help produce extremely high quality milk rich in proteins, minerals, and natural sugars. The animals spend at least 7 months of the year outside, grazing on forage rich with dandelion, sorrel, and marsh marigold. The farm is located only 1500 meters from

the North Sea and the salty breeze is as much a part of the terrior as the seaweed incorporated into the feed.

Each wheel of Groene Oorsprong bears the stamp of the farmstead, as well as the words Extra Belegen, or extra aged, indicating that they have been aged for a minimum of 1 year. The 14 lb wheels have a waxed rind and a smooth, dense paste shot through with protein crystals. The careful aging lends caramelized nutty flavors while keeping the grassy flavors of the

milk intact. This is an unmistakably farmstead cheese and each wheel reveals its own delicate nuances.

Mustapha’s harissa is the gold standard and no other harissa compares! Harissa is a traditional hot sauce that originated in North Africa but is now popular across the Mediterranean and beyond. The exact recipe varies by region and family tradition; ours is Mustapha’s personal recipe, which he spent many hours perfecting in his kitchen. It is an all-natural harissa made in Morocco with Agadir peppers, preserved lemons, spices, and tomatoes, and contains no artificial preservatives. This delicious hot sauce has flavors of pepper and lemon, and delivers a temperate heat that delights the palate.

Culinary uses: Harissa can be used to intensify the flavor of mild foods such as couscous and can be added as an ingredient to cooking sauces for an extra layer of flavor. It is also a delicious marinade or accompaniment for meat, poultry, and seafood, and can be incorporated into tagines (stews) and soups to heighten flavor. The vibrant, complex flavor profile of harissa makes it a very adaptable and fascinating ingredient to cook with.

Harissa Pulled Pork RecipeINGREDIENTS:

1 bone-in or boneless pork shoulder (pork butt). Remove some of the fat off the top of the shoulder, leaving a 1/4” layer of fat.

4 oz harissa

5 oz preserved lemons, ground up

4 oz honey

Salt and pepper

1. In a bowl, combine the harissa, ground preserved lemons, honey, salt and pepper, and mix thoroughly. Note: You can adjust the proportions to taste: add more lemons if you like your marinade citrusy; more honey if you like it sweet; or more harissa if you like it spicy.

2. Put the pork shoulder in a plastic bag and add the marinade. Place the bag in the refrigerator and let it sit overnight.

3. The next day, put the marinated pork shoulder in a pot with the skin facing up. Cover the pot with plastic wrap and then with aluminum foil. Preheat the oven to 250 degrees, place the pork in the oven, and cook covered for 6 hours.

4. After 6 hours, uncover the pot. (Use oven mitts because there will be a lot of steam under the plastic!)

5. Use large forks to pull the pork apart and mix the meat with the sauce. Season with salt and pepper to taste.

This sauce mixture also works beautifully for:Buffalo Wings: Deep-fry the wings without breading or seasoning (20-25 minutes), and toss with sauce.

Baby Back Ribs: Marinate ribs overnight in sauce, then bake at 250 degrees for about 2 hours or until done.

Whole Fish: Rub the marinade on the fish and add thinly sliced preserved lemons over the fish. Stuff a bunch of cilantro into the belly of the fish and bake until done.

The name says it all! Literally translated from German: Maxx (maximum) and Scharfe (sharp) seems very appropriate for this strong, pungent mountain cheese. Der Scharge Maxx is made in Thurgau by the Studer Dairy in northern Switzerland with fresh whole cow’s milk and a touch of cream that yields a very rich, smooth mouthfeel. During maturation the wheels are aged for a minimum of four months and are washed with an herby brine, giving the cheese its distinctive tangy and meaty flavor profile.

As we transition into the Fall season, der Scharfe Maxx is a wonderful expression of the robust mountain cheeses that we begin to crave when the weather turns and the leaves start to fall. It can stand alone on a cheese plate, but also is an incredible melter, making for a great sandwich to throw on the grill. The aromas are of fresh barnyard air and the flavors move from sweet caramelized onions to rich brothy notes as it matures. This is a new stocked cheese here a the Peterson Company...
